These Easy Italian Sausage Meatballs are juicy and so flavorful! This is a great recipe for serving a crowd! Simply roll, bake, and serve with your favorite sauce! These homemade meatballs are delicious on rolls, salads, or toss with pasta for classic spaghetti and meatballs!

2 pounds ground sausage
2 large eggs
1 and 1/2 cups breadcrumbs
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 cup lukewarm water

Steps:

  • Preheat oven to 400 degrees (F). Line a large baking sheet with parchment paper and set aside.
  • In a large bowl combine ground sausage, eggs, breadcrumbs, cheese, and garlic. Slowly add the water, a few tablespoons at a time, mixing with your hands until everything is just combined. Don't over mix here or it'll make the meatballs tough. The mixture should be very moist but still hold its shape when rolled into meatballs.
  • Using an ice cream scoop or large spoon, scoop about one tablespoon of meat into your palms and roll it into a ball. Place the ball on the prepared baking sheet. Repeat with all of the meat.
  • Place the baking sheet in the oven to bake for 15 to 18 minutes, or until they're cooked though.
  • Toss with your favorite sauce and serve!

KHORASAN WHEAT MARINARA



Khorasan Wheat Marinara image

Khorasan wheat has long, plump golden grains that are larger than other wheat varieties. Its chewiness and buttery flavor make it substantial and satisfying. Plus, it's high in protein and vitamin E and loaded with fiber (10 grams per serving here!). It works perfectly in a simple marinara sauce with a sprinkle of Parmesan.

1 cup khorasan wheat berries, such as Kamut, picked through for pebbles
1 tablespoon extra-virgin olive oil
2 cloves garlic, thinly sliced
Kosher salt
Small pinch crushed red pepper
1 tablespoon tomato paste
One 15-ounce can whole plum tomatoes, crushed by hand
Small handful fresh basil leaves, plus more for garnish
2 tablespoons grated Parmesan

Steps:

  • Bring a medium saucepan filled two-thirds with water to a boil. Add the khorasan wheat and cook until the grains have plumped and are tender but still chewy, 55 minutes to 1 hour. Drain.
  • Meanwhile, put the oil, garlic, 1/2 teaspoon salt and crushed red pepper in a medium skillet and set over medium heat. Once the oil starts to shimmer, stir until the garlic is lightly golden, about 30 seconds. Add the tomato paste and stir until the oil turns yellow, about 30 seconds. Add the crushed tomatoes and their juices, 1/2 cup of water and basil. Bring to a boil, lower the heat to medium low and simmer gently until the sauce thickens, 10 to 12 minutes.
  • Stir in the khorasan wheat and transfer to a serving dish. Sprinkle with the Parmesan and basil and serve hot.

4 sausages
300g passata
1 tbsp tomato ketchup
1 tsp fennel seeds
½ tsp red chilli flakes
½ tsp dried oregano
2 baked sweet potatoes
50g grated cheddar or mozzarella
pinch of chilli flakes

Steps:

  • Squeeze out the meat from the sausages and roll it into eight balls. Fry the meatballs in a little olive oil until golden all over. Add the passata, ketchup, fennel, chilli flakes and oregano and bubble without a lid for 8-10 mins until the sauce thickens and the meatballs are cooked through. Season well.
  • Heat the grill to high. Split the baked sweet potatoes and place them in a small, foil-lined baking dish. Fill the potatoes with the meatballs and sauce, then top with the cheese. Grill for about 2 mins until the cheese melts. Top with the chilli flakes.

1 small onion, grated
1/4 cup fresh parsley, chopped
1 large egg
3 tablespoons ketchup
3 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
2/3 cup parmesan cheese
1/4 cup dried breadcrumbs
6 ounces ground beef
6 ounces ground veal
6 ounces ground pork
1/3 cup olive oil
26 ounces marinara sauce
12 (3 -3 1/2 inch) Italian rolls, split, warm
1/2 cup freshly grated parmesan cheese
3 ounces sliced provolone cheese

Steps:

  • To make the meatballs, whisk the first 7 ingredients in a large bowl to blend.
  • Stir in the cheese and bread crumbs.
  • Mix in the meats.
  • Using about 2 tablespoons meat for each, shape into 1-1/4 to 1-1/2 inch meatballs. Set aside.
  • Heat the oil in large frying pan over medium-high heat.
  • Working in batches, add the meatballs and saute until browned on all sides, about 5 minutes. Drain off excess oil.
  • Add the marinara sauce and simmer over medium-low heat until sauce thickens slightly, about 10 minutes.
  • Season to taste with salt and pepper.
  • To make the sandwiches: spoon the hot meatballs with some sauce over the bottoms of the the rolls.
  • Place 1/2 slice provolone on the top of meatballs and sprinkle with Parmesan.
  • Spread more sauce of the rolls tops, the flod the tops of the rolls over and serve.

