Hearty and creamy, this classic corn and potato soup gets extra oomph from our favorite ingredient-bacon. It only takes a few minutes to pull together, and then the slow cooker will do all the work.

1 lb small red potatoes, cut into 1-inch cubes
1/2 cup chopped onion
2 bags (12 oz each) frozen whole kernel corn
3 cups Progresso™ chicken broth (from 32-oz carton)
1 teaspoon salt
1/2 teaspoon ground pepper
2 cups half-and-half
2 tablespoons cornstarch
1/2 lb bacon, crisply cooked, crumbled

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix potatoes, onion, corn, broth, salt and pepper.
  • Cover; cook on High heat setting 3 to 4 hours or until potatoes are tender.
  • In small bowl, beat half-and-half and cornstarch with whisk until smooth. Stir half-and-half mixture and bacon into mixture in slow-cooker. Cover; cook 10 to 15 minutes longer or until slightly thickened.

This very savory chowder derives it's flavors from a variety of vegetables, Northern white beans, bacon and seasonings all pureed together in a chicken broth base. Best served with herb toast. I use reduced sodium chicken broth.

1 ½ cups dried great Northern beans, rinsed
2 cups water
6 slices bacon
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
1 potato - peeled and cubed
1 teaspoon Italian-style seasoning
⅛ teaspoon ground black pepper
3 (14.5 ounce) cans low-sodium chicken broth
1 cup milk

Steps:

  • Place beans in a large bowl with the water, cover, and soak overnight.
  • In a large skillet over medium to medium high heat, fry the bacon until crispy. Drain the bacon fat and crumble the bacon; set aside.
  • In a slow cooker, combine the carrot, celery, onion, potato, Italian- style seasoning, ground black pepper, reserved beans and crumbled bacon. Pour the broth over all.
  • Cover and cook on low setting for 7 1/2 to 9 hours, or until beans are crisp to tender.
  • Transfer 2 cups at a time to a blender or food processor and puree until smooth. Return all to slow cooker, add the milk, cover and heat on high for about 10 to 15 minutes, or until heated through.

16 ounces dried Great Northern beans
1 cup diced sweet yellow onion
3 cloves garlic, diced
1 tablespoon oil
1 1/2 quarts chicken broth or stock
2 bay leaves
2 cups peeled and diced potatoes
2 stalks celery, diced
3 carrots, peeled and diced
1 1/2 pounds to 2 1/2 pound ham shank
1/4 teaspoon black ground pepper
1 teaspoon salt
1/4 teaspoon ground cumin

Steps:

  • Soak beans overnight in salt water, drain. In bottom of stock pot, add oil and sauté onions and garlic over medium heat until softened (about 4 to 5 minutes). Remove from heat. Add remaining vegetables, seasonings, ham shank, drained beans, and chicken stock or broth. Bring to a boil. Reduce heat to simmer, cover and cook 1 1/2 hours. Remove ham shank from soup. Allow ham shank to cool slightly. Remove meat from bone. Discard bones, fat, and skin. Add meat to soup. Continue cooking on simmer for an additional 30 to 45 minutes or until beans are soft.

1 large smoked ham bone, ham hock, OR ham shank
2 cups (approximately 6 ounces) shredded, julienned, or diced carrots
1 medium stalk celery (sliced)
4 cloves garlic (minced)
7 cups low-sodium chicken broth OR stock
2 bay leaves
1 tablespoon dried parsley
1/2 teaspoon celery salt
1/2 teaspoon dry mustard powder
Freshly ground black pepper
Several dashes of hot pepper sauce (such as Tabasco)
1 to 2 cups additional diced ham (optional)

Steps:

  • Rinse and drain the beans and place them in the bottom of a large (7- to 8-quart) slow cooker. Nestle the ham bone/hock/shank in the center, and add the carrots, celery, and garlic on top. Carefully pour the chicken broth over the ingredients in the slow cooker, and then sprinkle with the bay leaves, parsley, celery salt, mustard powder, black pepper, and hot pepper sauce. Cover and cook on low for 7 to 9 hours or until the beans are tender.
  • Remove the ham bone/hock/shank. Pull any ham meat from the bone, shred, and set aside; discard the bone and any fat or cartilage. Use an immersion blender to puree just enough of the soup to give it a creamy consistency, leaving most of the beans whole. Stir the shredded ham (from the bone) into the soup, along with any additional diced ham you'd like to add. Allow to cook for a few more minutes until just heated through.

6 cups water
1 can (14.5 oz) diced tomatoes (do not drain)
1 smoked pork/ham hock (about 1 lb or slightly smaller)
1 small yellow onion, diced
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper

Steps:

  • Pick through beans to remove any debris and rinse well. Place into slow cooker. Add 6 cups water and all remaining ingredients.
  • Cook covered on low for 6-8 hours or on high for 4-6 hours until beans are soft and creamy. Discard pork/ham hock. Serve with crusty bread or rice. Top with extra-virgin olive oil or shredded Parmesan cheese, if desired.

7 oz can whole kernel corn (drained)
2 : 15oz can northern white beans (drained and rinsed well)
4 C potatoes (peeled and chopped)
1 tsp dried thyme
1 1/4 tsp ground black pepper
2 tsp salt
1/4 tsp red pepper flakes (optional)
3 C chicken broth*
4-8 oz white cheddar cheese (shredded)
1 C heavy cream
1/3 C all purpose flour*

Steps:

  • Add vegetables, beans, seasonings and chicken broth to the bowl of a 5-6 quart slow cooker. Cook on high for 4 hours (or low for 8). Stir in shredded cheese until melted. Combine heavy cream and flour, whisking until smooth. Pour into soup, stirring to combine. Cover and continue cooking for an additional 30 minutes, or until potatoes are tender and chowder has thickened.
  • Serve warm

1 medium onion (chopped)
2 to 3 ham hocks
1/2 teaspoon red pepper flakes
1/4 teaspoon dried thyme
1 bay leaf
salt and pepper

Steps:

  • Place beans in a large bowl and add water to cover. Let soak (on the counter) overnight.
  • Drain beans and add to 6-quart crock pot.
  • Add 5 cups water, onion, ham hocks, red pepper flakes, thyme, and bay leaf.
  • Cover and cook on LOW 5 hours.
  • Remove ham hocks from crock pot. Season beans to taste with salt and pepper.
  • Remove meat from ham hocks, shred and return to crock pot. If beans aren't tender, cover crock pot and continue to cook 30 mins or until beans are soft.

2 -3 slices bacon, cooked until the fat is rendered but not crispy
1 small yellow onion, finely chopped
1 celery rib, minced
1 small carrot, minced
1 bouquet garni (1/2 tsp. dried oregano, 3 sprigs parsley, 1/2 fresh sage leaf and 1 bay leaf wrapped in cheesecloth)
6 cups chicken broth or 6 cups water
salt and pepper
1/2 cup heavy cream (optional)

Steps:

  • Combine the beans, bacon, onion, celery, carrot, bouquet garni and broth in slow cooker.
  • Cover and cook on LOW for 8 to 9 hours.
  • Remove the bouquet garni.
  • Discard.
  • Puree about one-third of the soup in a food processor.
  • Season with salt and pepper.
  • Add cream if using, cover and continue to cook on LOW 15 minutes longer.
