We streamlined this recipe to get excellent results in an hour; serve alongside roast chicken or spooned over pan-fried fish or toasted bread.

5 yellow, orange, or red bell peppers, halved, seeds and ribs removed
6 Tbsp. extra-virgin olive oil, divided, plus more for serving
Juice of 1 lemon
1 Tbsp. fig jam
1 Tbsp. white balsamic vinegar or white wine vinegar
Kosher salt
2 Tbsp. oregano leaves

Steps:

  • Heat broiler. Toss peppers with 2 Tbsp. oil on a rimmed baking sheet to coat and arrange cut side down. Broil, rotating baking sheet halfway through, until skin is blackened, 12-14 minutes. Reduce oven temperature to 200°F and continue to roast peppers until very soft but not mushy, about 1 hour. Let cool slightly, then scrape off and discard skins. Cut peppers lengthwise into 1/2"-wide strips.
  • Whisk lemon juice, jam, vinegar, and 4 Tbsp. oil in a medium bowl. If fig jam is very coarse, use a fork to mash into smaller pieces; season dressing with salt. Mix in peppers; taste and season well with salt. Toss to coat.
  • Just before serving, mix in oregano and drizzle generously with more oil.
  • Peppers (without oregano) can be made 2 days ahead. Cover; chill.

2 dried bay leaves

Steps:

  • Place a rack in middle of oven and preheat to 350°F. Toss bell peppers, garlic, oregano, bay leaves, oil, and salt in a shallow 2-qt. baking dish to combine.
  • Turn garlic cut side down, then roast vegetables, tossing 2 or 3 times, until golden brown, very tender, and edges are crisp, 80-90 minutes. Let cool slightly, then add vinegar and toss to coat.

2 bell peppers
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 cup shredded mozzarella cheese
½ cup fresh chives, finely chopped
4 large eggs
4 strips cooked bacon
½ cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°F (180°C).
  • On a cutting board, split the bell peppers in half from stem to base. Cut out the stem and the seeds.
  • Transfer halved peppers to a baking tray, cavity side up. Sprinkle each half with salt and pepper.
  • Bake for 15-20 minutes, until peppers are slightly soft.
  • Sprinkle the mozzarella and half of the chives evenly among the four pepper halves. Then crack eggs into the center of each pepper.
  • Sprinkle the salt, pepper, bacon, cheddar, and remaining chives on top of the eggs.
  • Bake for 15-20 minutes, until egg whites are set. Serve!

4 red peppers , halved and deseeded
50g can anchovy in oil, drained
8 smallish tomatoes , halved
2 garlic cloves , thinly sliced
2 rosemary sprigs
2 tbsp olive oil

Steps:

  • Heat oven to 160C/140C fan/gas 3. Put the peppers into a large baking dish, toss with a little of the oil from the anchovy can, then turn cut-side up. Roast for 40 mins, until soft but not collapsed.
  • Slice 8 of the anchovies along their length. Put 2 halves of tomato, several garlic slices, a few little rosemary sprigs and two pieces of anchovy into the hollow of each pepper. Drizzle over the olive oil, then roast again for 30 mins until the tomatoes are soft and the peppers are filled with pools of tasty juice. Leave to cool and serve warm or at room temperature.

4 bell peppers (use either all one colour or 1 red, 1 green, 1 yellow, 1 orange)
8 garlic cloves (peeled)
8 shallots (whole peeled)

Steps:

  • Cut the peppers in half lengthways.
  • Remove seeds.
  • Place in a baking pan.
  • Put a clove of garlic and a shallot into each shell.
  • Bake uncovered at 150'C for approx 1 & 1/2 hours or until very tender and aromatic.
  • Serve either hot or at room temperature.

12 bell peppers, of assorted colors
1/2 cup garlic, minced
1/2 cup fresh parsley, chopped
1/2 cup fresh basil, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup olive oil
1/4 teaspoon hot red pepper flakes (optional)

Steps:

  • Preheat oven to 350.
  • Rinse out a large roasting pan and leave the moisture in the pan.
  • Wash the peppers, leave the moisture on them and place in the roasting pan.
  • Lower the oven to 325.
  • Bake the peppers until soft, about 40-60 minutes. Green peppers take longer than red so just keep an eye on them.
  • Turn them over once during the cooking process.
  • All ovens run different - You want the skins to look puffy and a bit charred before you take them out.
  • Place them in a large deep bowl and cover with plastic wrap.
  • When cool, remove the peppers from the bowl.
  • Strain the juice left over in the bowl and return it to the bowl.
  • Remove the skins and seeds from the roasted peppers (do not rinse).
  • Slice thinly and place back in the bowl with the juice.
  • Add the remaining ingredients and mix well.
  • Marinate in the fridge for at least 3 hours, overnight is best.
  • Enjoy!
