These Taco Sloppy Joes are the perfect mix of two dinnertime favorites! They are quick, easy to make, and a total crowd pleaser. Load them up with your favorite toppings and serve for an awesome dinner or for parties and tailgates!

1 pound lean ground beef
1 medium onion, (chopped)
2 cloves garlic, (minced)
1 packet taco seasoning
1 cup chunky salsa
1/4-1/2 cup water
buns, (for serving)
shredded Mexican blend cheese
shredded lettuce
diced tomato
diced avocado or guacamole
sour cream

Steps:

  • Brown ground, chopped onion, and garlic in a large skillet over medium high heat. Drain grease and add the taco seasoning and salsa.
  • Reduce heat to medium low and cook for about 5 more minutes until mixture has thickened and is heated through. Add up to 1/2 cup of water to achieve desired consistency. Serve over hamburgers buns and add desired toppings such as shredded cheese, shredded lettuce, diced tomato, avocado, guacamole, or sour cream. Enjoy!

1 small red onion, thinly sliced
6 tablespoons apple cider vinegar
Kosher salt
3 cups coleslaw mix
2 dill pickle spears, chopped
1 teaspoon vegetable oil
1 pound lean ground beef (90/10)
1 tablespoon taco seasoning mix
3/4 cup ketchup
1 tablespoon light brown sugar
8 soft flour tortilla bowls
4 ounces pepper jack cheese, grated (about 1 cup)

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the onion, 2 tablespoons of the vinegar and 1/4 teaspoon salt in a small bowl and toss to coat; set aside.
  • Combine the coleslaw, pickles, 3 tablespoons of the vinegar and 1/4 teaspoon salt in a medium bowl and toss to coat; set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the beef and cook, stirring frequently, until beginning to brown, about 4 minutes. Stir in the taco seasoning and 1/2 teaspoon salt and continue to cook until the meat is cooked through, 2 minutes more. Reduce the heat to low, stir in the ketchup, sugar, 1/2 cup water and remaining 1 tablespoon vinegar and simmer, stirring occasionally, until the sauce is slightly thickened, about 8 minutes.
  • Meanwhile, put the tortilla bowls on a baking sheet and sprinkle with the pepper jack. Bake until the pepper jack is melted and the tortilla bowls are slightly golden in spots, about 5 minutes.
  • Drain the liquid from both the coleslaw and onions. Divide the meat among the tortilla bowls and top with the coleslaw and onions.

3 tablespoons oil or other fat
2 pounds ground meat of your choice, such as turkey, lamb, pork, beef, chicken, etc.
1 teaspoon cayenne or smoked paprika
1/2 teaspoon ground cumin
Salt and pepper
1/2 cup chopped onion (about 1 small)
2 cloves garlic, minced
1 cup tomato product of your choice, such as sauce, crushed, diced, etc.
1 cup liquid of your choice, such as water, stock, beer, etc.
1/4 cup mustard
1/4 cup brown sugar, optional
6 to 8 tortillas or buns
Optional toppers: diced avocado, chopped tomatoes, fresh cilantro leaves, lime wedges, sliced radishes, shaved cabbage, sliced jalapenos

Steps:

  • Heat a large pan over medium heat and add the oil. When hot, add the meat, cayenne, cumin and some salt and pepper. Cook, without stirring, until the meat is browned on the bottom, about 5 minutes. Break it up with a wooden spoon, then add the onions and garlic and cook for 2 more minutes.
  • Add the tomato, liquid, mustard and sugar, if using, to the pan and bring to a simmer; simmer for 5 minutes.
  • Toast the tortillas or buns. Serve the sloppy joe mixture on the tortillas or buns and top with your favorite toppers.

1 (4 5/8 ounce) box taco shells
1 (15 1/2 ounce) can sloppy joe sandwich sauce
1 small red bell pepper, chopped
1 (11 ounce) can sweet whole kernel corn, drained
1 (2 1/4 ounce) can sliced olives, drained
1 cup romaine leaf, thinly sliced
1/2 cup shredded colby-monterey jack cheese

Steps:

  • Heat oven to 350*.
  • In a 10 inch skillet, cook ground beef over medium high heat 5 to 7 minutes, stirring frequently, until cooked through; drain.
  • Meanwhile, heat taco shells as directed on box.
  • Stir sloppy joe sauce, bell pepper and corn into ground beef. Cook 2 to 3 minutes longer, stirring occasionally, until mixture is hot and bubbly.
  • Spoon about 1/4 cup beef mixture into each warmed taco shell; top with olives, lettuce and cheese.

  • Heat oil in a large saute pan over medium-high heat. Add ground beef and cook until browned, breaking up the beef with a spoon and stirring occasionally. Drain off any excess fat and discard it.
  • Return pan to the heat, and add the onion, red bell pepper and garlic to the ground beef. Continue sauteing for about 5 minutes, or until the onion is soft and translucent, stirring occasionally.
  • While the veggies are sauteing, whisk together the tomato sauce, brown sugar, worcestershire, and chili powder until combined. Once the veggies are cooked, add the tomato sauce mixture to the ground beef and stir until combined. Continue cooking until the mixture reaches a simmer, then reduce heat to medium-low and simmer for 5 minutes. Season with salt and pepper, then remove from heat.
  • To assemble the tacos, place the ground beef filling in the taco shells and top with your desired toppings. Serve immediately.