1/4 cup extra-virgin olive oil
2 ounces salt pork, thinly sliced
3 tablespoons minced onion
2 garlic cloves, minced
2 28-ounce cans imported Italian crushed tomatoes
6 leaves fresh basil, torn into small pieces
Pinch of dried oregano
Salt and ground black pepper
1 pound ground lean beef
1/2 pound ground veal
1/2 pound ground pork
2 large eggs
1 cup freshly grated Pecorino Romano cheese
1 1/2 tablespoons finely chopped flat-leaf parsley
1 small garlic clove, minced
Salt and ground black pepper
2 cups fine dry bread crumbs
1 cup extra-virgin olive oil
1 clove garlic, lightly smashed

Steps:

  • Make the sauce: Heat the oil in a large saucepan over medium-low heat, then add the salt pork. Sauté until fat has rendered, about 5 minutes. Remove and discard salt pork. Add onion and sauté until translucent, about 3 minutes. Add garlic and sauté just until softened. Add tomatoes with their juice and bring to a boil. Reduce heat to low and simmer until sauce is slightly thickened, about 45 minutes. Add the basil, oregano and salt and pepper to taste. Cook for 1 minute more.
  • Make the meatballs: In a mixing bowl, combine the beef, veal and pork. Add the eggs, cheese, parsley and minced garlic, then salt and pepper as desired. Add the bread crumbs and mix well. Slowly add up to 2 cups water, 1/2 cup at a time, until the mixture is moist; all the water may not be needed. Shape into 1 1/2 -inch meatballs.
  • Heat the oil in a large sauté pan over medium heat. Add the smashed garlic and sauté until lightly browned, 1 to 2 minutes, then discard the garlic. Working in batches and taking care not to crowd the pan, add meatballs and fry until undersides are brown and slightly crisp, 5 to 6 minutes. Turn and brown the other sides, about 5 minutes more. Transfer cooked meatballs to paper towels to drain, then add to the marinara sauce. Mix gently and serve.

These "meatballs" use plant-based ground meat, and a combination of onions, garlic and tamari give them a satisfying chew and robust flavor. Because there's no egg for binding, these are slightly more delicate than other meatballs, so use a light touch when shaping them, and make sure the mixture is very cold. Serve them on their own, covered in marinara sauce, or stuff them into hero rolls for sandwiches. They are also excellent over spaghetti.

1/2 cup panko bread crumbs
1/4 cup minced onion
1/4 cup chopped parsley leaves and tender stems
3 garlic cloves, grated or minced
1 tablespoon tamari or soy sauce
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
Pinch of red-pepper flakes (optional)
1 1/2 pounds plant-based vegan ground beef (such as Beyond Meat)
Extra-virgin olive oil, for drizzling
3 cups marinara sauce, homemade or store-bought
Parmesan (optional, or use vegetarian Parmesan if you prefer), for garnish

Steps:

  • In a large bowl, combine bread crumbs, onion, parsley, garlic, tamari, salt, pepper, oregano and red-pepper flakes, if using, and mix well. Add plant-based beef, and blend with your hands until well mixed. Cover mixture and chill for at least an hour or up to 24 hours. (It's easiest to form the meatballs when the mixture is very cold.)
  • Heat the broiler. Form 28 meatballs, each about 1 1/4 inches in diameter. Transfer meatballs to one or two rimmed baking sheets, and drizzle with olive oil.
  • Broil meatballs until golden and firm, 7 to 10 minutes. Meanwhile, heat marinara sauce in a pot. Serve meatballs with sauce on top, showered with cheese if you like and drizzled with a little more olive oil.
