Steps:
- Preheat oven to 160°C/320°F (all oven types).
- Mix Rub in a small bowl large, enough to fit one rib.
- Press beef ribs into the rub, coating all sides. Shake off excess.
- Mix Barbecue Sauce ingredients, except water, in a baking pan. Then mix in water.
- Place ribs in sauce, turning to coat. Arrange meat side down in the sauce, bone side exposed (sauce won't cover completely, that's ok).
- Cover tightly with foil or lid, bake 3 1/2 hours.
- Remove from oven, remove foil. Turn ribs (some may have fall over, that's ok, just turn them). Spoon over sauce.
- Bake 30 minutes uncovered, spooning over sauce again halfway through, until surface is caramelised and sticky. Check to ensure ribs are tender - pry a bit apart using two forks. (If not, cover and return to oven, but after 4 hrs they certainly should be!)
- Remove ribs onto serving plate (use a spoon as meat will barely be attached to bone, if at all). Mix sauce to bring together (Note 3 on adjustments). Serve with ribs!

- If your ribs came in a rack, slice them apart so you have individual ribs. Sprinkle each with your favorite seasoning salt or salt and pepper.
- Layer the ribs in your slow cooker and top with 1 1/2 cups of the BBQ sauce and 1 cup of water. Cook on low for 7-8 hours, high for 3-4. The ribs are ready for the next step when you can easily pull the meat apart with a fork.

- Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. - Preheat oven to 225 degrees.
- Season your ribs with Dale's marinade, your favorite rib rub, grill seasoning, or simply salt and pepper.
- Place ribs, meat side down, in baking dishes.
- Cover the baking dishes with aluminum foil and place in the oven.
- If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
- Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart.

- Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
- Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. - Wash the ribs. Place in a large mixing bowl and add the flour, salt and pepper. Toss the ribs and make sure they are well coated with the flour. Transfer any remaining flour to a cup and add a few tablespoons of water. Stir to make a paste and set aside.
- In a large pan, add a drop of olive oil and brown the ribs on all sides then transfer to the slow cooker.
- Using the same pan, saute the onions and garlic until soft. Use a spatula and stir everything, scraping the bottom and sides of the pan to get all the beef residue off.
- Add the tomato puree, bay leaves, paprika, honey, Worcestershire sauce, thyme and beef stock.
- Using the flour paste you made, add that to the broth mixture, stir over a high heat until it starts to boil. Add the carrots. Taste if you wish to add any salt and pepper.
- Transfer the broth mixture to the slow cooker. Place lid on and cook on LOW for 6 hours.
- **If cooking this in the oven, transfer everything to a casserole dish and cover. Place in the oven at oven at 300 F or 150 C for approximately 3 hrs.
- **TIP: 20 minutes before cook time (slow cooker and oven), just have a quick check to make sure the broth is as thick as you would like. if it is too thin, simply mix 1 tablespoon of cornstarch to 1 tablespoon of cold water in a cup and pour that into the broth and stir. this will thicken it when it continues to cook for the remaining cook time.
- When cooked, serve with some delicious creamy cheesy mashed potatoes and steamed vegetables.

- Pat 2½ pounds beef chuck short ribs dry, then sprinkle them all over with salt and pepper. Coat them well with seasoning to intensify the flavor. Finely chop 1 onion, 8 ribs of celery (or 1 stalk), and 3 medium-size carrots.
- Warm ¾ Tablespoon vegetable oil (half of your 1½ Tbsp.) in a skillet over medium-high heat. Sear the short ribs on all sides in two batches - don't overcrowd the skillet. Sear just until you have a nice mahogany crust on all sides. After browning, add the short ribs to the slow cooker in one layer with the bones facing up.
- Add the diced onion, celery, and carrots to the skillet with the remaining ¾ Tablespoon vegetable oil. Reduce the heat just slightly as needed, so the vegetables do not burn.
- Cook for 2 minutes, then add 1 clove of crushed garlic (or 1 tsp. minced garlic) and cook for 1 minute more. Add ½ cup red wine to deglaze the pan. Scrape up any brown bits from the bottom of the skillet - that's flavor!
- As the skillet starts to simmer, add in 2 Tablespoons balsamic vinegar, 2 Tablespoons tomato paste, ¾ cup beef broth, ½ teaspoon dried rosemary, and 3 bay leaves. Allow it to come to a simmer again, then pour the mixture over the short ribs in the slow cooker.

- Sprinkle the short ribs with sea salt on all sides. Heat the avocado oil in a large cast iron skillet over medium-high heat. Wait for a few minutes to allow the skillet to become sizzling hot.
- Place the short ribs in the hot skillet on one of the fat sides. Sear for 3 minutes, then flip and sear for another 2 to 3 minutes.
- Pour the cherry juice and chicken broth into the slow cooker. Transfer the seared short ribs into the slow cooker.

- Heat the cooking oil in a large saucepan over high heat. Sprinkle the beef ribs with salt and pepper. Add the ribs, meat-side down, to the pan and brown on all sides (about 3 minutes per side).
- Remove from pan. Lower the heat to medium. Add the onion, celery and carrot and saute for 10 minutes. Add the garlic and stir.
- Add the beef broth and use a whisk to get up all the browned bits from the bottom of the pan. Add the tomato paste, red wine and thyme. Stir well.
