1 1/2 lb boneless beef tip steak, cut into 1-inch pieces
2 cans (14.5 oz each) stewed tomatoes, undrained
1 can (6 oz) tomato paste
2 cups frozen southern-style diced hash brown potatoes (from 32-oz bag), thawed
1 teaspoon paprika
1 teaspoon salt
7 1/2 cups uncooked wide egg noodles (12 oz)
1 cup sour cream
Chopped fresh parsley, if desired

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix all ingredients except noodles, sour cream and parsley.
  • Cover; cook on Low heat setting 7 to 9 hours.
  • Cook noodles as directed on bag. Stir sour cream into beef mixture. Serve over noodles. Garnish with parsley.

3 cups uncooked rotini pasta (8 oz)
1 lb ground beef (at least 80% lean)
1 cup chopped onions
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes, undrained
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cups shredded Colby-Jack cheese blend (8 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch skillet, cook beef and onions over medium-high heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in tomato sauce, tomatoes, garlic powder, salt and pepper; heat to a simmer over high heat. Remove from heat; stir in pasta and 1 cup of the cheese. Pour into baking dish.
  • Cover dish with foil. Bake 20 to 25 minutes or until bubbly around edges. Sprinkle with remaining cheese. Bake uncovered 5 to 7 minutes longer or until cheese is melted.

1 tablespoon vegetable oil or bacon drippings
1 1/2 lb boneless beef chuck, tip or round roast or boneless pork shoulder, cut into 3/4-inch cubes
1/2 cup beef broth
3 tablespoons paprika
1 1/2 teaspoons salt
1/2 teaspoon caraway seed
1/4 teaspoon pepper
3 large onions, chopped (3 cups)
2 cloves garlic, finely chopped
1 can (14.5 oz) diced tomatoes, undrained
1/4 cup cold water
2 tablespoons all-purpose flour
6 cups hot cooked egg noodles

Steps:

  • In 4-quart Dutch oven or 12-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, stirring occasionally, until brown; drain.
  • Stir in remaining ingredients except water, flour and noodles. Heat to boiling; reduce heat. Cover; simmer about 1 hour 15 minutes, stirring occasionally, until beef is tender.
  • In tightly covered container, shake water and flour until mixed; gradually stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute. Serve over noodles.

2 lb ground beef chuck
4 teaspoons Worcestershire sauce
2 teaspoons kosher (coarse or sea) salt
2 teaspoons cracked black pepper
4 hamburger buns, split
4 lettuce leaves
4 large tomato slices
4 red onion slices
Mustard and mayonnaise, if desired

Steps:

  • Heat gas or charcoal grill. Place meat in large bowl; pour Worcestershire sauce over beef and gently mix with hands. Divide meat into 4 very loose balls, then gently shape into patties 1/2 to 3/4 inch thick and about 1/2 inch in diameter larger than your hamburger buns. Slightly press center of each patty.
  • Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on 1 side of each patty. Place patties, seasoned side down, on grill over medium heat. Sprinkle top of each patty with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
  • Serve burgers on buns with lettuce, tomato, onion, mayonnaise and mustard.

1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 tablespoon Italian seasoning
1 teaspoon paprika
1/4 teaspoon black pepper
1 cup uncooked elbow macaroni
3 oz cream cheese, cubed
1 cup shredded Monterey Jack cheese (4 oz)
1/2 cup flavored croutons, coarsely crushed

Steps:

  • Heat 12-inch nonstick skillet over medium-high heat; add beef and onion. Cook 7 to 9 minutes, stirring frequently, until beef is brown; drain, and return to skillet. Add garlic; cook about 1 minute or until garlic is fragrant. Stir in broth, tomato sauce, tomatoes, Italian seasoning, paprika and pepper. Heat to simmering, stirring occasionally. Reduce heat; cover and simmer about 20 minutes or until slightly thickened.
  • Stir in macaroni; cover and cook 16 to 18 minutes, stirring occasionally, until pasta is tender. Stir in cream cheese until completely melted, about 3 minutes. Sprinkle with shredded cheese; top with crushed croutons.

1/4 cup shortening
2 lbs beef chuck or 2 lbs beef round steak, cut into 1 inch cubes
1 cup sliced onion
1 garlic clove, minced
1/4 cup catsup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
2 teaspoons paprika
1/2 teaspoon dry mustard
1 dash red cayenne pepper
1 1/2 cups water
2 tablespoons flour
1/4 cup water
3 cups hot cooked noodles

Steps:

  • Melt shortening in large skillet.
  • Add beef, onion and garlic; cook and stir until meat is brown and onion is tender.
  • Stir in catsup, Worcestershire, sugar, salt, paprika, mustard, cayenne and 1 1/2 cups water.
  • Cover; simmer 2 to 2 1/2 hours.
  • Blend flour and 1/4 cup water; stir gradually into meat mixture.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Serve over noodles.
  • To freeze: Assemble as directed. Cover and freeze.
  • To serve: Thaw in the fridge. Re-heat, covered at 350 degrees for 35-40 minutes.

  • Cover; cook on Low heat setting 8 to 10 hours (or High heat setting 4 to 5 hours) or until beef is tender.
  • In small bowl, stir water and flour until well mixed; gradually stir into beef mixture. Stir in bell pepper. Increase heat setting to High. Cover; cook 30 minutes longer. Serve goulash over noodles.
