Make this chicken casserole with potatoes, carrot and leek in the morning using a slow cooker and it'll be ready for dinner. It's low-fat and low-calorie too.

1 carrot, roughly chopped
1 onion, roughly chopped
350g new potatoes, roughly chopped
6 skinless, boneless chicken thighs, chopped
500ml chicken stock
4 tbsp vegetable gravy granules

Steps:

  • Put the veg and chicken in a slow cooker. Pour the stock over and around the chicken thighs, then mix in the gravy granules to thicken it up (the sauce will be quite thick - use less gravy if you prefer a runnier casserole).
  • Switch the slow cooker to low and leave to cook for at least 4 hrs, or up to 8 hrs - try putting it on before you go to work, so that it's ready when you get home. Season well, then serve.

1 kg Chicken thighs (Boneless and skinless)
50 g Plain flour
2 Onions (Large, peeled and chopped)
3 Sticks Celery (Trimmed and chopped into small pieces)
500 g Carrots (See note 1 below.)
200 g Smoked bacon lardons (See note 2 below.)
300 ml Chicken stock
2 tbsp Wholegrain mustard
2 tsp Dried thyme (See note 3 below.)
Salt and freshly ground black pepper
4 tbsp Creme fraiche
3 tbsp Chopped fresh flat leaf parsley
Salt and freshly ground black pepper

Steps:

  • Fry your bacon lardons either in a small frying pan, or in the bottom of your slow cooker pan if it can be used on the hob. Let them go crispy and golden brown.
  • Meanwhile, put your chicken thighs in a large bowl and coat thoroughly in the flour.
  • When the bacon has finished cooking, put the onions, celery, carrots and bacon pieces into your slow cooker (or leave the bacon pieces in that pan if they've been cooking in there).
  • Sit the flour rolled chicken pieces on top of the vegetables in the slow cooker.
  • Mix the stock, mustard, thyme and salt and pepper and pour into the slow cooker, around the side of the chicken.
  • Put the lid on and cook on HIGH for 4 hours or LOW for at least 6 hours.
  • When you're ready to serve, add the creme fraiche and the chopped parsley. Check for seasoning and add more salt and pepper if needed.

½ cup butter
1 (16 ounce) package frozen mixed vegetables, thawed
2 (10.75 ounce) cans condensed cream of chicken soup
2 (10.75 ounce) cans condensed cream of mushroom soup
3 teaspoons garlic powder
3 teaspoons onion powder
3 (3 ounce) packages chicken flavored ramen noodles
6 skinless, boneless chicken breast halves, cut into bite size pieces

Steps:

  • Cut butter or margarine into small chunks and put chunks in the bottom of the slow cooker. Add the vegetables, cream of chicken soups and cream of mushroom soups. Stir. Sprinkle with the garlic powder, onion powder and seasoning packets from the ramen noodle packages. Put chicken pieces in slow cooker. Cover and cook for 6 hours on LOW.
  • Break each ramen noodle packet into quarters (4 'pieces'). Put noodles in slow cooker and stir to cover noodles. Cook 1 hour on HIGH. Reduce heat and let simmer until ready to serve.

12 oz Chicken Flavored Stuffing Mix ((2-6 oz pkgs) prepared as directed except with broth instead of water)
20 oz Cream of Chicken Soup ((2-10 oz cans) I used Healthy Request-Divided)
1/2 Cup Milk
3 Cups Cooked Chicken (cubed)
Optional: 8 oz Shredded Cheddar Cheese

Steps:

  • Prepare stuffing as directed replacing water with broth.
  • Place in a sprayed 5 QT Slow Cooker
  • Stir in one can of soup.
  • In another bowl, mix milk, chicken and other soup.
  • Pour over stuffing.
  • Sprinkle cheese on top.

½ tbsp rapeseed or olive oil
1 large onion, finely chopped
1 ½ tbsp flour
650g boneless, skinless chicken thigh fillets
3 garlic cloves, crushed
400g baby new potatoes, halved
2 sticks celery, diced
2 carrots, diced
250g mushrooms, quartered
15g dried porcini mushroom, soaked in 50ml boiling water
500ml stock made with 2 very low salt chicken stock cubes (we used Kallo)
2 tsp Dijon mustard, plus extra to serve
2 bay leaves

Steps:

  • Heat a knob of butter and ½ tbsp rapeseed or olive oil in a large frying pan, cook 1 finely chopped large onion for 8-10 mins until softened and starting to caramelise.
  • Meanwhile, put 1 ½ tbsp flour and a little salt and pepper in a bowl and toss 650g boneless, skinless chicken thigh fillets in it.
  • Add 3 crushed garlic cloves and the chicken to the pan and cook for 4-5 mins more until the chicken is starting to brown.
  • Transfer to your slow cooker, along with 400g halved baby new potatoes, 2 diced celery sticks, 2 diced carrots, 250g quartered mushrooms, 15g dried and soaked porcini mushrooms with the 50ml soaking liquid, 500ml chicken stock, 2 tsp Dijon mustard and 2 bay leaves.
  • Give it a good stir. Cook on Low for 7 hours or High for 4 hours.
  • Remove the bay leaves and serve with a little Dijon mustard on the side.

