Steps:
- Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients except buns.
- Cover and cook over low heat 10 to 15 minutes or just until vegetables are tender. Fill buns with mixture.

SLOPPY JOES - BETTY'S STYLE
There are so many sloppy joe recipes out there. So many great ones! But, I always go back to the way my mom (Betty) made them. These are just your simple, old school bbqs--nothing secret or creative here. But, oh, so good. My son doesn't like any other kind of sloppy joe, so this is how we do it. Now, you can see in the pic that I don't dice my peppers & onions really, really fine. If your family is not veggie lovers, then grate those babies up & they'll never know they're in there. Sharing in case anyone wants a basic recipe, and these go great w/ the Aldine Hotel Baked Beans!

Steps:
- Salt your onions & peppers & get them sauteeing in a Dutch Oven or large pan. You want them to get softened. I don't add oil or butter to the pan.
- In separate frying pan, get your ground chuck cooking up. I add salt & the worcestershire sauce @ this point. When the onions & peppers are done, remove them from the Dutch Oven & set aside. Now, take a slotted spoon & transfer the ground chuck to the Dutch Oven, leaving all that grease or juice behind in the old fry pan.
- Really get your ground chuck sizzling now. Mama Betty always told me the good flavor came from getting your meat "really brown." I add more worcestershire sauce & some ground black pepper. You really shouldn't have any grease to drain @ this point & the meat should be getting nice & brown. Add a few sprinkles of hamburger seasoning, garlic powder & the celery seed.
- Mix the ketchup, vinegar, mustard, liquid smoke & sugar in a bowl. When the beef is browned to your liking, pour this sauce overtop of it in the Dutch Oven & stir well. I then transfer everything to a crockpot & just keep it on warm. It gets really nice & moist that way, but Mama Betty always just cooked it low on the stove for about 45 minutes.
- If you forget to add an ingredient as you're going, don't spazz out. Just go back & add it whenever you remember. (They're called SLOPPY Joes, not PERFECTLY NEAT Joes.) :) Plus, you will want to taste it throughout to suit your taste buds. I always salt the veggies & the meat, but then I don't add more salt unless I really think it needs it at the end. Black pepper -- I'm generous w/ that. Load this onto hamburger buns & enjoy!
THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
