Banana Fritters. These are a lovely crispy treat, serve warm as they are or with some syrup drizzled over or a blob of ice cream! A great way to use up spare or leftover bananas too! Really quick and easy to make dessert.

Steps:
- In a bowl, add the flour, baking powder and salt.
- Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
- Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
- Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
- Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
- Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

YUMMY FRITTER BATTER
Found this recipe online and I'm posting so I don't lose it before I get a chance to try it out. There are variations for ham, banana, and apple fritters here. Serving size is an estimate as none was given with the original recipe.

BATTER RECIPE
Make pancakes, Yorkshire puddings or toad-in-the-hole with this classic batter recipe. It's simple, easy and perfect for all your family favourites

Steps:
- To make this simple batter recipe, start by sifting the flour into a large mixing bowl and make a well in the center. Drop the egg into the well and beat with a balloon whisk, gradually drawing some of the flour into the mixture.
- Slowly pour in the milk, whisking all the time, and continuing to draw in the flour until you have a smooth batter. It should be the consistency of single cream.
- Cover the bowl and leave the batter to stand in a cool place for about 30 mins - this allows the starch grains in the flour to soften and give a lighter batter. If after standing, the batter has thickened too much add a splash of milk to thin it down.

Steps:
- Combine yolks with oil and beer. Gradually stir this into flour (it should be thick enough to stick to the food) and beat until very smooth with a few swift strokes. Rest batter, covered, in refrigerator for 3 hours at least so it ferments a bit. Get oil to right temperature. Beat egg whites until stiff and fold into batter. Dip the onions or mushrooms in the batter and fry.

- 1 Sift flour into a bowl and add salt. In a separate bowl, beat milk and egg together. Make a well in the centre of the flour. Add liquid to flour and whisk.
- 3 Spray a non-stick pan with oil and place over a medium heat. Place spoonfuls of fritter mix in the pan, up to 4 fritters at a time, making sure they are separated from each other.
- 4 Cook until they are firm, they slide around the pan easily, and small bubbles appear on the surface. Using a spatula, turn over each fritter — the underside should be golden brown. Cook for a further few minutes, spraying with a little extra oil if necessary.
