BATATA SLATA -- MOROCCAN POTATO SALAD

This dish takes a slightly different turn depending upon the cook. Some, like me prefer more lemon or vinegar. Some only use vinegar or lemon due to finances and can't interchange though most of us do exchange them equally. In any case it is a wonderful potato salad that is a bit different than usual. In summer I use the tomato and out of summer I do not. Basically if I feel like adding the tomato I do and if I don't, then I don't. This is easy to make as most ingredients are already home and we often serve this with our fall and winter soups and crusty baguette. c.2005

5 large potatoes
4 tablespoons fresh flat leaf parsley, finely chopped
1 fresh tomato, grated
1/2 cup sweet onion, chopped
1 fresh lemon
2 -4 tablespoons vegetable oil
1/2 teaspoon cooking salt, to season potatoes

Steps:

  • You want good waxy boiling potatoes for this. The cooking salt is for seasoning and cooking the potatoes inches The 1 teaspoons of salt listed is for after potatoes are cooked and is only approximate; salt to taste.
  • Peel the potatoes and cut into 1-inch chunks.
  • Boil potatoes in salted water until cooked through and not mushy.
  • Drain cooked potatoes and allow to cool though still quite warm.
  • Add remaining ingredients and refrigerate 6 hours or overnight is best. The salt to season is your personal choice.
  • The amount of lemon juice or vinegar and oil will vary according to your potatoes, so season with these accordingly. This salad should be more tangy than oily. At times, 2-4 tablespoons of mayonnaise is added this too is authentic. This depends on the mood of the cook/consumers.
  • To make this into another very popular salad; batata and zrodia slata, simply add 3 cooked carrots cut into approximately 4mm coins. Season accordingly. You will notice the lack of use of black pepper in this dish. I have not to date had a batata or a batata and zrodia slata which contained black pepper.

Slata Tunisiya is very popular in mediterranean Tunisia. The ingredients are local to Tunisia, and the quality is excellent.

100 g tuna packed in oil
250 g tomatoes
250 g green peppers
100 g onions
100 g feta cheese
50 g green olives
3 tablespoons mint leaves
1 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon salt
8 -10 lettuce leaves
4 radishes
2 -4 hard-boiled eggs
1 tomatoes

Steps:

  • Take the seeds out of the tomatoes and green peppers, and dice them so they are all the same size. Cut the onions into quarters, then into very thin slices. Salt it all.
  • Cut the mint into tiny pieces, add this to the mix, then add the lemon juice. Mix it all up.
  • Put this mix in the middle of a large serving plate or platter. Garnish the plate with lettuce leaves, arranged nicely around the edge of the plate. Garnish also with hard boiled egg, and radish. Slice the tomato at the end of the recipe, and arrange the slices around the edge of the plate, or quarter them, and similarly arrange them.
  • Arrange the tuna on top of the vegetables in the center of the plate. Add the feta and scatter the olives around the plate. Drizzle the whole dish with olive oil.
  • This should be eaten at room temperature.

This is a wonderful Moroccan salad for summer and especially in winter when you crave that salad crunch and the salad vegetables are all puny and pale! Keeps well and is also great for picnics. We prefer it served cold here, especially with hot winter warmers. Use salt should you think it needs it and to your liking. I use a very small pinch as I do not want to draw all of the water out of the carrots but I do want a bit of the juice. c.2005

1/4 cup chopped fresh flat leaf parsley
2 tablespoons chopped fresh coriander
1 garlic clove, finely minced
2 tablespoons lemon juice
1 tablespoon vegetable oil
1 tablespoon tomato paste
1/4 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon fresh ground black pepper
salt
1 lb carrot, shredded

Steps:

  • Combine the parsley coriander, and garlic until finely minced. Add the lemon juice, oil, tomato paste, and seasonings. Combine just until all the ingredients are well mixed. This is to be your dressing.
  • Place the mixture in a large - or ceramic bowl, top with the carrots, and toss until the carrots are coated. Cover the bowl and refrigerate for 4 to 6 hours or overnight.
  • Adjust the seasonings; salt, pepper and lemon and serve chilled or at room temperature.
  • The cooking time is the chilling time at a minimum.
