I have revised this recipe. Cooks have told me it has been too juicy. When it is time to fill a pie shell,(if you desire) you can peel two apples and add sliced apples to this filling or raisins and nuts if you wish.Sprinkle 1/4 cups flour and 8 dots of butter before adding top crust. If you don't want a top crust,I have added recipe for oatmeal crunch crust.(Due to juicyness of some peaches i have revised this recipe and hope you now do not have any problems with it. Also slice your peaches at least 1/2 inch slices in width or a little more.

14 cups fresh sliced peaches, with juice (skins removed)
1 1/2 cups light brown sugar, firmly packed
2 1/2 tablespoons vanilla
2 1/2 tablespoons allspice
4 cups water
2 cups white sugar
1 1/4 cups cornstarch
cold water
1 1/4 cups dry oatmeal
1/2 cup white flour or 1/2 cup rice flour
1/2 cup butter
1/2 teaspoon powdered anise
1/2 cup brown sugar
1/2 teaspoon salt
1/3 cup milk

Steps:

  • In large bowl add peaches with juice, brown sugar, vanilla and allspice. Stir to mix.
  • Set aside.
  • In large 8 guart stockpot, add 4 cups water, white sugar, and stir until dissolved.
  • Heat the peach mixture until hot, medium heat. Do not burn. Stir.
  • Add cornstarch and enough cold water in small bowl and stir until dissolved and stirable.
  • Add to syrup mixture and stir on medium heat. The syrup will be cloudy and then clear as the syrup starts to thicken.
  • Add hot peach mixture and cook for 10 minutes until it starts a rolling boil.
  • Cook 2 minutes.
  • Fill hot pint jars, wipe with clean damp cloth on the rim, seal with hot seals, rings and tighten.
  • Place in a hot water bath for 15 minutes.
  • Preparation for Oatmeal Crunch Crust:.
  • In medium bowl, add the first six ingredients. Mix well.
  • Sprinkle on the top of the filled pie shell.
  • 10 minutes before end of baking pie, sprinkle milk over the crust.
  • You can make a cobbler with this recipe also. Just grease the pan before adding the filling. I like to use my batter recipe for a cobbler.

My mom (88) gave me this recipe and has been begging me to make it. It is the new craze in her small town. She said this is the best recipe she has ever had and that it beats anything peach she has ever eaten, including peach cobbler.

1 cup pecans, toasted (chopped)
1 teaspoon baking soda
1 teaspoon lemon rind (grated)
3/4 cup canola oil
1 teaspoon vanilla
3 cups flour
1 teaspoon salt
2 cups sugar
3 eggs (large)
1 (21 ounce) can peach pie filling

Steps:

  • Preheat oven to 350.
  • Heat pecans 5-8 minutes to toast them.
  • Mix sugar, oil and eggs together in mixer.
  • Stir flour, soda, salt and lemon rind together.
  • Gradually add to oil and sugar mixture. Beat at low speed.
  • Add Vanilla, Peach Pie Filling and pecans.
  • Pour into 2 8"x4" loaf pans. Bake for 45 minutes. Shield with foil and cook 15 minutes longer. Cool 10 minutes in pan then remove and let cool.

12 cups peeled, pitted and chopped peaches
1 (3 inch) stick cinnamon
3 teaspoons whole cloves
2 2/3 cups granulated sugar
2 cups peeled and finely chopped apples
1 1/2 cups golden raisins
1/2 cup lemon juice
1/4 cup white vinegar
2 teaspoons grated fresh lemon rind (no white)
1 teaspoon ground nutmeg

Steps:

  • Tie cinnamon stick and whole cloves in a cheesecloth spice bag.
  • Combine all ingredients in a large stainless or enamel saucepan.
  • Bring to a boil, cover and boil gently for about 75 minutes, stirring occasionally until thick.
  • Discard spice bag and ladle pie filling into clean hot jars leaving 1/2 inch head space.
  • Remove bubbles.
  • Process in a boiling water bath for 15 minutes at altitudes up to 1000 feet.

