Dark Chocolate Pudding image

This rich, creamy confection crosses a classic, American, cornstarch-thickened chocolate pudding with a luxurious French egg-yolk-laden chocolate custard called pot de crème. It has a dense, satiny texture and a fudgelike flavor from the combination of bittersweet chocolate, cocoa powder and brown sugar. Make sure to serve it with either whipped cream or crème fraîche for a cool contrast; crème fraîche has the advantage of also adding tang.

1 large egg, plus 2 yolks
6 ounces/170 grams bittersweet chocolate, preferably 66 percent to 74 percent cacao, chopped
2 tablespoons/30 grams unsalted butter, softened
1 teaspoon/5 milliliters vanilla extract
2 1/2 cups/590 milliliters whole milk
1/2 cup/120 milliliters heavy cream
1/3 cup/67 grams light or dark brown sugar
2 tablespoons/15 grams unsweetened cocoa powder
2 tablespoons/20 grams cornstarch
1/4 teaspoon/2 grams fine sea salt
Whipped cream or crème fraîche, for serving
Chocolate shavings, for garnish (optional)
Flaky sea salt, for garnish (optional)

Steps:

  • In a small heatproof bowl, whisk together egg and yolks. Set aside.
  • Place chocolate, butter and vanilla extract in a food processor or blender but don't turn on.
  • In a medium pot, whisk together milk, cream, brown sugar, cocoa, cornstarch and salt until smooth. Bring to a full boil, whisking, and let bubble for 1 to 2 minutes to activate cornstarch. At that point, it will start to thicken, and when it does immediately pull the pot off the heat. (You don't want to overboil the cornstarch, which can cause it to thin out again.)
  • Pour a little of the hot cornstarch mixture into the eggs, stirring constantly to prevent them from curdling, then pour eggs back into the pan with the remaining cornstarch mixture. Cook over low heat, whisking constantly, until mixture just returns to a bare simmer (one bubble is plenty). Immediately pour into the food processor or blender. Run the machine until the pudding is very smooth (the hot milk mixture will melt the chocolate).
  • Pour into individual bowls or teacups or 1 large decorative bowl and cover with plastic wrap. Refrigerate until firm and cold, at least 4 hours for individual servings and as many as 8 hours for 1 large bowl. Pudding can be made 3 days ahead. Serve with whipped cream or whipped crème fraîche, decorated with chocolate shavings and a pinch of sea salt, if you like.

1 1/4 cups sugar
1/4 cup water
5 cups milk
9 ounces unsweetened chocolate, preferably Valrhona, coarsely chopped
15 large egg yolks
1 shot of espresso

Steps:

  • Preheat oven to 350 degrees F.
  • In a saucepan, combine the sugar and water and cook over medium heat until the mixture registers 220 degrees F on a candy thermometer.
  • In another saucepan, heat the milk until it is very hot and small bubbles form around the edge of the pan. Do not let the milk boil. Put the chocolate in a heatproof bowl and pour the hot milk over it. Stir until the chocolate melts and the mixture is smooth.
  • Return the chocolate mixture to the saucepan and carefully add the hot sugar syrup, using thick oven mitts or potholders. Heat the mixture gently over medium heat, stirring until smooth. Remove the pan from heat.
  • In a large bowl, whisk the egg yolks. Slowly drizzle about 1 cup of the hot chocolate mixture into the eggs, whisking well to temper. Pour the tempered yolks into the chocolate mixture and whisk. Strain through a fine-mesh sieve into a bowl. Stir in the espresso and set aside to cool slightly.
  • Pour the chocolate mixture into eight 5-ounce ramekins or custard cups. Set the cups in a large shallow roasting pan and set the pan on the center rack of the oven. Pour enough hot water into the roasting pan and come about halfway up the side of the ramekins. Bake for about 1 hour, or until the custards are set. Remove and let cool in the water bath. Remove ramekins from water bath, cover with plastic wrap and refrigerate until ready to serve. This recipe can be prepared up to 2 days in advance and kept cool in a refrigerator.

Steps:

  • In a heavy saucepan whisk together sugar cornstarch, and a pinch salt. Chop chocolate and add to sugar mixture. In a bowl whisk together milk and egg yolks and gradually whisk into chocolate mixture. Bring mixture just to boil over moderate heat, whisking constantly, and boil 1 minute, whisking. Remove pan from heat and whisk in butter, vanilla, 1-ounce cacao nibs, and1 tablespoon Kahlua. Divide pudding between 4 (8-ounce) ramekins. Chill puddings in freezer, surfaces covered with plastic wrap, until cooled, about 30 minutes. Garnish with whipped cream and crystallized ginger.

