CARAMEL APPLE CRISP BITES

Caramel Apple Crisp Bites bring all of the flavors of fall into one delicious dessert. The apple cinnamon filling and the graham cracker crust will warm your heart and fill your tummy.

Number Of Ingredients 10

2 cup graham cracker crumbs ((I used store bought in a can. I find these to work the best))
12 tablespoons butter (melted)
1/2 cup powdered sugar
4 cups peeled, cored and chopped apples ((we used golden delicious))
1/3 cup sugar
1/4 cup brown sugar
2 1/4 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Caramel topping ((store bought!))

Steps:

  • Preheat oven to 350 degrees and grease mini muffin pan with non-stick butter spray
  • Melt butter
  • In a medium size bowl mix graham cracker crumbs, powdered sugar and butter with a spoon (slowly add the butter and evenly distribute)PLEASE SEE UPDATE/NOTE BELOW
  • Evenly distribute mixture to the 24 mini muffin cups. Press along the bottom and sides to make a "cup"
  • Bake for 5 minutes and let cool completely
  • Chop the apples into little pieces - I used a mini food processor. Don't puree, just finely chop
  • Mix apples, sugar, brown sugar, flour, cinnamon and nutmeg in a bowl
  • Bake in a baking dish for 15 minutes on 375 degrees, until apples are slightly softened
  • Scoop a teaspoon or so of the apple mix and place on top of the graham cracker crust cups (while still in the muffin pan) and sprinkle any extra graham cracker on top of the apples.
  • Bake for 5 minutes on 350 and let cool completely. Use a knife to loosen from pan and they should pop right out.
  • Drizzle with caramel topping

20 cinnamon graham cracker rectangles
1 1/2 cups packed brown sugar
1 1/4 cups butter or margarine
1 teaspoon vanilla
1 cup chopped walnuts
1 bag (2.5 oz) caramel-flavored apple chips, coarsely crushed
1/8 teaspoon kosher (coarse) salt

Steps:

  • Heat oven to 350°F. Line 17x12-inch half-sheet pan with foil. Arrange graham crackers in single layer in pan, slightly overlapping.
  • In 2-quart saucepan, heat brown sugar and butter to boiling over medium heat, stirring constantly, until smooth. Remove from heat; stir in vanilla. Pour mixture over graham crackers, spreading to coat evenly. Sprinkle with walnuts.
  • Bake 15 minutes. Reduce oven temperature to 325°F. Bake 10 minutes longer or until lightly browned and bubbly. Immediately sprinkle with apple chips and salt. Cool completely in pan on cooling rack. Refrigerate 30 minutes or until candy is hardened. Break into pieces. Store tightly covered at room temperature.

Here's what you need: saltines, butter, brown sugar, chocolate chips, chopped pecan

1 tube saltines, 40 crackers +
1 cup butter, 2 sticks, either salted or unsalted; do not use margarine
1 ⅛ cups brown sugar, firmly packed, we prefer light
1 bag chocolate chips, we like semi-sweet
½ cup chopped pecan, toasted, or toasted chopped almond

Steps:

  • Preheat oven to 350°F (175°C) degrees.
  • Line cookie sheet with foil & spray with non-stick cooking spray. Line crackers end to end on sheet, breaking crackers to fit the end if necessary.
  • In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling - then boil for 3 minutes (set timer).
  • Pour over crackers, spread evenly working quickly.
  • Put sheet into oven - bake for 5 minutes.
  • Remove - pour chocolate chips over top - place a sheet of foil over and let melt for 3 minutes.
  • Spread melted chocolate over the top evenly. Add nuts to top - replace foil and refrigerate until set. (Can be frozen.)
  • Break up into pieces.
