QUICK CINNAMON ROLL CAKE
Uses a cake mix to recreate the gooey goodness of cinnamon rolls without all the extra work. In my opinion, anything that combines cinnamon rolls with cake is a definite winner!

Steps:
- Preheat oven to 325°F Grease a 9 x 13 inch baking pan.
- Mix together cake mix, eggs, oil and sour cream. Pour into prepared baking pan.
- In a separate bowl combine brown sugar and cinnamon. Sprinkle evenly over cake batter then swirl into batter with a knife. The more you swirl, the more combined it will be so don't over-swirl otherwise the cinnamon/sugar will not be swirly.
- Bake for 40 minutes.
- For icing (optional) combine milk with icing sugar and mix thoroughly. Pour over slightly cooled (10-15 minutes on cooling rack) cake.

- Sprinkle the yeast over 2 1/2 cups of warm (about 125ºF) water. Sprinkle the salt over the yeast, allowing the weight of the salt to sink the yeast into the water. Let the yeast-water mixture sit and become foamy (about 5 minutes).
- In the bowl of a stand mixer fitted with a bread hook, mix together the wake mix and all-purpose flour. Add the foamy yeast mixture and the vanilla extract.
- Remove the bread hook. Grease the bowl liberally with non-stick cooking spray and cover with plastic wrap. Allow to rise until doubled in size (I usually place my bowl of dough on a heating pad, which speeds things up to about a 30 minute rise time).

- In a large pot combine milk, cream, 1/2 cup sugar, and 1/2 cup oil. Heat on high until just about to boil and then turn off heat. Let the mixture cool to warm (about 45 minutes to an hour).
- Add the packet of yeast and let it sit for a few minutes. Then add 4 cups of flour and stir with a wooden spoon till a dough forms.
