THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

- Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
- In 10-inch skillet, cook beef, salt, pepper, onion and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in 3 tablespoons ketchup. Spread in pie plate.
- In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into pie plate.
- Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Top each serving with additional ketchup.

- Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, corn, water and sloppy joe seasoning; cook over medium heat until bubbly. Reduce heat and simmer for 5 minutes; remove from heat and set aside. , Separate biscuits; flatten each to a 3-1/2-in. circle. Place milk and cornmeal in separate shallow bowls; dip both sides into milk and then into cornmeal. - Heat oven to 425 degrees. Mix together hash brown shreds and melted butter. Press into bottom and sides of 9" glass pie plate. Bake at 425 degrees for 20 minutes. Meanwhile in medium skillet mix sloppy joe sauce and drained corn, heat over medium heat until bubbly, set aside. Remove hash brown crust from oven and reduce oven temperature to 375 degrees. Sprinkle crust with 1/2 cup of the shredded cheese. Spoon sloppy joe mixture into crust. Bake filled crust 15-20 minutes until heated through. Remove from oven and sprinkle with remaining 1/2 cup cheese and let stand 5 minutes.

- Preheat oven to 400 degrees.
- In large deep frying pan, add lean ground beef and sauté over medium heat breaking up as you go. When enough grease releases, add potatoes & onions. Sauté until meat is done and potatoes are lightly browned. Drain grease well.
- Stir in cans of Manwich and cheddar cheese. Set aside to cool.
- Line 9" pie plate with pie pastry. Fill prepared pie dish with cooled filling. Top with second pie sheet in any way desired. Tuck top edge under bottom edge and flute to seal. If not doing a lattice top, poke top several times with a knife to vent.
- Pop into 400 degree oven and bake for 15 minutes. Reduce heat to 350 degrees and continue baking for 35-40 minutes until crust is golden brown and pie is just starting to bubble. Let rest for at least 20 minutes before serving.

- Heat a large skillet over medium heat. Cook and stir ground beef and onion in the hot skillet until browned and crumbly, 7 to 8 minutes. Add bell pepper and garlic; cook and stir until tender, 2 to 3 more minutes.
- Add 1 cup beef broth, ketchup, mustard, brown sugar, salt, pepper, Worcestershire sauce, and cayenne pepper; bring to a simmer. Add remaining 1 cup broth and reduce heat to low. Simmer until mixture becomes very thick, 30 to 45 minutes. Taste and adjust for salt, pepper, and cayenne as needed.

There are lots of variations to suit your family's taste. I usually use a 6 oz can of tomato sauce and a can of water to cut down on sugar as I have a diabetic husband. Add your favorite vegetables on top for that "total taco appearance".

- Preheat the oven to 375 degrees. Begin browning the meat in a large saute pan on med-high heat. Add diced peppers after meat has been cooking for several minutes.
