1 lb. green or other snap beans, trimmed
1/2 head of garlic
1/2 cup extra-virgin olive oil
1 Tbsp. harissa paste
3/4 tsp. cumin seeds
3/4 tsp. kosher salt
1 Tbsp. sherry vinegar

Steps:

  • Place a rack in middle of oven and preheat to 350°F. Toss green beans, garlic, oil, harissa, cumin seeds, and salt in a shallow 2-qt. baking dish to combine.
  • Turn garlic cut side down, then roast vegetables, tossing 2 or 3 times, until golden brown and very tender, 60-70 minutes. Let cool slightly, then add vinegar and toss to coat.

2 pounds of rinsed and trimmed fresh green beans
1/2 cup yellow onion (diced)
1 potato (diced)
1 1/2 cups chicken broth or stock
salt and pepper to taste

Steps:

  • Cut the bacon into small pieces and cook over medium heat until the bacon is fully rendered and crispy.
  • Add the onions and saute with bacon until transparent.
  • Lightly spray a slow cooker with cooking spray and add green beans. and pepper and stir making sure the bacon drippings are getting mixed in well.
  • Add bacon and onion mixture followed by the diced potatoes.
  • Add chicken broth, salt and pepper to taste. I frequently don't even add salt because the bacon has so much already.
  • Cover and cook on low heat for 6 to 8 hours or high heat for 3 to 4 hours or until beans reach your desired level of tenderness.
  • Add salt and pepper to taste. Serve immediately.

I found and made a wonderful lentil chili recipe on the web but when I wanted to make it again I couldn't find it. This is my attempt to recreate it. It is a substantial chili that your guests might not realise has no meat in it (I do eat meat but not every day). Vary the garlic and chili to your taste - I just happened to have some harissa to hand. Cumin gives a nice warm note. It is one of those "even better next day" dishes. This makes quite a lot but I do have quite a large slow cooker. If you didn't have a slow cooker I guess you could simmer on the hob for 90mins or so?

2 large onions, diced
2 large carrots, peeled and diced
2 celery ribs, diced
1 tablespoon oil
3 garlic cloves, finely chopped
1 1/2 cups green lentils
3 small red chilies
1 teaspoon harissa
1 teaspoon ground cumin
2 (400 g) cans chopped tomatoes with juice
500 ml vegetable stock
2 (400 g) cans red kidney beans, rinsed and drained
2 tablespoons concentrated tomato paste
salt
ground black pepper

Steps:

  • Heat oil in a large skillet and gently fry the onions, celery and carrot until soft (~ 8mins).
  • Add the garlic, cumin, harissa and finely chopped fresh chili. Fry for a minute.
  • Add the lentils, chopped tomatoes, tomato paste and stock and bring to simmer.
  • Transfer to slow cooker.
  • Cook on Low for 6-8 hours.
  • Add kidney beans for the last half hour, tasting and adding salt and pepper to your taste then.

  • Pull or cut off the ends of the green beans. Rinse the beans and set aside.

6 slices bacon, sliced crosswise into 1/2-inch pieces
1 onion, sliced lengthwise
3 cloves garlic, minced
¼ cup tomato sauce
2 pounds fresh green beans, trimmed
3 cups chicken broth
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Place saucepan over medium heat; cook and stir bacon in the hot pan until almost crisp, about 6 minutes. Add onion; cook until browned bits of food on the bottom of the pan have dissolved in the onion's juices and onion is soft and golden brown, about 5 minutes. Stir in garlic and tomato sauce. Cook until garlic has softened, about 1 more minute.
  • Place green beans into a skillet and pour in chicken broth. Raise heat to high, add salt, black pepper, and cayenne pepper to beans, and bring to a simmer. Beans will begin to soften. Turn heat to medium-low and simmer for 1 1/2 hours. Stir occasionally. Add more broth or water if mixture seems dry.
  • Adjust levels of salt, black pepper, and cayenne pepper to taste. Cook until beans are soft and tender, about 30 more minutes. Transfer beans and some of the pan juices to a deep serving platter.

Why make canned green beans when these are so easy and taste just like the restaurants. Make one batch and they are just as good left over. There is one thing I'm always requested to make at Thanksgiving, and this is it. I also like to cook these over a campfire.. either way works. Personally, we like these with amount of pepper as listed, but your tastes may differ. You may have to experiment with the amount of salt & pepper. You can try fresh bacon, but I find that it contains too much grease and not a lot of flavor, The bagged pre-cooked bacon pieces (like you would use for salads) works great.

Bring to the boil, scrape up any browned bits using a wooden spoon, and cook until the liquid is reduced by about a third – it should be a thick, rich onion gravy. Stir in the reserved harissa and the chopped coriander. Serve the lamb with the onion gravy.
