⅓ cup salsa

Steps:

  • In a medium bowl, mix the cream cheese, taco seasoning mix and salsa. Spread the mixture into a shallow serving dish or an 8 inch baking pan. Top with Cheddar cheese. Chill in the refrigerator approximately 1 hour before serving.

1 (1.25 ounce) package taco seasoning mix
¼ head iceberg lettuce - rinsed, dried, and shredded

3 chopped tomatoes
1 green bell pepper, chopped
1 (2.25 ounce) can black olives, drained

Steps:

  • In a medium-sized mixing bowl, combine cream cheese, sour cream and taco seasoning. Spread this mixture in a 9-inch (or a little larger) round serving dish. Top the mixture with lettuce, Cheddar cheese, tomatoes, bell pepper and black olives.

Two 15-ounce cans refried beans
2 cups guacamole
One 16-ounce container sour cream
4 scallions, thinly sliced, light green and white parts only
2 cups shredded Mexican blend cheese
1/4 cup chopped black olives
1 cup crumbled Cotija cheese
1 1/2 cups salsa
Corn chips, for serving (I like Fritos scoops)

Steps:

  • Evenly spread the refried beans on the bottom of a 9-by-13-inch baking dish. Spread the guacamole over the beans and then spread the sour cream over the guacamole. Sprinkle with scallions and then the shredded cheese.
  • To make the shape of a flag, arrange the black olives in the top left corner of the dish. Sprinkle with a dusting of cotija cheese. Spoon salsa in stripe formation on the rest of the dish. Sprinkle the remaining cotija cheese between the salsa to create white stripes. Refrigerate until ready to serve. Serve with corn chips for dipping.

1 16-oz. can refried beans
8 ounces sour cream
3 medium avocados
16 oz. mild cheddar cheese, grated
10-oz. jar mild taco sauce
1/4 bottle jalapeño sauce
1/2 cup black olives, chopped
1/2 cup scallions, chopped
1 - 1 1/2 cup tomatoes, chopped
1 small onion, chopped
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon black pepper

Steps:

  • Spread beans evenly on the bottom of a baking dish or casserole.
  • Mash avocados with chili powder, onion, pepper and garlic. Spread avocado mixture over the beans. Next, layer the sour cream over the first two layers.
  • Mix together the taco sauce, cheese, jalapeño sauce, olives, scallions, and tomatoes. Spread over the sour cream layer.
  • Serve with tortilla chips

Incredible and Easy Taco Dip! image

This taco dip is incredibly simple to make - so simple, it doesn't seem right that it can taste so good. We got this recipe from my friend Kathy, who altered a recipe she had found online. Whenever I make this, my DH asks me to make two so he can enjoy it again after the party. It gets gobbled up quickly no matter where we take it! The main key is to make this the day before and let it chill in the fridge overnight - allowing the flavors to meld together. Feel free to get creative with the ingredients!

1 1/4 ounces taco seasoning
16 ounces fat-free refried beans
16 ounces fat free sour cream
10 ounces mexicorn (canned)
15 ounces low fat guacamole (prepackaged)
16 ounces salsa
4 ounces green chilies
2 cups shredded monterey jack cheese or 2 cups monterey jack pepper cheese, blend
4 ounces sliced olives

Steps:

  • Mix refried beans, taco seasoning and 1-2 T salsa.
  • Spread in bottom of 13 x 9 inch pan.
  • Spread sour cream on top of refried beans - take all the way to edges.
  • Sprinkle corn on top of sour cream.
  • Spread guacamole on top of corn and sour cream - take to edges of pan.
  • Spread remaining salsa on top of guacamole - take to edges of pan.
  • Sprinkle chiles on top of salsa.
  • Cover entire dish with shredded cheese. Feel free to use whatever blend you prefer.
  • Sprinkle sliced olives on top.
  • Cover with plastic wrap and put in refrigerator.
  • Take it out of fridge approximately 1/2-1 hour prior to ready to eat. Serve with tortilla chips.

1 lb extra lean ground beef
1 lb extra lean ground turkey breast
1 large chopped onion
3 (15 ounce) cans stewed tomatoes
1 (15 ounce) can white hominy, drained
2 (15 ounce) cans yellow whole kernel corn
1 (15 ounce) can pinto beans
1 (4 1/2 ounce) can chopped chilies
1 (1 1/4 ounce) package taco seasoning mix
1 (1 1/4 ounce) package original ranch dressing mix
2 1/2 cups water

Steps:

  • Cook meat until gray & drain.
  • (Also, crumble up while cooking).
  • Saute 1 onion and add to the meat- or just cook with the meat.
  • Add rest of the ingredients with liquid- except hominy.
  • Bring to a boil then simmer for 30 minutes.
  • Serve hot with cornbread or tortilla chips.
  • (This is also a great recipe to add quinoa or rice to- it helps stretch it and add needed a needed food group).

My ex sister in law made this one night when our family got together to play cards and it became a card playing tradition. It's so easy and I almost always have the ingredients in the house so it works for drop in guests also.

1 package(s) taco seasoning mix
1 can(s) refried beans
1 jar(s) green taco sauce
3 cup(s) sharp cheddar cheese
1 - bag tortilla chips

Steps:

  • Brown hamburger. Add taco seasoning; mix well with refried beans. Layer in oblong cake pan. Mix sour cream and green taco sauce and put in as second layer.
  • Grate cheese and top off. Cook 20 minutes at 350 degrees until warm and bubbly.

  • In a medium bowl, using an electric mixer, beat cream cheese until fluffy.

2 cups hot cooked rice
TOPPINGS:

EASY TACO DIP WITH GROUND BEEF - EATING ON A DIME
Cook uncovered for 2-4 minutes. In a separate large bowl, beat together the cream cheese, sour cream and the remaining taco seasoning with a hand held mixer. Then spread the cream cheese mixture in the bottom of a 8X8 or 9X9 pan. Top with the ground beef, shredded lettuce, cheese, tomatoes and sliced olives. Serve with chips and enjoy!

Instructions. Using a food processor with a dough blade, mix flour and salt. Heat water in the microwave until it is hot but not boiling, or heat it on a stove. Brown ground beef, drain; place in large bowl and cool. Stir in kidney beans. Chop lettuce, tomatoes and onion; mix with beef and bean mixture. Stir in grated cheese and mix all ingredients well. Chill a few hours before serving. When serving, crunch Doritos or chips and add to mixture, mixing well. Serves a crowd!
