SLOW COOKER TRI TIP ROAST
This slow cooker tri tip roast is delicious, fall apart tender and is perfect on it's own or made into sandwiches.

Steps:
- Combine the salt, pepper, thyme, rosemary and garlic. Rub it over the top of the tri tip.
- Place the meat into a 6 qt. slow cooker.
- Add the broth and Worcestershire sauce to the slow cooker around the sides of the meat. Do not pour directly over the top of the tri tip and wash off the seasoning.
- Cover and cook on low for 6-7 hours or until the meat is tender, and pulls apart easily with a fork.
- Remove the meat from the slow cooker and shred or cut into pieces.
- Strain the remaining liquid and use it as an au jus if making sandwiches.

SLOW COOKER TRI-TIP ROAST
This Slow Cooker Tri-Tip Roast is a great recipe for menu planning. Slice and serve with mashed potatoes and sides or shred, portion and freeze for fajitas, enchiladas, BBQ sandwiches or casseroles.

- Add the sliced onions to the bottom of the slow cooker.
- Brush the tri-tip roast on all sides with the oil. Season generously with salt and pepper.
- Heat a cast iron skillet or griddle over high heat until very hot and add the meat. Sear for about 3 minutes on each side and edges to a deep crust. (Turn on your stove vent and open your doors)
- Transfer the seared meat to the slow cooker. Brush the Dijon mustard on the exposed top of the tri-tip and dust with the smoked paprika.
- Combine the soy sauce, Worcestershire sauce, beef broth, red wine and garlic together and pour around the sides of the tri-tip. Add the bay leaves and fresh herbs.
- Place the cover on the cooker and set the temperature to low and cook for 8 hours or until the meat shreds when tested with a fork. Remove the tri-tip from the cooker and place on a platter until cool enough to handle. Using two forks, shred the meat then drizzle with 1/2 cup of the cooking liquid remaining in the cooker.

SLOW COOKER PORK CUSHION ROAST

Steps:
- Spray slow cooker with cooking spray.
- Arrange onion and garlic slices evenly over the bottom of the slow cooker, then place the roast on top of the onion and garlic.
- Add carrots and potatoes to the slow cooker, around the roast.
- Mix water, sugar, vinegar, soy sauce, ketchup, black pepper, garlic powder, chicken bouillon, wine, and hot sauce in bowl.
- Microwave mixture for 30 seconds to blend flavors.
- Pour mixture over meat in slow cooker.
- Cover and cook on low for 8 hours.
- At 7 hour mark, stir in cornstarch and water mixture to thicken the sauce.
- Serve over egg noodles, rice or stuffing.

- Place onion slices and garlic in slow cooker.
- Place tri tip roast on top of onions.
- Pour bag of carrots and potatoes around roast.
- Mix water, sugar, vinegar, soy sauce, catsup, salt, pepper, garlic powder, wine, and hot pepper sauce in a bowl, then pour over roast.
- Cook on low 7 hours.
- Combine 2 T cornstarch and 1 T water, stir into liquid.
- Cook on low 1 more hour.

SLOW-COOKER ROSEMARY-GARLIC BEEF ROAST

- In small bowl, mix oil and Worcestershire sauce; brush over beef roast. Rub roast evenly with garlic, rosemary, salt and pepper. In 5- to 6-quart slow cooker, add onion. Pour 1/4 cup of the broth over onion. Place beef roast on onion. Refrigerate remaining broth.
- Cover and cook on Low heat setting 8 to 9 hours.
- Remove beef from cooker; cover to keep warm. In small bowl, mix remaining 3/4 cup broth, the chili sauce and flour; stir into hot mixture in cooker. Increase heat setting to High. Cook uncovered 5 to 10 minutes or until thickened. Serve gravy with beef.

MY LOVELY PORK ROAST (RIB TIP)
Made this for some friends this weekend and it was delicious! I used the rib tip because the bone gives it so much flavor and moisture, but the garnishing can be used on any pork roast. Enjoy!

- Garnish the piece of meat in advance; it will give the flavor a lot more depth.
- Pat the roast dry with a paper towel.
- With a long thin knife, insert the cloves of garlic into the meat--two by the bone and the other two through the top of the meat.
- Rub a little olive oil on the surface;.
- Add salt and pepper, making sure you cover every sides.
- Sprinkle with half the fresh thyme. Roll tightly into a plastic wrap and leave in the fridge for at least 5 hours, or even over night.
- Preheat oven at 325°F.
- In roasting pan at medium high, heat the olive oil.
- Seize the meat for about one minute to two minute on each side, making sure all sides are nicely browned.
- Cover every side of the meat with the Dijon mustard; no need to cover the bone part.
- Sprinkle the rest of the thyme and add a bit of salt and pepper to taste.
- Cook uncovered for 2.5 hours or until the meat has reached 155°F.
- Cover with foil and let sit for 10 minutes before serving.

- Cut well trimmed tri-tip into 4 inch chunks and place into slow cooker.
- Rub meat with New Mexico Powdered Chile and Cumin.
- In large bowl stir Rotel Tomatoes, Pot Roast Seasoning, Crushed Red Peppers, and Diced Onions until seasoning is well blended.
- Pour tomato mixture over meat and stir to coat meat.
- Cook on high for 5 hours.
- Shred cooked meat with 2 forks in slow cooker.
- Remove shredded meat with a slotted spoon leaving juice in slow cooker.
- Meat can be used in tacos or served on a plate with beans and rice.
