This bacon caprese sandwich is an Italian take on the classic BLT.

Bacon (to taste)
Tomato (sliced, to taste)
Fresh mozzarella (sliced, to taste)
Basil (to taste (I'd use 2 leaves for a small sandwich))
Mayo (to taste)
Salt & pepper (to taste)

Steps:

  • Cook bacon to desired crispiness.
  • Meanwhile, slice your tomato and mozzarella.
  • Slide bread and add mayo, tomato slices, mozzarella slices, basil, bacon, and salt & pepper.

3 slices toasted bread
2 tablespoons mayonnaise
2 slices American cheese
4 slices shaved ham
4 tomatoes, sliced, divided
4 leaves lettuce, divided
4 slices crisp bacon, divided
2 slices monterey jack cheese
4 slices shaved deli turkey

Steps:

  • Spread mayonnaise on one side of a piece of toast; add layer of American cheese, ham, two slices of tomato, two leaves of lettuce, and two pieces of bacon.
  • Spread mayonnaise on second piece of toast and place on top, mayo side down.
  • Spread mayonnaise on top of that second piece of toast.
  • Layer Monterey Jack cheese, the rest of the tomatoes, lettuce, turkey and bacon on top.
  • Spread mayonnaise on third piece of toast and place on the stack mayo side down.
  • Slice the sandwich in quarters diagonally.
  • Skewers or long toothpicks may be used to hold all the layers together.

Kosher salt
2 heirloom tomatoes, sliced
1 large baguette, split
3 balls fresh mozzarella, thickly sliced
Fresh basil leaves
Basil Oil, recipe follows
2 bunches fresh basil, stems removed
1 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
Juice of 1 lemon

Steps:

  • Salt the tomatoes and layer on the bottom piece of bread with the mozzarella and basil. Drizzle with Basil Oil. Top with the remaining piece of bread. Slice into portions.
  • Add the basil to boiling water for 45 seconds to 1 minute. Remove to a bowl of ice water to stop it from further cooking. Dry and add to a blender. Add the olive oil, and blend until smooth. Strain through cheesecloth into a bowl. Add salt and pepper to taste. Add the lemon juice right before serving.

This recipe comes from a Cook's Country Magazine. It's phenomenal. I made it for a get together and it was gone in a flash. It's really worth finding the ciabatta bread for. I got mine from Safeway.

2 medium tomatoes, sliced thin
1/2 teaspoon salt
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
1 loaf ciabatta
1 1/3 cups packed fresh basil
1/3 cup mayonnaise
2 teaspoons lemon juice
1 garlic clove, minced
1/8 teaspoon hot sauce
8 slices bacon, cooked until crisp, drained, and crumbled
4 romaine lettuce leaves
8 ounces fresh mozzarella cheese, sliced thin

Steps:

  • Place tomato slices on several layers of paper towels and sprinkle with 1/2 teaspoon salt. Let sit for 15 minutes, then press with additional paper towels to extract excess moisture.
  • Mix oil and vinegar together in small bowl.
  • Slice bread in half horizontally and use fingers to remove and discard all but 1/2 inch of interior crumb.
  • Puree 1 cup basil, mayonnaise, lemon juice, garlic, hot sauce, and 1/4 teaspoon salt in blender or food processor until smooth, stopping to scrape down sides several times.
  • Spread basil mayonnaise on both cut sides of bread.
  • Sprinkle bacon on bottom half of bread and place romaine on top of bacon.
  • Shingle tomatoes and mozzarella alternately over romaine and drizzle wih oil and inegar mixture. Place remaining 1/3 cup basil in single layer on top and replace top half of bread.
  • Cut crosswise into 2 inch sandwiches. Serve.

A simple and easy sandwich that is full of fresh ingredients and flavor! These Bacon Caprese Sandwiches will surely not disappoint. The crispy bacon, fresh mozzarella, fragrant basil, and creamy pesto mayo will have your taste buds screaming for more!

Number Of Ingredients 12

½ cup - balsamic vinegar
¼ cup - light brown sugar
6 slices - bacon, cooked
½ cup - mayonnaise
1 tbsp - pesto
4 slices - bread (i.e. sourdough, focaccia, ciabatta)
6 slices - fresh mozzarella, sliced
4 slices - Roma tomatoes, sliced
1 cup - fresh arugula or spinach
8 each - fresh basil leaves
To Taste - kosher salt
To Taste - ground black pepper

Steps:

  • In a large skillet or frying pan, cook the bacon slices on medium to medium-high heat until crispy (about 5 - 7 minutes). Drain off the excess fat.
  • While the bacon is cooking, in a small saucepot combine the balsamic vinegar and brown sugar. Reduced the mixture by 1/2 over medium heat. Do not boil, turn to medium-low if needed. Set aside to cool.
  • Combine the mayo and pesto in a small bowl. Season to taste with ground black pepper.
  • Toast the slices of bread in a toaster or toaster oven. Spread the pesto mayo on each slice of bread. Assemble the sandwiches in the following order: arugula, mozzarella, bacon, and tomatoes.
  • Sprinkle with salt and ground black pepper. Top with basil and drizzle a little balsamic glaze. Top with another slice of bread and slice! Serve immediately and enjoy!

8 tomato slices
4 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
3/4 cup mayonnaise
8 basil leaves, stacked, rolled then thinly sliced
6 focaccia rolls or bun sized cut bread, sliced and toasted
4 TYSON® Chicken Breast Fillets, cooked and hot
4 slices fresh mozzarella cheese
8 fresh basil leaves
8 cooked crisp bacon slices

Steps:

  • Prepare Tyson chicken according to package directions. Place a slice of cheese and 2 slices of bacon on top of each chicken breast; heat for an additional 4-5 minutes until cheese melts. Set aside and keep warm.
  • While chicken is cooking place tomatoes in a shallow bowl. In a mixing bowl, or by using a whisk, mix together olive oil, balsamic vinegar, Dijon mustard, salt and pepper. Pour over tomatoes; let marinate for 10 minutes.
  • Finely chop 8 of the basil leaves. In a small bowl combine the mayonnaise and chopped basil. Spread the basil mayonnaise over the cut sides of warm, toasted focaccia rolls. Layer the bottom with the prepared Tyson Chicken Breast, 2 marinated tomatoes and 2 fresh basil leaves. Close sandwich with remaining toasted roll. Enjoy!

¼ cup mayonnaise
2 tablespoons chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon minced garlic
½ teaspoon garlic powder
½ teaspoon freshly grated lemon zest
1 pinch salt and ground black pepper to taste
7 slices bacon, halved
2 ciabatta rolls, split and toasted
1 (4 ounce) ball fresh mozzarella, sliced
1 heirloom tomato, sliced

Steps:

  • Mix mayonnaise, basil, lemon juice, garlic, garlic powder, and lemon zest together in a bowl. Season with salt and pepper. Cover with plastic wrap and refrigerate aioli until ready to use.
  • Preheat oven to 375 degrees F (190 degrees C). Place a wire rack inside a baking sheet to catch grease.
  • Place 3 bacon halves side by side on the wire rack. Weave another 3 to 4 bacon halves over and under those halves to form a square lattice. Repeat with remaining bacon halves.
  • Bake in the preheated oven until browned and crispy, 15 to 20 minutes. Lift bacon lattices off the pan with a spatula onto paper towels.
  • Spread basil garlic aioli on each ciabatta roll; layer mozzarella slices, tomato, and bacon lattices on top.
