Provided by Chris Harrison

Categories     Dinner, Main course

Time 6h40m

Number Of Ingredients 14

1.6kg boneless pork belly
6 black peppercorns
½ small bunch thyme
1 bay leaf
1 tsp fennel seeds
500ml bottle dry cider
½ watermelon (around 800g), flesh finely chopped
1 red onion , finely chopped
1 red chilli , deseeded and finely chopped
1 Granny Smith apple , finely chopped
2 limes , zest and juice
¼ small bunch coriander , roughly chopped
BBQ sauce
6-8 flatbreads

Steps:

  • Heat oven to 140C/120C fan/gas 2. Season the pork belly all over with salt then put it, the peppercorns, thyme, bay and fennel seeds in a deep roasting tin. Pour over the cider, then top up with water until the pork is submerged. Cover with foil and cook for 6 hrs.
  • Remove from the oven and leave the pork to cool until you can touch it easily, around 10 mins, then lift from the liquid and use cling film to roll the pork as tightly as you can, then leave to cool completely in the fridge overnight.
  • Mix all the ingredients for the watermelon salsa together and season. Set aside.
  • Slice the pork belly into eight 1-2cm rounds and place, flat-side down. in a lightly oiled frying pan, cook until golden, 1-2 mins, then turn over and repeat so both sides are nicely crisped, even in colour and the pork is hot throughout.
  • To serve, spread 1 tbsp of bbq sauce over each flatbread, top with the crisped pork belly and finish with a spoonful of the salsa.

SLOW-COOKED RED BRAISED PORK BELLY

Slow-Cooked Red Braised Pork Belly image

This is one of the most common Chinese household dishes. You almost never find this dish in restaurants because it takes a long time to cook and because it is gloriously fatty. Serve with steamed rice and your choice of vegetable.

Provided by Ray Sheen

Categories     World Cuisine Recipes     Asian     Chinese

Time 7h37m

Yield 4

Number Of Ingredients 12

1 ½ pounds pork belly, cut into bite-size pieces
¼ cup vegetable oil
3 tablespoons brown sugar
¼ cup dark soy sauce
¼ cup Shaoxing rice wine
¼ cup light soy sauce
4 scallions, halved
4 slices fresh ginger
4 star anise pods
water to cover
½ (8 ounce) package vegetarian chicken substitute, diced
6 hard-boiled eggs, peeled

Steps:

  • Fill a large pot with water and bring to a boil. Add pork belly; cook until starting to soften, about 5 minutes. Drain.
  • Heat vegetable oil and brown sugar in a wok or large skillet over medium heat until sugar is melted. Add pork; cook until browned on all sides, about 2 minutes. Add dark soy sauce; cook and stir until flavors combine, about 5 minutes.
  • Transfer pork mixture to a slow cooker. Add rice wine, light soy sauce, scallions, ginger, and star anise. Pour in enough water to just cover the pork.
  • Cook on Low until pork is tender, about 6 hours. Add diced chicken substitute, hard-boiled eggs, and more water to cover.
  • Cook on Low until eggs absorb cooking liquid, rotating halfway through, about 1 hour more.

HEATHLY CROCK POT SALSA PORK CHOPS

Heathly Crock Pot Salsa Pork Chops image

I found this recipe on site called Kalyn's Kitchen and my family loves it! You would never guess that it's a healthy recipe with as quickly as it disappears in my house. The chops get extremely tender and the sauce is slightly spicy without being overkill. Make sure you use a spatula to get the chops out in one piece because they tend to get "fall apart" tender.

Provided by PSU Lioness

Categories     Pork

Time 3h20m

Yield 4 serving(s)

Number Of Ingredients 8

4 pork chops, with fat trimmed (I used pork loin sirloin chops)
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt (or Vege-Sal)
1/2 teaspoon fresh ground black pepper
1 tablespoon olive oil
1 cup salsa (I used an Aldi's house brand with Medium heat but we like stuff a little spicy)
2 tablespoons fresh-squeezed lime juice

Steps:

  • Trim all fat around the edges of pork chops and discard fat.
  • Combine ground cumin, garlic powder, salt, and fresh ground black pepper in a small bowl; then use the spice mixture to rub the trimmed pork chops on both sides.
  • Heat the oil in a heavy frying pan, add pork chops and cook over medium heat until well-browned, about 4 minutes per side. (The pork chops don't need to be done clear though, but they should be nicely browned.)
  • Spray sides and bottom of the slow cooker with olive oil or non-stick spray.
  • Put browned pork chops into the slow cooker, pour over salsa-lime mixture, and cook on high for 2-3 hours, or until the pork chops are very tender when pierced with a fork.
  • Serve hot, with a little sauce spooned over each pork chops.

