- Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
- Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
- In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

- Brown ground beef over medium heat in a flat bottomed skilled.
- When the meat is pink and slightly under-cooked, add the onion and celery; finish browning the ground beef.
- Drain off grease if needed.
- Mix remaining ingredients and add to skillet.
- Cook for 20-25 minutes over low heat until sauce thickens, stirring often.

- Preheat oven to 375* F. You will need an 8x8 inch., oven safe, casserole dish.
- In a medium skillet, on medium-high heat, add the olive oil and ground beef. Cook the meat for 5 minutes, or until browned and cooked through. Transfer the cooked ground beef to a paper towel lined plate and drain any excess fat from the skillet. Make sure to leave 1 tablespoon of fat in the pan to saute the vegetables in.
- To the same skillet that you cooked the ground beef in, after the excess fat has been drained off, add the chopped onions and red bell pepper. Saute for 5 minutes or until the vegetables are tender.
- To the vegetables add the packet of sloppy joe seasoning, beef broth, ketchup, tomato puree, tomato paste, worcestershire sauce, salt and black pepper. Stir to combine. Add the cooked ground beef back to the skillet and simmer the mixture on medium heat for 5 minutes. Turn off the heat to the skillet.
- Stir in 1 cup of the shredded colby jack cheese. Transfer the sloppy joe dip mixture to the 8x8 casserole dish. Top the mixture with the remaining 1 cup shredded colby jack cheese.
- Bake for 20 minutes or until the cheese is melted and the dip is bubbly and hot.

- Place ground beef, bell pepper, onion, garlic, flour, brown sugar, salt, pepper, and cayenne pepper in a heavy pot.
- Place pot over medium-high heat. Break up and stir mixture as it heats. Cook and stir until most of the moisture has evaporated and mixture is crumbly and begins to brown, about 15 minutes. Stir in chicken broth, ketchup, mustard, and Worcestershire sauce. Mix well and bring mixture to a simmer. Reduce heat to medium. Cook, stirring occasionally, until mixture is thick, about 45 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Transfer mixture to oven-proof sauce pan. Top with 1/2 of the shredded cheese. Poke cheese down into the dip with a fork, stirring lightly. Top with remaining cheese.
- Place pan under broiler; broil until cheese is browned, and mixture is hot and bubbly, about 5 minutes.
