Tender and juicy, this Slow Cooker Italian Beef is mouthwateringly amazing! This recipe is fork tender with a tangy zippy broth. You are going to love it!

3-4 pounds beef chuck roast
salt and pepper
2 tablespoons canola oil
2 cups beef consommé (or Beef broth)
1 package dry Italian salad dressing
1 teaspoon garlic powder
1 Tablespoon italian seasoning
12 oz jar sliced pepperoncini (drained)
1/4 cup butter (sliced)
4 hoagie rolls
8 slices provolone cheese

Steps:

  • Salt and pepper the beef roast. Heat a large skillet over high heat with the canola oil. Add the roast and sear each side for 2-3 minutes until it forms a golden seared crust. Place the roast in a 5 quart slow cooker.
  • Add the beef consommé, italian seasoning, garlic powder, italian seasoning and pepperoncini to the slow cooker. Top roast with butter slices.
  • Cook on low for 8-10 hours or high for 5-6 hours. Shred the roast with a fork. Serve on hoagies topped with provolone cheese and additional pepperoncinis if desired.

3 lbs. beef chuck roast
4 cups red potatoes (sliced)
3 cups carrots (sliced)
1 cup white onion (diced)
15 oz. tomato sauce
1.37 oz. packet McCormick thick and zesty spaghetti sauce mix

Steps:

  • Place the beef in the middle of the slow cooker.
  • Add the carrots and onions to one side of the beef, and the potatoes to the other side. (see notes)
  • Pour over the tomato sauce on top of the beef and vegetables.
  • Sprinkle the spaghetti seasoning over everything.
  • Cover and cook on HIGH for 6 hours WITHOUT opening the lid during the cooking time. (see notes)
  • Shred or cut the meat for serving.
  • Serve with the sauce from the slow cooker.
  • Enjoy!

Recipe originally called for a chuck roast but the picture was definitely not a chuck roast. Next time, I will buy a better cut of meat. It also called for beef broth but due to sodium, I used water and it was really tasty that way.

1 (3 lb) chuck roast
1 onion, quartered
1 1/4 cups water
1 (1 ounce) au jus mix
1 (2/3 ounce) package dried Italian salad dressing mix (such as Good Seasonsà )
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Place beef chuck roast into a slow cooker and scatter onion quarters around the meat. Pour the water over the meat and sprinkle the au jus mix, Italian salad dressing mix, salt, and black pepper over the roast.
  • Cover cooker, set on Low, and cook until meat is very tender, 6 to 8 hours.

This makes a sandwich similar to one I used to get at a local restaurant when I lived in a suburb of Chicago. My all time favorite! Serve on crusty rolls with roasted sweet or hot peppers, if desired.

3 cups water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (5 pound) rump roast

Steps:

  • Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.
  • Place roast in slow cooker, and pour salad dressing mixture over the meat.
  • Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

I got this recipe from my sister years ago and when I make it for friends they always ask for the recipe. I usually add more spices then the recipe calls for and add peppers on the beef with rolls when done.. Enjoy!!

1 teaspoon oregano
1/4 teaspoon thyme
2 bay leaves
2 garlic cloves or 1/4 teaspoon garlic powder
1 medium onion, cut up
1/4 teaspoon basil
salt and pepper
4 beef bouillon cubes
8 hard rolls

Steps:

  • Put all ingredients in crock pot and Cook in crock pot around 6-7 hours on high that way when it's done all you have to do is shred it because it's so tender.
  • You can add peppercini's and we sometimes add mozzarella cheese and put in under the broiler to melt and serve on hard rolls.

6 Tbsp. tomato paste
2 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
1 large onion, sliced
8 (3-inch hinged) submarine or French bread rolls, partially split
1-1/2 lb. boneless beef round steak

Steps:

  • Mix broth, tomato paste and dressing mixes; pour over meat in slow cooker. Top with onions; cover with lid.
  • Cook on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours).
  • Remove meat from slow cooker; shred with fork. Return meat to slow cooker; stir gently to coat with sauce. Serve meat in rolls.