My grandmother is an amazing cook and has passed down so many amazing recipes. This was her and my grandfather's favorite pie. We generally have a lot of seasonings in our dishes but when it came to peach pie, my family always felt simple was the best route. This recipe really is simple but it allows the flavor of the peaches to be the star.

5 lbs peaches
1 cup sugar
2 teaspoons cinnamon
4 tablespoons flour
2 tablespoons butter
2 pie crusts

Steps:

  • Peel and slice peaches, they should be about 1/4 of an inch thick.
  • Add sugar to sliced peaches (add more if needed depending on tartness of peaches, taste the mixture to check it).
  • Mix in cinnamon and flour.
  • Place in pie crust lined deep-dish 9" pan (either store bought crust or your own recipe).
  • "Dot" the top of the pie with butter (cut butter into small pieces and place all over the top of peach mixture).
  • Place top crust over the pie and seal the edges (pinching and fluting), then with a small pointed knife cut a series of small holes to vent (approximately 30 to 40 tiny holes).
  • Place a thin piece of foil around just the edge of the pie.
  • Bake at 425 degrees for approximately 30 minutes, then remove foil and bake 20 to 30 minutes longer until the crust is evenly baked to a golden brown.
  • Allow to cool at least an hour before cutting.

12 cups fresh peaches (peeled and sliced, pits removed)
2 cups sugar
5 -6 tablespoons tapioca (dry)

Steps:

  • Slice the peaches and mix with 1 1/2 cups sugar in a large pot.
  • Bring to a boil, and add the other 1/2 cup sugar and the Tapioca.
  • Boil again for 1 minute.
  • Remove from heat and cool.
  • Divide into thirds, and place in a freezeable container.
  • Each portion will yield 1 pie.
  • Thaw only at room temp, do NOT use the microwave to thaw.
  • Place this filling into an unbaked pie shell, top with a pie pastry crust, and bake as you would a regular fruit filled-pie.

6 cups sliced peaches, preferably free stone (about 10 peaches)
1 teaspoon lemon juice
2/3 cup sugar
1/4 cup flour or 3 tablespoons quick-cooking tapioca
2 tablespoons butter

Steps:

  • After peeling and slicing peaches, toss with lemon juice.
  • Stir together flour and sugar and toss well with peaches.
  • Place into foil lined deep pie plate, dot with butter and cover with foil.
  • Freeze immediately. Next day lift foil package from pie plate and return to freezer.
  • To bake pie, prepare pastry for a double crust and line a 10 inch pie plate with pastry.
  • Fit unwrapped pie filling into crust and cover with a lattice crust.
  • Cover the edge with aluminum foil to prevent excessive browning.
  • Cook at 425 for 35 minutes. Remove foil and bake another 15 minutes until crust is brown and juices bubble through vents.

I have not tried this recipe. I got the recipe from USA Weekend magazine. You can find powder-fine potato starch or potato flour in the kosher or health food aisle. The recipe is by Pam Anderson. She useually has a pound of butter and a couple of shortening sticks in the freezer, which means she can start making a pie at a moment's notice.

6 cups peeled and sliced ripe fresh peaches (about 6 large or 11 medium, totaling 3 pounds)
3/4 cup granulated sugar, plus
2 tablespoons granulated sugar (plus additional 1 1/2 tbl for finishing crust)
3 tablespoons potato flour or 3 tablespoons arrowroot
1 pinch salt
1/2 teaspoon almond extract
1 tablespoon butter, cut into small pieces
1 egg white, beaten

Steps:

  • Place the peaches in a large colander.
  • Sprinkle with 2 tablespoons sugar and let stand until almost 1/2 cup juice is released, about 30 minutes.
  • Mix 3/4 cup sugar with potato starch and salt.
  • Add to peaches, along with almond extract; toss to combine.
  • Pour filling into crust. Add the filling to a pie shell and dot with butter.
  • Top filling with another crust and bake the pie for 20 minutes. Remove from oven, brush with beaten egg white, sprinkle with 1 1/2 tablespoon sugar. Bake until golden brown, about 20 minutes longer.
  • Bake until filling bubbles, 15-20 minutes longer. Cool on a wire rack, 2-3 hours.
