4 cups warm milk
1 package (1 oz) ranch salad dressing and seasoning mix (milk recipe)
1 cup sour cream
2 pouches (4.7 oz each) Betty Crocker™ homestyle creamy butter & herb mashed potatoes
4 slices bacon, cooked, crumbled
2 tablespoons thinly sliced green onions

Steps:

  • In 3-quart saucepan, heat water and butter to boiling. Stir in warm milk, ranch dressing mix and sour cream; beat until smooth. Stir in 3 slices of the bacon and both pouches of potatoes just until moistened; let stand 1 minute. Stir with fork until smooth.
  • Spoon potatoes into serving dish. Top with remaining crumbled bacon and the green onions.

24 oz baby red potatoes
1/4 cup extra virgin olive oil (+ 1 Tbsp extra)
1 tbsp ranch seasoning (Hidden Valley or homemade)

Steps:

  • Boil the potatoes about 20-30 minutes or until the fork not only can go through but they are very tender. Then drain the potatoes in a colander.
  • Spread 2 tbsp of olive oil on a baking sheet so that it is completely covered, then arrange the potatoes on the cookie sheet so that they are evenly spaced.
  • Use a potato masher or the bottom of a glass to smash each potato until it is about 1/2 inch thick. Then sprinkle the seasoning directly on top of each potato and finish by drizzling the remaining olive oil over each potato generously.
  • Bake at 425˚F for 25-30 minutes or until the edges of the potatoes are browned and crispy. Serve hot and enjoy!

1/2 cup buttermilk
1/2 cup mayonnaise
3 tablespoons finely chopped fresh chives
3 tablespoons finely chopped fresh Italian parsley
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
Potatoes:
5 3/4 to 6 pounds russet potatoes, peeled, cut into 11/2-inch chunks
1 tablespoon (or more) coarse kosher salt
3/4 cup heavy whipping cream
1/2 cup whole milk
1/4 cup (1/2 stick) butter

Steps:

  • For ranch dressing:
  • Whisk all ingredients in small bowl to blend. DO AHEAD: Can be made 2 days ahead. Cover and chill.
  • For potatoes:
  • Place potatoes in large ovenproof pot. Pour enough cold water over to cover and add 1 tablespoon coarse salt. Bring to boil over high heat. Reduce heat to medium-high and cook until potatoes are tender when pierced with knife, about 20 minutes. Drain potatoes; reserve pot. Let potatoes stand in strainer until lukewarm, about 20 minutes. Working in batches, press potatoes through potato ricer back into same pot (do not stir; potatoes should be fluffy). DO AHEAD: Potatoes can be made 2 hours ahead. Let stand at room temperature.
  • Preheat oven to 350°F. Combine cream, milk, and butter in small saucepan; bring to simmer. Gently fold half of cream mixture into potatoes; repeat with remaining cream mixture. Fold 3/4 cup ranch dressing into potatoes; reserve remaining dressing for serving. Season potatoes to taste with more coarse salt and freshly ground black pepper.
  • Transfer pot with mashed potatoes to oven and rewarm uncovered until potatoes are heated through, about 10 minutes for freshly made potatoes or 30 minutes if potatoes are made ahead. Transfer mashed potatoes to large serving bowl. Drizzle with remaining dressing and serve.

  • Once all of your potatoes are cut, be sure that there is enough cold water in the pan so that the water line sits about 1 inch above the potatoes. Stir the garlic and 1 tablespoon sea salt into the water. Then turn the heat to high and cook until the water comes to a boil. Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance. Carefully drain out all of the water.
  • Meanwhile, as the potatoes are boiling, heat the butter, buttermilk and an additional 2 teaspoons of sea salt and 1/2 teaspoon freshly-cracked black pepper together either in a small saucepan or in the microwave until the butter is just melted. (You want to avoid boiling the buttermilk.) Set aside until ready to use.
  • After draining the water, immediately return the potatoes to the hot stockpot, place it back on the hot burner, and turn the heat down to low.
