CRAB AND SHRIMP AU GRATIN DIP



Crab and Shrimp Au Gratin Dip image

I love this served as a dip with toasted bread rounds or as my mother's generation would say "toast points". Or, serve for lunch, brunch, or dinner with a simple green salad and hot French bread. Cheesy, warm and a bit spicy! Serve with a sparkling wine for a really good time.

1 pint half-and-half
1 -2 tablespoon fresh basil
1 tablespoon fresh thyme
kosher salt
fresh ground black pepper
1/2-1 teaspoon cayenne (optional)
1 cup green onion, chopped
1 cup fresh parsley, chopped
1 lb shrimp, peeled
1 lb crabmeat
2 cups sharp cheddar cheese, grated

Steps:

  • Heat the cream in a heavy saucepan.
  • Add the herbs, salt and pepper, green onions, and parsley.
  • Stir and simmer until thickened, about 8 minutes.
  • Stir in the shrimp and cook until just turning pink, about 4 minutes.
  • Remove from the heat and stir in half the cheese until that melts then add the crabmeat very carefully.
  • Pour into an oven proof dish and top with the remaining cheese and pop under the broiler until the cheese bubbles and turns golden.
  • Serve!

1 (16 ounce) bag frozen chopped spinach
1/2 cup butter
1 lb lump crabmeat
1 tablespoon all-purpose flour
4 ounces monterey jack cheese, cubed
4 ounces Philadelphia Cream Cheese, cubed
3/4 cup half-and-half
1 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon ground cayenne pepper
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Microwave spinach according to package directions.
  • Drain liquid and set aside.
  • Melt butter in medium skillet.
  • Add crab meat and saute for 3 minutes on medium heat being careful not to break up crab meat too much.
  • Remove crab meat, leaving liquid in skillet.
  • In same skillet, stir in flour and cook on low heat until well blended.
  • Add Monterey Jack cheese and cream cheese, stirring on low heat until completely melted.
  • Add Half and Half and seasonings, stirring continuously on medium heat until mixture begins to boil.
  • Remove from heat immediately.
  • Add spinach and crab meat and carefully fold into sauce.
  • Pour into a 9x9 shallow casserole dish or 6 individual ramekins.
  • Sprinikle shredded cheese on top and bake for 10 minutes or until is melted.

This is such a good dish. I would order this every time we went to Don's Seafood Hut in Lafayette....still do when I go home to visit. I have tried many recipes, and this is the closest I can come to theirs. This is a collaboration of many different recipes I have tried.

1 lb lump crabmeat
3 1/2 cups hot whipping cream
1/4 lb butter
1 ounce dry white wine
1/4 cup onion, grated
1 tablespoon lemon juice
1/4 teaspoon nutmeg
1 dash hot sauce
1 1/2 cups cheddar cheese, grated
salt and black pepper
1 tablespoon garlic, minced
3 tablespoons flour
parsley, chopped for garnish

Steps:

  • Preheat oven to 375ºF.
  • In a medium heavy bottomed saucepan, melt the butter over medium heat.
  • Add the onions and garlic; sauté for 3-5 min or until vegetables are wilted. Be careful not to brown.
  • Sprinkle in the flour, blending well into the mixture.
  • Using a wire whisk, add the hot cream into the saucepan, stirring constantly until thick cream sauce is achieved.
  • Reduce heat to a simmer.
  • Add the white wine, lemon juice, nutmeg, and hot sauce, stir to combine.
  • Sprinkle in half of the Cheddar cheese, stirring the mixture constantly.
  • Season with salt and pepper to taste. If mixture becomes too thick, add a small amount of hot water or whipping cream.
  • Place equal parts of the crabmeat in the bottom of 6 au gratin dishes, top with sauce-enough to cover and sprinkle with remaining cheese.
  • Bake for 10 min or until cheese is bubbly.
  • OR.
  • Spread crabmeat on the bottom of an 8-inch baking dish, top with sauce, and sprinkle remaining cheese on top.
  • Bake for 30 min or until cheese is bubbly and melted.