Chocolate Pudding With Raspberry Cream image

This rich, creamy chocolate pudding is a comforting dessert for two that comes together in no time at all. Use Dutch-process cocoa powder for the richest chocolate flavor, but natural cocoa will work too, if that's what you keep around. This pudding is also easy to dress up for any occasion. Raspberry cream and a handful of fresh raspberries adorn this version, but you could also top with a dollop of whipped cream or crème fraîche.

1 cup/240 milliliters whole milk
1 large egg yolk
5 tablespoons plus 1 teaspoon/75 grams granulated sugar
5 tablespoons/30 grams Dutch-process cocoa powder
1 tablespoon cornstarch
Pinch of kosher salt
1 1/2 teaspoons vanilla extract
1/2 cup/80 grams fresh raspberries
1/3 cup/80 milliliters heavy cream

Steps:

  • Add the milk and egg yolk to a measuring cup. Whisk to combine.
  • Add 5 tablespoons sugar, the cocoa powder, cornstarch and salt to a medium saucepan, and whisk to combine, breaking up any lumps. Whisk the milk and egg yolk mixture into the sugar mixture until smooth.
  • Set the pan over medium-low heat and cook the mixture until it thickens and starts to bubble, stirring the mixture constantly with a rubber spatula and making sure to scrape the corners and bottom of the pan. Once it bubbles, cook for an additional minute until thick and creamy, taking extra care to scrape the bottom and sides of the pan to avoid scorching the mixture, 6 to 8 minutes total. If you do get a few small lumps, whisk the mixture vigorously for a few seconds to smooth them. Stir in 1 teaspoon vanilla extract.
  • Spoon the pudding into two small serving bowls or glasses, and press a piece of plastic wrap on the surface of each pudding to prevent a skin from forming. Chill for at least 1 hour and up to 2 days.
  • When you are ready to serve the pudding, make the raspberry cream: Combine 1/2 teaspoon sugar with about 4 raspberries in a small bowl. Mash them together with a fork and macerate. In a medium bowl, whisk the cream with the remaining 1/2 teaspoon sugar and 1/2 teaspoon vanilla to medium peaks. Dollop the mashed raspberries over the top of the whipped cream and fold a few times. (The mixture should be streaky.)
  • Top the pudding with the remaining raspberries and a dollop of the whipped cream. Serve immediately.

Filling:
1/3 cup sugar
1/3 cup unsweetened cocoa powder
2 tablespoons cornstarch
1/8 teaspoon salt
1 3/4 cups whole milk, divided
1/4 cup heavy whipping cream
4 ounces bittersweet chocolate (60% cacao), finely chopped
1 tablespoon dark rum
1 teaspoon vanilla extract
Topping:
1 cup chilled crème fraîche*
1 cup chilled heavy whipping cream
1/4 cup sugar
1 teaspoon vanilla extract
Bittersweet chocolate shavings or curls (optional)

Steps:

  • Crust:
  • Position rack in center of oven; preheat to 350°F. Blend cookie crumbs and sugar in processor. Add melted butter; process until crumbs are evenly moistened. Press crumb mixture onto bottom and up sides (not rim) of 9-inch-diameter glass pie dish. Bake until crust begins to set and no longer looks moist, pressing gently with back of fork if crust puffs, about 12 minutes. Remove crust from oven, then sprinkle chopped chocolate over bottom of crust. Let stand until chocolate softens, 1 to 2 minutes. Using offset spatula or small rubber spatula, spread chocolate over bottom and up sides of crust to cover. Chill crust until chocolate sets, about 30 minutes.
  • Filling:
  • Whisk sugar, cocoa, cornstarch, and salt to blend in heavy medium saucepan. Gradually add 1/3 cup milk, whisking until smooth paste forms. Whisk in remaining milk, then 1/4 cup cream. Using flat-bottom wooden spoon or heatproof spatula, stir mixture constantly over medium heat, scraping bottom and sides of pan until pudding thickens and begins to bubble at edges, about 5 minutes. Add chocolate; stir until mixture is smooth. Remove from heat; stir in rum and vanilla. Pour hot pudding into crust and spread evenly. Cool 1 hour at room temperature. Cover with plastic wrap; chill overnight. DO AHEAD: Can be made 2 days ahead. Keep refrigerated.
  • Topping:
  • Using electric mixer, beat crème fraîche, whipping cream, sugar, and vanilla in medium bowl just until stiff peaks form and mixture is thick enough to spread (do not overbeat or mixture may curdle). Spread topping decoratively over top of pie, swirling to create peaks, if desired. DO AHEAD: Pie can be made 6 hours ahead. Cover with cake dome and refrigerate.
  • Sprinkle chocolate shavings decoratively atop pie, if desired. Cut pie into wedges and serve.
