PRALINE MELTAWAY BISCUITS

You and your family will absolutely love these melt-in-your-mouth sticky biscuits. They're pure biscuit heaven!

1/3 cup butter or margarine, melted
1/3 cup packed brown sugar
1/3 cup chopped pecans
2 1/4 cups Original Bisquick™ mix
2/3 cup milk or Cream
2 tablespoons granulated sugar

Steps:

  • Heat oven to 425°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. Stir together butter, brown sugar and pecans in small bowl. Divide sugar mixture evenly among muffin cups.
  • Stir Bisquick mix, milk and granulated sugar in medium bowl until soft dough forms. Place a spoonful of dough in each muffin cup.
  • Bake 11 to 13 minutes or until golden brown. Turn pan upside down onto cookie sheet. Leave pan over biscuits a few minutes to allow brown sugar mixture to drizzle over biscuits. Replace topping from pan on biscuits. Cool slightly before serving; serve warm.

These elegant morsels are best eaten soon after filling or you can put them in the freezer and have them as a frozen treat.

2 eggs
1 cup whole milk
1 tablespoon butter
1 cup flour
1/4 teaspoon salt
1/3 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
2 eggs
1 cup whole milk
2 teaspoons real vanilla
1/2 tablespoon butter, melted
chocolate syrup (I use Hersey's)

Steps:

  • Popovers: Mix all ingredients in large bowl.
  • Half fill greased muffin tins w/ mixture.
  • Put in cold oven and set temp to 450 degrees F.
  • Bake 15 minutes.
  • Reduce heat to 350 degrees F.
  • Bake for another 15-20 minutes.
  • Test one: make sure it is crispy outside and moist inside.
  • Filling: Combine sugar, cornstarch, salt and egg yolks in a bowl.
  • Add warm milk slowly to sugar mixture.
  • Pour back into a sauce pan and cook over med.
  • heat stirring constantly until thickened.
  • Add vanilla/melted butter and cool completely.
  • Spoon into popovers.
  • Cover w/ chocolate sauce and serve.

This is a terrific addition to a holiday cookie tray. You can make the cookies more festive by rolling in colored sugar before baking. NOTE: In response to a reviewer and picture, you must be sure to roll the cookies in sugar before baking otherwise they will not be sweet enough or look as nice.

2 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup powdered sugar
1/2 cup granulated sugar, plus
2 tablespoons granulated sugar
1 large egg
1/2 cup oil
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F On waxed paper, combine flour, baking soda, cream of tartar and salt.
  • In large bowl, with mixer at medium speed, beat butter, powdered sugar and 1/2 cup sugar, about 2 minutes or until creamy. Reduce speed to low, beat in egg, then beat in oil and vanilla. Gradually beat in flour and mixture just until blended, occasionally scraping bowl.
  • Place remaining 2 tablespoons granulated sugar in saucer. Shape dough by rounded teaspoons into 1/4 inch balls. Place balls 2 inches apart, on ungreased large cookie sheet.
  • Dip punch cup or glass with raised or cut design on bottom or coarse side of meat mallet into sugar in saucer, use to press and flatten each ball into 1 1/2 inch round.
  • Bake cookies 10-11 minutes or until edges are golden. Transfer cookies to wire rack to cool. Repeat with remaining dough.
  • Store cookies in tightly covered container at room temperature up to 1 week or in freezer up to 3 months.

2 cups chopped pecans
½ cup confectioners' sugar
1 ½ cups white sugar
½ cup buttermilk
¼ cup heavy cream
2 tablespoons butter
⅛ teaspoon salt
¾ teaspoon baking soda
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C). Spread pecans out on a baking sheet in a single layer. Bake for 15 minutes in the preheated oven, or until fragrant. Set aside.
  • In a saucepan, stir together the confectioners' sugar, white sugar, buttermilk, heavy cream, butter, and salt. Bring to a boil over medium heat. When the mixture begins to boil, start stirring gently with a wooden spoon, and continue cooking until the mixture is slightly above the soft ball stage to 250 degrees F (120 degrees C).
  • Remove from heat, and stir in baking soda and vanilla. The mixture will expand some while stirring. Cool for 10 to 15 minutes, then stir in pecans. Keep stirring with a wooden spoon until the mixture loses its gloss. Drop teaspoonfuls of the mixture onto parchment paper that has been coated with butter flavored non-stick spray. Allow to cool completely.

This was my first try with pralines. They worked brilliantly for me even with humid weather. The only thing I did differently was did not cool the mixture 10-15 minutes after adding the vanilla and baking soda. We stirred about 2 minutes and then added the pecans and it was already hardening as we were placing them on wax paper. The texture was perfect.
