CHEESEBURGER MEATLOAF

Number Of Ingredients 14

Nonstick cooking spray, for the pan
6 slices Texas toast, cubed
1/2 cup milk
2 pounds ground beef
6 strips crisp cooked bacon, chopped
2 large eggs
2 red onions; 1 finely chopped and 1 thinly sliced
1 cup plus 2 tablespoons ketchup
1/4 cup plus 1 tablespoon mustard
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces Cheddar, cut into small cubes, plus 1 cup grated Cheddar
1/4 cup grated yellow onion (from about 1/2 onion)
Dill pickle chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
  • Mix together the bread and milk in a bowl and set aside.
  • Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
  • Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
  • Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
  • Slice and serve with the sliced red onions and dill pickle chips.

TARRAGON MEATLOAF

Everyone has a different idea of how meatloaf should taste. I am always looking for ways to revise and improve my recipe. The sour cream imparts extra moisture, even if you overcook it a little. The herbs add a fresh taste. If you have time, grind your own beef, using brisket and chuck cuts, and your own pork, using shoulder cuts.

Number Of Ingredients 15

1 pound ground beef
3/4 pound ground pork
1 teaspoon hot paprika
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 small yellow onions, peeled and minced (should equal roughly 1 cup)
2 cloves garlic, peeled and minced
1 cup bread crumbs
2/3 cup ketchup
1 cup sour cream
1 small bunch flat-leaf parsley, stemmed, washed, dried and chopped, 1/4 cup total
1 small bunch tarragon, stemmed, washed, dried and chopped, 1/4 cup total
3 eggs, lightly beaten
1 teaspoon vegetable oil
Additional ketchup for brushing, if desired

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, mix the beef and pork and gently knead them together with your hands. Add the paprika, salt and pepper. Add the rest of the ingredients. Mix to blend.
  • The taste test: Heat a small saucepan and add the vegetable oil. When the oil begins to smoke, lower the heat and add a small piece of the mixture. Cook 1 to 2 minutes on each side. Remove from the pan and taste. Check seasoning. If too moist, add more bread crumbs. If too dry, add an extra egg.
  • Mold the meat into a loaf and place it in the center of a baking sheet lined with parchment paper. Using a pan without high edges will yield a meatloaf with a crust. Cook, undisturbed, for 15 minutes. Brush it with additional ketchup and lower the oven temperature to 350 degrees F.
  • Bake until the meat is firm when touched or when it has an internal temperature of 150 degrees F, about 45 additional minutes. Remove from the oven, pour off any excess grease and allow it to "rest" for 10 to 15 minutes before serving. Brush again with ketchup, if desired.

Filled with spices and aromatics then topped with a spicy harissa ketchup glaze, this is not your average meatloaf.

2 tablespoons olive oil
1/2 medium red onion, diced
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 tablespoon harissa
1/2 pound 80/20 ground beef
1/2 pound ground lamb
3/4 cups plain dried breadcrumbs
1/2 cup whole milk
1 large egg, lightly beaten
1/4 cup chopped cilantro leaves
Small handful fresh mint leaves, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Line a small baking sheet with parchment paper.
  • Heat the oil in a medium nonstick skillet over medium-high heat. Add the onions, season with salt and cook, stirring occasionally, until softened, about 5 minutes.
  • Meanwhile, combine the ketchup and harissa in a small bowl.
  • Put the beef, lamb, breadcrumbs, milk, beaten egg, cilantro, mint, coriander, cumin and paprika in a large bowl. Season with salt and pepper.
  • Add the sauteed onions and using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf.
  • Pour the ketchup-harissa glaze on top of the meatloaf and spread all over until the sides and top are coated. Bake the meatloaf until the edges have browned, about 45 minutes.
  • Allow the meatloaf to rest for at least 15 minutes before cutting and serving.