WATERMELON-INJECTED GRILLED PORK TENDERLOIN WITH WATERMELON SALSA

Watermelon-Injected Grilled Pork Tenderloin with Watermelon Salsa image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 17

2 cups watermelon, seeded and finely diced
1 finely diced Granny Smith apple
1 red onion, julienned
2 cloves garlic, minced
2 jalapenos, seeded and finely diced
1 bunch fresh cilantro, stemmed
2 tablespoons sugar
2 limes, squeezed
Dash rice wine vinegar
Freshly ground sea salt and black pepper
2 pounds pork tenderloin
3 cups watermelon, seeded and diced
3 jalapenos, seeded and diced
1 tablespoon salt
2 cups sugar
1/4 cup melon liqueur, optional (recommended: Midori)
Freshly ground sea salt and black pepper

Steps:

  • For the salsa: Combine all ingredients in medium mixing bowl and chill until ready to serve.
  • For the tenderloin: Use a sharp knife to trim tenderloin of any fat by removing as much of the silver skin as possible.
  • Combine watermelon and jalapenos in a blender and puree, about 2 to 3 minutes. Strain mixture through fine sieve and return to blender. Add the salt, sugar and melon liqueur (if using) to blender and blend together, about 2 to 3 minutes. Reserve 1 cup of marinade for basting. Draw remaining marinade with syringe injector. Inject pork liberally with marinade. Sprinkle salt and pepper to cover pork. Let marinate while heating the grill.
  • Remove pork from platter and place directly on the flame for direct heat. Roll the pork over the direct heat to give it grill marks. Remove pork from direct heat and place away from the flame to finish cooking. Baste with glaze every 10 to 15 minutes until pork reaches an internal temperature of 145 degrees F. Remove from grill to platter and let cool for 5 minutes. Slice into medallions and serve with Watermelon Salsa.

SLOW-COOKED PORK BELLY

Slow-Cooked Pork Belly image

The fat renders out in the long, slow cooking, leaving behind moist, flavourful meat and crisp crackling. From Olive Magazine. Serve with roasted potatoes and a huge, tossed, green salad with a vinaigrette dressing for a delicious meal. Prep time is about 30 minutes and whatever amount of time you marinate.

Provided by evelynathens

Categories     Pork

Time 3h45m

Yield 6-8 serving(s)

Number Of Ingredients 5

8 bay leaves
2 thumb-sized pieces gingerroot
15 garlic cloves
150 ml olive oil
3 kg pork belly, ask your butcher to score it for you (complete with skin and bones)

Steps:

  • Combine all the ingredients (apart from the pork) in either a food processor or a pestle and mortar, then rub them well into the skin of the pork belly . Leave it somewhere cool to marinate for as long as you can bear (between 1 hour and 2 days).
  • Preheat your oven to 110C/fan 90C/gas 1/4 or as low as it will go. Roast the pork for 3 hours. Check to make sure it's not pink. If it is, give it a bit longer.
  • Lastly, for your Maillard reaction, whack the oven up to 240C/fan 220C/gas 9 or as high as it will go and roast for 10-15 minutes or until crisp.
  • Let the belly rest but not for more than 10 minutes and serve.

SLOW ROAST PORK BELLY

Slow Roast Pork Belly image

There are a few meals I can say I'm making that will make my children excited (or pretend to be), and this is one of them. Alongside there must be Pie Insides (which is what my daughter has always called leeks in white sauce) and for ultimate gratification, roast potatoes although I usually use goose fat for roast potatoes, I feel the pork belly allows, indeed encourages, the substitution of lard. I'm not convinced that with all that fabulous crackling you do need roasties as well, but I like to provide what makes people happy. I have advised an overnight marinade, but if I'm making this (as I tend to) for Sunday supper, I often prepare it in the morning and leave it in the fridge loosely covered with baking parchment, or midday-ish and leave it uncovered in a cold place (but not the fridge) for a few hours. For US cup measures, use the toggle at the top of the ingredients list.

Provided by Nigella

Yield Serves: 6-8

Number Of Ingredients 5

1¾ kilograms pork belly (rind scored)
4 tablespoons tahini
4 tablespoons soy sauce
juice of 1 lemon
juice of 1 lime

Steps:

  • Get out a shallow dish in which the scored pork will fit snugly and in it whisk together the tahini, soy sauce, lemon and lime juice. Sit the pork on top, skin-side up. You should find the marinade covers the underside and most of the sides, but doesn't touch the rind: that's what you want. Leave the pork in the fridge to marinate overnight, covered with foil, and then take out to return to room temperature before it goes into the oven. Preheat the oven to 150°C/130°C Fan/gas mark 2/300ºF. Get out a shallow roasting tin and line with foil. Transfer the pork to the roasting tin - some of the marinade will stay on the pork, and that's what you want - and cook it uncovered for 3½ hours. Turn the oven up to 250°C/230°C Fan/gas mark 9/450ºF and cook for a further 15-30 minutes to let the skin crisp to crunchy burnished perfection, though do keep an eye on the crackling to make sure it doesn't burn.

CRISPY SLOW-ROASTED PORK BELLY

Crispy Slow-Roasted Pork Belly image

This slow-roasted pork belly is tender with a delicious crispy skin (crackling). All you need for the recipe are simple seasonings and olive oil.

Provided by Diana Rattray

Categories     Entree     Dinner

Time 3h5m

Yield 8

Number Of Ingredients 4

2 pounds pork belly with skin
Dash of kosher salt
Dash of freshly ground black pepper
1 to 2 tablespoons extra-virgin olive oil

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F/180 C. Place a rack (such as a cooling rack ) on a rimmed baking sheet. With a sharp knife, make several parallel cuts across the skin of the pork belly, 1/4 to 1/2-inch apart. Cut through the skin and fat but not into the meat.
  • Sprinkle the pork all over with kosher salt and freshly ground black pepper. Drizzle with olive oil and rub it all into the pork.
  • Place the pork on the rack, skin-side up.
  • Roast for 2 to 2 1/2 hours or until the meat is very tender and falling apart. Increase the heat to 425 F and roast for 20 to 25 minutes longer to crisp the skin even more.
  • Remove the pork from the oven and let rest for 10 minutes before slicing. Slice thinly, using the cuts in the skin as guides.
