2 Tablespoons Brown Sugar
1 Teaspoon Garlic Powder
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Chili Powder
1/2 Teaspoon Cumin
1/4 Teaspoon Cayenne Pepper
1 Small Red Onion, (Diced)
2 Cups Beef Broth
1 28 Ounce Can Tomato Sauce
1 28 Ounce Can Diced Tomatoes
1/2 Cup BBQ Sauce
2 14 Ounce Cans Chili Beans
1 Teaspoon Hot Sauce, (Optional)

Steps:

  • In a small bowl mix together the brown sugar, garlic powder, salt, pepper, chili powder, cumin, and cayenne.
  • Season the pork roast well on both sides and place into your slow cooker.
  • Add the onion, beef broth, tomato sauce, diced tomatoes, bbq sauce, chili beans, and hot sauce to the slow cooker.
  • Cover and cook on low for 8-10 hours.
  • Shred the pork using two forks and stir the chili well. Serve immediately.

2 ½-3 pounds boneless pork butt
1 medium onion (diced)
3 cloves garlic (minced)
1 20- ounce can crushed tomatoes
3 15- ounce cans chili beans
2 4- ounce cans mild green chiles
1 1/2 tablespoons chili powder
1 teaspoon salt
Kosher salt and black pepper to taste
Corn chips (cheese, sour cream)

Steps:

  • Cut pork butt roast into several large chunks, trimming some of the fat as you go. Season with salt and pepper.
  • (Optional step) Heat a skillet with a tablespoon of olive oil over medium-high heat. Sear each side of the meat for 1-2 minutes per side, or until browned. *Tip - the searing helps caramelize the meat and lock in the flavor, but if you are pressed for time you can skip this step. For a thicker chili, dredge the meat in a little bit of flour first.
  • To the slow cooker, add onions, meat, crushed tomatoes, chili beans (undrained), green chiles, chili powder, garlic and salt. Stir and cover. Set to high heat for 5-6 hours or low heat for 7-8 hours.
  • Shred pork in the slow cooker with two forks (or remove to a cutting board, shred, then return to the slow cooker). Cook on high for an additional 30 minutes.
  • Ladle into bowls and serve hot, garnished with sour cream, shredded cheddar cheese, cilantro or parsley and corn chips.

1 (4 pound) pork shoulder roast
1 cup barbeque sauce
½ cup apple cider vinegar
½ cup chicken broth
¼ cup light brown sugar

1 tablespoon chili powder
1 extra large onion, chopped
2 large cloves garlic, crushed

Steps:

  • Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. 1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika

2 pounds pork shoulder roast, or more to taste
5 tablespoons cornstarch
4 cups beef stock
1 (16 ounce) jar green salsa (such as Herdez®)
2 cups roasted Hatch green chile peppers, diced
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
2 white potatoes, diced
4 medium tomatillos, husked and quartered
1 bunch cilantro, chopped, divided
1 jalapeno pepper
1 Anaheim chile pepper, cored

Steps:

  • Rub the inside of a slow cooker with about 1 tablespoon oil and turn on Low heat.
  • Mix salt, black pepper, garlic powder, paprika, 1 teaspoon cumin, onion powder, chili powder, and cayenne pepper together in a bowl. Rub spice mixture all over pork. Top pork with cornstarch and pat in to coat completely.
  • Heat remaining oil in a heavy skillet over medium-high heat. Sear pork in the hot oil on all sides until almost black, about 5 minutes. Transfer seared pork to the slow cooker.
  • Reduce heat to medium and pour beef stock into the skillet. Whisk until boiling, scraping up browned bits, about 5 minutes. Boil gently for 3 to 4 minutes more. Strain stock into the slow cooker. Add salsa, Hatch chiles, diced tomatoes, and potatoes.
  • Combine tomatillos, 1/2 the cilantro, jalapeno pepper, Anaheim pepper, serrano pepper, remaining cumin, and liquid smoke in a blender. Blend on high power and add to slow cooker.
  • Cover and cook on Low for 8 hours.
  • Remove pork from slow cooker and shred using 2 forks. Return meat to slow cooker. Season with additional salt and pepper.
  • Serve chili in bowls with Mexican cheese, sour cream, and remaining cilantro.

1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 cup Progresso™ chicken broth (from 32-oz carton)
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 medium onion, diced

1 cup barbecue sauce
3 tablespoons light brown sugar
2 teaspoons chili powder
1 teaspoon chipotle powder
6 ounces light lager beer, optional
3 tablespoons apple cider vinegar, plus a splash
Kosher salt
1 medium onion, thinly sliced
3 scallions, chopped
Vegetable oil, for frying
2 egg whites
1 1/2 cups all-purpose flour
1 teaspoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 Fresno chiles, sliced crosswise into rings
4 large shallots, sliced crosswise into rings
Celery salt, for seasoning
12 slices white sandwich bread
Bread-and-butter pickles, for serving

Steps:

  • For the pulled pork: Combine the pork, barbecue sauce, brown sugar, chili powder, chipotle powder, lager, 3 tablespoons vinegar, 2 teaspoons salt and the onions in a 6-quart slow cooker. Cook on high power for 6 hours.
  • With a slotted spoon, transfer the pork to a cutting board and shred using two forks. Transfer to a bowl and add enough of the liquid from the slow cooker to generously moisten. Stir in the scallions and a splash of vinegar and season with salt to taste.
  • For the fried shallots and chiles: Set a cooling rack over a baking sheet and set aside. Add enough oil to a medium saucepan to fill by 2 inches. Over medium heat, bring the oil to 340 degrees F. Meanwhile, put the egg whites in a medium bowl and whisk with a fork until frothy. In a separate bowl, combine the flour with the chili powder, cumin and some salt and pepper. In batches, add the chiles and shallots to the bowl of egg whites and toss to coat. Remove from the egg whites, allowing excess liquid to drain off, then place into the flour. Put the coated chiles and shallots onto the prepared cooling rack. Fry in batches until golden brown, about 2 minutes. Remove to a paper-towel-lined baking sheet and sprinkle with celery salt.
  • Serve the pulled pork topped with fried shallots and chiles, or assemble into sandwiches:
  • Add the pulled pork to 6 slices of bread, then top with fried chiles and shallots, pickles and the remaining 6 slices bread.

1 large Spanish onion, diced

8 medium garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (12 ounce) bottle light beer, such as lager
1 1/2 tablespoons cornstarch
2 (15 ounce) cans dark red kidney beans, drained

Steps:

  • For the Chili: Blot pork dry with paper towels. Heat oil in a large pot or Dutch oven over high heat until shimmering. Add pork and cook until browned on the bottom, about 4 minutes. Turn pork and brown opposite side. Transfer pork to slow cooker.
  • In a clean pot, add dried ancho and New Mexico chilies and toast over high heat until fragrant, about 2 minutes. Add chicken stock and bring to a boil. Reduce to a simmer and cook until chilies are softened and almost falling apart, about 15 minutes.   • Remove pork from sauce and shred using 2 forks. Return pulled pork to slow cooker, stir well, and season with salt and pepper. Add hot sauce for additional heat, if desired.
  • For the Cornbread: In a large bowl, whisk together flour, cornmeal, baking powder, and salt. Set aside. In a small pan, brown the butter. Make a well in the center of the dry ingredients and add browned butter, light brown sugar, eggs, and milk. Mix until no dry streaks remain, being careful not to over-mix. Fold in cheddar cheese.
