SLOPPY ROAST BEEF PO' BOY
Steps:
- Cut 5 slits in the roast and stuff with the garlic cloves. Sprinkle with salt and pepper.
- Heat a Dutch oven over medium-high heat and add the oil. Sear the roast on all sides until a rich brown color. Add the hot water, bay leaves and bell pepper and bring to a boil. Cover, reduce the heat and simmer until the roast is very tender, about 3 hours. During cooking, you want to make sure you keep the level of liquid that you started with. You may have to add up to another 1 1/2 cups water. Do not let the liquid cook out.
- Transfer the roast to a cutting board to rest. Discard the bay leaves and bell pepper from the pot. Sprinkle in the flour and cook, whisking, until thickened. You may need to add more flour until you reach the desired thickness of gravy. Be careful not to add too much, since it will thicken faster than you may expect. Season with salt and pepper.
- Slice the bread down the center and warm slightly in the oven. Thinly slice the roast. Spoon the gravy over the cut sides of the bread and spread with some mayonnaise. Load the bottom half with sliced beef and top with lettuce, tomatoes and pickles. Cover with the top half of the bread. Cut into 6 pieces and wrap with butcher paper or parchment paper.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
SLOPPY JOE PO' BOYS
I love sloppy Joes and po' boys so I had an idea to bring them together in one sandwich. The key to a po' boy is the New Orleans French baguette-I love the airy, chewy texture of that bread with the savory sloppy Joe filling. Crispy fried onions add a great crunch similar to what you'd get in a classic fried seafood po' boy.

- Heat a 9- to 11-inch skillet over high heat until hot, 30 seconds to 1 minute. Pour in the olive oil, wait until you see white smoke then add the beef. Press the beef into a flat disc with a spatula and cook undisturbed until brown, 2 to 3 minutes. Add the onions and garlic and cook, stirring occasionally, until the beef is brown all over. Start to break up the beef into small pieces with a wooden spoon. Stir and fold and continue to cook until the onion is translucent and the beef is browned on the outside but rare in the middle, 3 to 5 minutes.
- Add the ketchup, brown sugar, Worcestershire, mustard and soy sauce; cook and fold into the beef until mixed well and warmed through, about 2 minutes. Season with salt and pepper. Taste and adjust the seasoning, if necessary. If you feel the sauce is too thick, stir in a little chicken stock to thin it out. Remove from heat and prepare to build the po' boys.
- Pop the baguettes in a toaster oven until toasted, 1 to 2 minutes. Alternatively, preheat the oven to 350 degrees F and bake the baguettes on a baking sheet until toasted, 2 to 3 minutes.
- Remove and carefully cut each baguette in half crosswise then split them open lengthwise. Spread the mayo evenly across all the halves.
- Divide the sloppy Joe filling evenly among the bun bottoms. Top with cheese, tomato, lettuce and crispy onions. Add a few shots of hot sauce, if you like. Close the po' boys and enjoy!

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened.
