Steps:
- Layer the ingredients in a 1 quart jar in the order given. Press each layer firmly in place before adding the next layer.
- Include a card with the following instructions: Cowboy Cookie Mix in a Jar 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a medium bowl, mix together 1/2 cup melted butter or margarine, 1 egg, and 1 teaspoon of vanilla. Stir in the entire contents of the jar. You may need to use your hands to finish mixing. Shape into walnut sized balls. Place 2 inches apart on prepared cookie sheets. 3. Bake for 11 to 13 minutes in the preheated oven. Transfer from cookie sheets to cool on wire racks.

- Start with a 1 quart smooth Ball jar. I found these at Hobby Lobby craft store. Layer the ingredients in this order: Flour, baking powder, baking soda and salt Oats M&Ms Chocolate chips Brown sugar White sugar Chopped pecans Pack each level down really tightly. I mean it. Pack it in, or else it won't all fit. Also, I added the chopped pecans last, because if the ingredients were too much or not enough, then I could add more or less pecans to adjust. I'd rather sacrifice nuts than chocolate, you know. The ingredients should be flush to the top of the lid when you seal it up. DIRECTIONS ON TAG: Stir all the dry ingredients in a large mixing bowl. Add 1 slightly beaten egg, 1/2 cup butter melted slightly in the microwave, and 1 teaspoon vanilla. Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated. Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350°F oven. I got about 26 to 28 cookies out of these.

Since half the fun of cookies is baking them, I give this merry-making mix as a gift. The ingredients look so pretty in a jar...and the cookies smell terrific coming out of the oven!

- Pour oats into a wide-mouth 1-qt. glass container with a tight-fitting lid. Combine flour, baking powder, baking soda and salt; place on top of oats. Layer with pecans, chocolate chips, brown sugar and sugar, packing each layer tightly (do not mix). Cover and store in a cool, dry place for up to 6 months. Yield: 1 batch. , To prepare cookies: Pour cookie mix into a large bowl; stir to combine ingredients. Beat in butter, egg and vanilla. Cover and refrigerate for 30 minutes. , Preheat oven to 350°. - Layer ingredients in order given in a 1- quart wide mouth canning jar.
- Press each layer firmly in place before adding next ingredient.
- Recipe for Cowboy Cookies (to be attached with the mix):.
- Empty jar of cookie mix into a large mixing bowl,.
- Blend mix together.
- Add: 1 stick butter melted, 1 large egg, slightly beaten, and 1 tsp vanilla.
- Mix until completely blended.
- Shape into balls the size of walnuts; place 2 inches apart on sprayed baking sheets.
- Bake at 350° for 11-13 minutes until edges are lightly browned.
- Cool 5 minutes on baking sheet.
- Remove cookies to racks to finish cooling.
- Makes 3 dozen cookies.

COWBOY COOKIE
Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, with an electric mixer, cream the shortening, granulated sugar, and brown sugar. Add eggs and the vanilla and beat until well blended. Stir in the flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined. Spoon cookie mixture onto greased foil lined cookie sheet. Bake for 8 to 10 minutes. Transfer the cookies to a wire rack to cool.
VEGAN COWBOY COOKIES
This recipe comes from the wonderful book "Vegan Cookies Invade Your Cookie Jar" by Terri Hope Romero and Isa Chandra Moskowitz. The cookies are big, soft in the centre with a crunchy outside and mmmoreish taste. Chocolate, nuts and coconut, what more could you ask for?! :) Ive also modified the recipe to be more on the healthy side, which yielded a softer cakey cookie. Ive posted that variation as a separate recipe.

- In a medium sized bowl combine oats, flour, baking soda, baking powder and salt. Set aside.
- In a second bowl beat together oil, sugar, brown sugar, milk, flax seeds and vanilla using a wire whisk.
- Fold in half of the flour mixture to moisten, then fold in second half. Just before mixture is completely combined, fold in coconut, chocolate chips and pecans.
- For each cookie drop 1/4 cup of dough (about the size of a golf ball) onto a paper-lined or greased cookie sheet. Leave about 2 inches of space between each cookie and flatten slightly with moistened fingers (or moistened back of measugin cup).
- Bake in the preheated oven at 350°F/180°C for 14-16 minutes until edges start to brown.
- Let the cookies rest on the cookie sheet for 5 minutes, then transfer to wire racks to cool completely.
