2 teaspoons kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
One 4-pound boneless pork shoulder, trimmed of excess fat
1 tablespoon olive oil
1 yellow onion, thinly sliced
3/4 cup chili sauce
1/2 cup apple cider vinegar
2 tablespoons dark brown sugar (if unavailable, substitute light brown sugar)
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
2 teaspoons sugar
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups shredded cabbage (about 1/3 head)
2 carrots, grated
16 slider buns or Hawaiian sweet rolls

Steps:

  • For the BBQ pork: Whisk together the smoked paprika, salt, garlic powder and onion powder in a large bowl. Add the pork shoulder and turn to coat.
  • Heat the oil in a large saute pan over low heat and cook the pork, turning occasionally, until all sides are golden, 8 to 10 minutes.
  • Remove the pork to a plate. Combine the onions with the chili sauce, vinegar, brown sugar and 1 cup water in a slow cooker and whisk together. Add the pork shoulder, cover and cook on low until the pork is hot and cooked through, 8 to 10 hours.
  • Remove the pork to a cutting board and set aside. Pour the liquid into a medium saucepan. Bring to a boil and cook over high heat until reduced by half or the sauce is thick, 8 to 10 minutes.
  • Meanwhile, shred the pork with 2 forks or chop into pieces. Put back in the slow cooker and top with the reduced sauce, to taste.
  • For the slaw: Whisk together the mayonnaise, mustard, vinegar, sugar, salt and pepper in a large bowl. Add the cabbage and carrots and toss until coated.
  • To serve, place the pulled pork on the bottom buns, top with the slaw, then close the sliders.

1/3 cup ketchup
1/3 cup brown sugar
2 1/2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar

2 (12 count) packages of slider buns
1 (14 ounce) package classic coleslaw mix
1 (16-ounce) hamburger-sliced dill pickles
About 2 1/4 cups BBQ sauce (store-bought or homemade)
About 1 cup mayonnaise (optional)

Steps:

  • Trim away any excess fat from the pork butt. Pat the pork butt dry with a paper towel and make the rub.
  • Add the ketchup, sugar, Worcestershire, apple cider vinegar, mustard powder, salt, chili powder, pepper, and onion powder to a medium-sized mixing bowl and stir to combine
  • Add about half of the sauce to the bottom of the crock pot and set the pork butt inside. Pour the remaining sauce over the pork butt, and turn on the slow cooker.
  • Cook for 6 hours on the high setting or 8 hours on the low setting. Shred with two forks and stir the pulled pork so that it is coated in the sauce.
  • To assemble the sliders, spread the inside of each bun with a thin layer of mayonnaise (if using). Add a scant 1/2 cup of pulled pork to the bottom bun, top with a pinch of coleslaw, a couple of pickles, a drizzle of BBQ sauce. Finally, cap with the top bun. Repeat for the remaining sliders.

12 slider rolls
1 cup of sweet & smoky Kansas City-style barbecue sauce + extra for topping
1/2 cup of cooking juices from the pork (optional)*
1 tablespoon of butter
4 1/2 cups of shredded slow cooker pulled pork**
2 cups of red cabbage coleslaw (or your favorite vinegar slaw)

Steps:

  • Place the slider buns on the middle rack of your oven and set it to 375 degrees (no need to preheat). Set a timer for 3-5 minutes and remove the rolls when they're lightly toasted to your liking.
  • Meanwhile, place the coleslaw on the counter to take the chill off, then melt the butter and set aside. Combine the barbecue sauce and cooking juices (optional) in a small saucepan set over medium heat. Cook for 2-3 minutes or until warmed through.
  • Measure the pulled pork into a mixing bowl, add the warmed barbecue sauce and stir until all the meat is coated.
  • Assemble each slider as followers: Place a heaping 1/4 cup of the pulled pork onto the bottom of the roll. Top with extra barbecue sauce (I use 1 tablespoon per slider) then 2-3 tablespoons of coleslaw. Place the top slider roll over the slaw and brush with melted butter.
  • If desired, stick a large toothpick into the middle of each slider so they're easier to hold (ideal for party appetizers). Serve immediately while warm and store any leftovers in a sealed container in the fridge. Eat the leftovers within 2-3 days so the bread doesn't get soggy or hard.

