These moist and fluffy chocolate cupcakes are enhanced by the matcha icing that tops them. Matcha powder is aromatic with an earthy and slightly sweet flavor.

2 ⅓ cups all-purpose flour
2 cups white sugar
¾ cup dark cocoa powder
2 teaspoons baking powder
1 teaspoon instant espresso powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup almond milk
½ cup canola oil
2 teaspoons apple cider vinegar
2 teaspoons vanilla extract
1 cup confectioners' sugar
1 teaspoon green tea powder (matcha)
½ teaspoon almond extract
½ teaspoon vanilla extract
1 tablespoon almond milk, or as needed

Steps:

Preheat the oven to 350 degrees F (175 degrees C). Place liners into a 12-cup muffin tin.
Combine flour, sugar, cocoa powder, baking powder, espresso powder, baking soda, and salt in a large bowl. Sift flour mixture into another bowl and sift again back to the first bowl. Add almond milk, oil, vinegar, and vanilla extract and beat using an electric mixer on medium speed until well combined. Fill each lined muffin cup 1/3 full of batter.
Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 20 to 25 minutes.
While cupcakes are baking, sift confectioners' sugar into a bowl and add matcha powder. Whisk together to blend. Add almond extract and vanilla extract and stir to combine. Mix in almond milk 1 teaspoon at a time using a whisk or spoon until icing reaches a good spreading consistency.
Allow cupcakes to cool completely before icing, about 1 hour.

Advance Prep: Freeze the ice cream maker bowl for at least 24 hours before beginning (or follow ice cream maker directions). This is an essential step for getting the right ice cream consistency!
In a blender, add the coconut milk, sugar, agave nectar, matcha powder, and salt and blend until completely smooth. Pour into a bowl, cover, and place in the fridge for at least 1 hour to chill (longer is fine too).
Set up your ice cream maker with the fully-frozen canister, turn it on, and gently pour in the chilled matcha mixture. Allow ice cream maker to run until the matcha mixture turns from liquid to thick soft serve. This usually takes about 10-15 minutes, but look for visual signs of readiness and follow your ice cream maker’s instructions as the time can vary significantly.
As soon as the ice cream maker is done, using a spatula, quickly scoop all the soft ice cream into a storage container and gently fold in the chocolate. The ice cream will be very soft (similar to soft serve) and will melt quickly, so work fast and cover and transfer to the freezer as soon as you’re done!

Using softened butter is very important so it can whip and combine with the powdered sugar. To soften, let set out at room temperature for about 1 hour. Resist the temptation to microwave, which will melt the butter and make it too runny.
Add vanilla and softened butter to a large mixing bowl and beat with a mixer on high for 30 seconds. Then add in powdered sugar 1/2 cup (56 g) at a time being sure to sift as you add, or it will clump.
Add matcha 1 tsp at a time and beat again to combine. The more matcha you add, the more intense the green color and the matcha flavor will become. We found 4 tsp (or more) to be about right (as the recipe is written). Add more as needed for more color and flavor.
If you’re using your buttercream for cakes, it should work well as is. But if using for sugar cookies, you may want to thin it a little bit with dairy-free milk of choice. Add 1 Tbsp (15 ml) at a time and beat until the desired texture is reached.