1 tablespoon extra-virgin olive oil
1 pound ground turkey ( or chicken, I used 93% lean ground turkey)
1 medium yellow onion (diced)
1 cup uncooked quinoa
2 (10-ounce) cans red enchilada sauce
1 (15-ounce) can black beans (drained and rinsed)
1 (15-ounce) can fire-roasted diced tomatoes in their juices
1 cup corn kernels (fresh or frozen)
1 red bell pepper (cored and diced)
1 green bell pepper (cored and diced)
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon garlic powder
1/2 cup water
1 cup shredded Mexican blend cheese (divided)

Steps:

  • Heat the olive oil in a large skillet or Dutch oven over medium high. Add the turkey and onion. Cook and stir, breaking up the turkey as you go, until the turkey is no longer pink, about 5 minutes. Transfer to the bottom of a large slow cooker.
  • To the slow cooker, add the quinoa, enchilada sauce, black beans, tomatoes, corn, red bell pepper, green bell pepper, chili powder, cumin, garlic powder, and 1/2 cup water. Stir to combine, then cover and cook on high for 2 1/2 to 3 hours or low for 5 to 6 hours, until the liquid is absorbed and the quinoa is tender.
  • Remove the lid and stir. Taste and adjust any seasonings as desired. Stir in 1/2 cup of the shredded cheese, then sprinkle the remaining cheese over the top. Cover and cook on high until the cheese melts, about 10 to 15 minutes. Serve hot with any desired toppings.

400g/14oz boneless and skinless chicken thighs, chopped into smaller pieces
2 carrots - sliced
300g/10.5oz butternut squash - peeled and roughly chopped
150g/5.5oz of zucchini, halved and sliced
1 red pepper - sliced
2 cloves of garlic - crushed
1 onion, halved and sliced
1/4 cup (4 level tbs) of soy sauce (or coconut aminos) - I use Kikkoman
1/2 cup (120ml) of water
2 tablespoons of maple syrup (4 syns)
2 tablespoon of tomato paste
1/2 tbs of sweet paprika
salt and black pepper if needed
chopped fresh parsley

Steps:

  • In a bowl combine the soy sauce, water, maple syrup, tomato paste and paprika and whisk to combine.
  • Add the vegetables and chicken to the slow cooker and mix.
  • Pour over the sauce.
  • Set to high for 4 hours or low for 8 hours
  • Remove lid slightly for the last half hour of cooking time.
  • Once cooked serve topped with the fresh parsley and season with salt and black pepper as needed.
  • Serve with your choice of sides.
  • If you prefer you can turn on saute mode first to brown the onion, garlic and chicken with a little spray oil.
  • Otherwise, follow steps 1-3 above adding to the instant pot pan, instead of slow cooker.

Steps:

  • Chop the leek, carrot, onion and potatoes into small amounts. If using new potatoes I tend to cut these into 8 pieces.
  • De-skin and de-bone the chicken thighs and chop these into small pieces as well
  • At this point you can fridge the ingredients and put the slow cooker on in the morning, with the meal ready for when you get home or you can go ahead and cook now
  • Add leek, carrot, onion and potatoes to the slow cooker
  • Add the chicken to the slow cooker with the ingredients then pour over the chicken stock as slowly and as evenly as possible. Then mix in 4 tablespoons of vegetable gravy to thicken it up. We like the sauce nice and thick but reduce the amount of granules if you prefer a runnier casserole.
  • Switch the slow cooker to low and leave to cook for a minimum of 4 hours, however I tend to cook for 8 as I put this on before I go to work; ready to eat when I get home.

1 pound skinless chicken breasts, cut into bite size pieces

1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 ½ cups grated Colby cheese
1 ½ slices grated Monterey Jack cheese
¾ cup milk

Steps:

  • Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble once cool enough to handle.
  • Season chicken pieces lightly with salt and pepper.
  • Grease the bottom of a slow cooker with bacon grease and layer 1/2 of the potato nuggets on the bottom. Sprinkle with 1/2 of the bacon bits. Mix Colby cheese and Monterey Jack cheese together in a bowl and sprinkle 1/3 of the cheese mixture on top. Add chicken in 1 layer and top with 1/2 of the remaining cheese mixture. Sprinkle with remaining bacon bits and top with remaining potato nuggets. Sprinkle rest of the cheese mixture on top and pour milk over everything.
  • Cover the slow cooker and cook on High until chicken is cooked though and cheese has melted, 3 to 5 hours.