2 tablespoons plus 1 teaspoon butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon paprika
1/2 cup half-and-half cream
1/2 cup milk
1/4 cup white wine or chicken broth
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed or 2/3 cup chopped imitation crabmeat
1 can (4 ounces) mushroom stems and pieces, drained and chopped
1-1/2 teaspoons minced chives
1/2 cup shredded cheddar cheese
1 tablespoon dry bread crumbs
Assorted crackers

Steps:

  • In a large saucepan, melt 2 tablespoons butter. Stir in the flour, salt and paprika until smooth. Gradually add the cream, milk and wine. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the crab, mushrooms and chives; heat through. Stir in cheese just until melted., Transfer to a greased shallow 1-qt. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over crab mixture. Bake, uncovered, at 400° for 10-15 minutes or until bubbly. Let stand for 5 minutes. Serve with crackers.

2 egg yolks
12 fluid ounces heavy cream
¼ cup butter
1 large yellow onion, minced
1 stalk celery, minced
1 ½ teaspoons salt
½ teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon Creole seasoning
¼ cup all-purpose flour
½ cup shredded Cheddar cheese
½ cup shredded American cheese
1 pound cooked crabmeat
1 cup shredded sharp Cheddar cheese
1 bunch green onions

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x9 inch baking dish. In a bowl, whip together the egg yolks and heavy cream.
  • Melt the butter in a large saucepan over medium heat. Saute the onion and celery about 5 minutes. Season with salt, cayenne pepper, garlic powder, and Creole seasoning. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally, until very tender.
  • Mix the flour into the saucepan, and cook and stir continuously for 5 minutes. Mix in the egg yolk mixture. Stir in the 1/2 cup Cheddar cheese and American cheese until melted. Remove from heat and fold in the crabmeat. Transfer the mixture to the prepared baking dish.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Remove from heat and top with the sharp Cheddar cheese and green onions. Allow the cheese to melt before serving.

CRAB DIP GRATIN

This is a very rich crab dip which goes over well at cocktail parties. I like to serve it with a nice mild cracker, such as a Bremner Wafer, but it also goes well with small garlic toast rounds, or toast points if you want to go old school. I use either Noilly Prat or Dolin vermouth for the vermouth in this recipe. If you don't want to use vermouth you could just use a dry white wine instead. Do not use the "whipped" or "soft" type of cream cheese which comes in tubs. You need the real cream cheese which comes in a brick for this recipe. Also, please use best quality parmesan here, not the stuff in the green shaker can. This recipe can be doubled or even tripled.

6 tablespoons unsalted butter
1/2 cup shallot, finely minced
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 garlic clove, pureed
2 tablespoons fresh lemon juice
1 cup dry vermouth
1 lb cream cheese
1 cup grated gruyere cheese
1/2 cup grated parmesan cheese
1 lb claw crabmeat
1/4 cup half-and-half
1/4 teaspoon Tabasco sauce
2 tablespoons chives, minced

Steps:

  • Preheat the oven to 350º.
  • Feel through the crab meat to make sure there aren't any remaining bits of shell still attached.
  • Melt the butter in a 2 quart, heavy-bottomed pan. Add the shallots, cayenne and pepper and sauté over medium heat for 5 minutes. Add the garlic and sauté until fragrant - only about 30 seconds.
  • Pour the dry vermouth and the lemon juice into the pan, and raise the heat to medium-high, stirring and scraping the bottom of the pan to deglaze it. Cook, uncovered, over medium-high heat for 5 minutes.
  • Lower the heat to medium-low. Cut the cream cheese into large chunks (about 2 tablespoons each), and stir them into the pan, stirring well to make sure the cheese melts and is well combined with the other ingredients.
  • Once all the cream cheese is melted, add the Gruyere and Parmesan cheeses. Stir well until they are melted and combined with the rest of the ingredients.
  • Stir in the crab meat, half and half, and Tabasco, mixing to combine the ingredients well.
  • Taste the dip - the cheeses add a fair amount of salt, so I don't usually add any more. But if you like you could add some salt at this point.
  • Bake at 350º for 30 minutes. Garnish with chives and serve with crackers or toast rounds.
