BALSAMIC BASIL PASTA SALAD

Balsamic Basil Pasta Salad image

Balsamic Basil Pasta Salad is an delicious, healthy side dish perfect for any potluck, picnic or barbecue!

Provided by Stephanie

Time 25m

Number Of Ingredients 14

7 oz (about 2 1/4 cups) dry whole wheat rotini pasta or chickpea pasta if you're gluten-free, cooked (3 1/2 cups cooked pasta)
2 cups grape tomatoes, quartered
1 1/4 cups cucumber, chopped (I like to use an English cucumber for this)
1 1/2 cups orange bell pepper, chopped
1/2 cup red onion, chopped and soaked in ice water for a few minutes, then drained (this takes some of the bite out)
1 1/4 cup mild (or hot if ya like!) pickled banana pepper rings, drained and chopped
1 can (3.8 oz) sliced black olives, drained
1 (8 oz) block of mozzarella cheese, diced
1/2 cup fresh basil leaves, thinly sliced (or more if you like!)
1/4 cup + 2 Tbs balsamic vinegar
1/4 tsp garlic powder
1 tsp dijon or spicy brown mustard
pinch of salt and pepper
1/4 cup extra virgin olive oil

Steps:

  • Boil your pasta. While your pasta is cooking, make your dressing. Whisk together the vinegar, garlic powder, mustard, salt and pepper. While still whisking, drizzle in your olive oil. Once fully combined, set aside.
  • When the pasta is done cooking, drain well then add a few tablespoons of the dressing to the pasta to prevent sticking and refrigerate until cold in a large bowl - this makes about 13 cups so be sure to have a big enough bowl! (Hot Tip: Don't rinse your pasta in cold water after cooking, removing the outer starch can keep the dressing from sticking well to it!)
  • Add the remaining ingredients to the pasta (you may need to give the dressing another good whisking before adding if the oil has separated). You can serve this right away, but it's even better if it can have some time to marinate in the fridge! Once it's refrigerated, I like to let it sit on the counter for a few (the olive oil will thicken in the fridge and setting it out re-liquifies it) then give it a good stir before serving.

BALSAMIC VINEGAR DRESSING

Balsamic Vinegar Dressing image

A classic dressing that everyone should know! The "formula" is 1 part vinegar to 3 parts oil. Some people who like sharper dressing will use less oil. The better the quality of the vinegar and oil, the better the dressing!

Provided by Nagi | RecipeTin Eats

Time 2m

Number Of Ingredients 7

1/4 cup balsamic vinegar ((ordinary, not caramelised or syrupy))
3/4 cup extra virgin olive oil ((or less if you like sharper dressing))
Salt and pepper to taste
1 tbsp balsamic vinegar
3 tbsp extra virgin olive oil ((or less if you like sharper dressing))
Salt and pepper to taste
Honey or sugar (, to taste)

Steps:

  • Place ingredients in a jar and shake very well. Adjust salt and pepper to taste.
  • Keeps for 3 weeks on the counter (unless it is very hot where you are, store it in the fridge), assuming you use fresh olive oil. Do not keep for more than 4 weeks as high quality olive oil tends to lose flavour beyond 4 weeks after opening the bottle.

1 lb whole wheat penne pasta
1 thinly sliced onion
1 bag washed and drained spinach leaves
2 shredded carrots
1 medium lightly peeled & diced seedless cucumber
6 oz drained and cut in half Ciliegine Mozzarella
10 oz cut in half sweet cherry tomatoes
12 oz in oil, chopped drained and reserve oil roasted red peppers
1 bulb roasted and cooled garlic
¼ cup chopped roasted red pepper
2 fresh lemon juice

  • Roast 1 bulb of garlic in a 400 degrees F oven.
  • Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact.
  • Using a knife, cut off ¼ to a ½ inch of the top of cloves, exposing the individual cloves of garlic.
  • Place the bulb cut side up on a piece of heavy-duty aluminum foil, drizzle with about 2 tbsp of olive oil making sure to cover each clove and then bring the sides of the foil up and seal all around.
  • Bake for about 30-35 minutes or until cloves are soft and caramel colored.

  • Make pasta according to box, cook to "al dente" about 12 minutes.
  • Drain the pasta and rinse with cold water to completely cool the pasta and stop the cooking process.
  • Turn out into a large bowl, add cucumber, tomatoes, onions, shredded carrots and roasted red peppers, add the spinach and the fresh mozzarella and toss lightly.
  • Mix all of the dressing ingredients together in a blender except the two oils, combine the two oils together and then slowly drizzle in the oil mixture while the blender is running and blend completely.
  • Pour dressing over pasta salad and toss well to coat.
  • Chill overnight to serve the next day this will allow the flavors to blend and will slightly wilt the spinach.
  • Serve along side grilled chicken, fish or as a light lunch with fresh crusty bread.

BALSAMIC VINAIGRETTE PASTA SALAD

Balsamic Vinaigrette Pasta Salad image

I have been working on this most of the summer. I am using a balsamic vinaigrette called Cheltam House. Most definitely a sweeter vinaigrette than most! I have never liked "dry" pasta salad--I prefer most pasta salads mayo-based, but I love this salad dressing and wanted to try it on something other than a lettuce salad. I also prefer more veggies than pasta, so adjust the pasta to your style. I also hate soggy cheese and tomatoes in any salad, so I only make enough to eat in one sitting.

Provided by kimbearly

Categories     Vegetable

Time 45m

Yield 6 serving(s)

Number Of Ingredients 9

1 (16 ounce) box pipettes pasta or 1 (16 ounce) box bow tie pasta
1 (8 ounce) bottle balsamic vinaigrette
2 cups chopped ham
2 large tomatoes, chopped and seeded
2 cups lightly steamed asparagus
1 cup chopped black olives
1/2 chopped yellow pepper
1 large carrot, shredded
2 cups shredded smoked gouda cheese

Steps:

  • Clean and chop all veggies.
  • Boil pasta till al dente.
  • Add any veggies that you prefer lightly cooked to boiling pasta in the last 3 minutes of boiling (mine would be asparagus and carrots).
  • Drain pasta/veggies and rinse in cold water to stop cooking.
  • Add all veggies to pasta and mix.
  • Add ham.
  • Pour balsamic vinaigrette onto the pasta and mix--you can use less than the whole bottle but I prefer mine "soupy".
  • Serve immediately with the Gouda sprinkled over the top.