2 teaspoons paprika
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 5-pound bone-in pork butt (shoulder roast)
1 tablespoon canola oil
1 medium white onion (chopped)
3 cloves garlic (minced or pressed)
1/2 cup beef or chicken stock
1/2 cup ketchup
1/4 cup cider vinegar
10 cups shredded coleslaw mix (or 1 16-ounce bag)
1/2 red onion (thinly sliced)
1/3 cup canola oil
1/4 cup apple cider vinegar
1 tablespoon sugar
1 teaspoon caraway seeds
1 teaspoon celery seed
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
12 hamburger buns or rolls
1 cup sour cream
1/4 cup prepared horseradish (or more to taste)

Steps:

  • Set a 6 quart slow cooker to high to preheat.
  • In a small bowl, mix the brown sugar, paprika, cumin, coriander, kosher salt and black pepper together. Rub half of the mixture on the pork, setting aside the remaining spice rub. Heat oil in a large Dutch oven or high sided skillet over medium-high heat. Add the pork to the pan and brown evenly on each side, about 5 minutes per side.
  • Add the onion and garlic to the slow cooker and top with the pork butt. In a bowl or measuring cup, mix the remaining spice rub with the stock, ketchup, and vinegar then pour over the pork. Cover and cook on LOW for 8-9 hours or HIGH for 4-5 hours, or until fork tender.
  • Place the pork on a baking sheet or cutting board and let rest for 20-30 minutes or until cool enough to handle. Shred the pork into pieces and place in a bowl or back into the slow cooker insert.
  • Skim the fat from the cooking liquid and transfer to a blender. Blend until smooth then pour 1-2 cups of the liquid over the shredded pork and toss to combine.
  • Toss the coleslaw mix and red onion with the canola oil, apple cider vinegar, sugar, caraway seeds, celery seed, kosher salt and freshly ground black pepper. Cover and refrigerate for 1 hour for flavors to blend.
  • In a small bowl, mix the sour cream with the prepared horseradish, adding more to taste.
  • Slather the horseradish mayo on one side of a bun, then top it with the shredded pork and crunchy slaw. Serve warm with extra dipping sauce if desired.

3 TBSP brown sugar
1.5 TBSP kosher salt
1 TBSP crushed red pepper flakes
1 tsp cayenne pepper
1 cup apple cider vinegar
1/4 cup apple cider
1 TBSP brown sugar
2 cloves of garlic, minced
1 TBSP crushed red pepper flakes
1 TBSP liquid smoke
2 cups shredded red cabbage
1/2 cup shredded carrot
1 large apple, peeled and shredded
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
2 tsp Dijon mustard
2 tsp quality maple syrup
1/2 tsp kosher salt
1/4 tsp cracked black pepper

Steps:

  • Mix all of the ingredients for the mop in a bowl, whisking until well combined. Pour about 1/4 of the mop into the slow cooker.
  • Mix all of the ingredients for the dry rub in a small bowl.
  • Place the pork, fat cap side up, into the slow cooker. Sprinkle the dry rub over the pork and rub it all over the pork, ensuring to get every side except the bottom half, which is sitting in the wet mop.
  • Place the lid on the slow cooker and cook on low for 6-8 hours, or until it reaches a temperature of 190º F.
  • Once the pork is ready, transfer it to a large serving dish and let it sit for about 15-20 minutes.
  • Remove the fat cap and discard it. Then, with two forks, shred the pork until it's completely pulled. Transfer the pulled pork back to the slow cooker, and drizzle it with the rest of the mop; stir to coat.
