QUINOA BLUEBERRY MUFFINS (HEALTHY)

These easy to make, delicious healthy blueberry quinoa muffins are packed full of goodness and flavour, making a fantastic breakfast/brunch, snack or healthy lunchbox idea.

10 tablespoons cooked quinoa (4.23oz)
1⅕ cups blueberries (6.35oz, fresh or frozen)
2 cups less 2tsp all-purpose/plain flour (8.47oz)
2 teaspoons baking powder
½ teaspoon bicarbonate of soda
Pinch of salt
½ cup less 1tbsp sugar
1 large egg
⅓ cup+2tsp vegetable oil
1 cup+1tbsp milk
2 tablespoons lemon juice (plus zest of 2 lemons)

Steps:

  • Preheat the oven to 400 F/ 200 C/ gas mark 6. Lightly grease or line a muffin pan with 12 muffin cases.
  • In a large bowl combine the flour, baking powder, bicarbonate of soda and salt and stir well using a whisk. Set aside.
  • In another large bowl whisk together the egg, sugar, oil, quinoa, milk, lemon juice and zest until thoroughly combined.
  • Gently stir the blueberries into the dry mixture. Pour into the wet mixture and stir carefully just to combine (stop stirring when the dry ingredients are no longer visible).
  • Spoon equal amounts of the batter into the muffin cases and bake in the centre of the oven for 25 minutes.
  • Remove from the oven and leave in the pan for 5 minutes then transfer the muffins onto a cooling rack.

1 cup all-purpose flour
1 cup white sugar
2 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
1 cup rolled oats
½ cup chia seeds
1 cup orange juice
½ cup applesauce
½ cup cooking oil
2 eggs, beaten
2 cups blueberries
2 tablespoons brown sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 24 muffin cups or line with paper liners.
  • Sift flour, white sugar, baking powder, salt, and baking soda together in a large bowl; add oats and chia seeds.
  • Mix orange juice, applesauce, oil, and eggs together in a bowl; stir into flour mixture until batter is just combined. Fold blueberries into batter. Spoon batter into prepared muffin cups, filling 3/4-full.
  • Mix brown sugar and cinnamon together in a bowl; sprinkle over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 18 to 20 minutes.

3 cups all-purpose flour
2 ⅓ cups white sugar
1 ½ cups almond milk
1 cup vegetable oil
2 tablespoons vegetable oil
3 eggs, beaten
2 tablespoons chia seeds
2 ½ teaspoons almond extract
2 teaspoons vanilla extract
1 ½ teaspoons baking powder
1 ½ teaspoons salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease 2 muffin tins lightly with cooking spray.
  • Mix flour, sugar, almond milk, 1 cup plus 2 tablespoons vegetable oil, eggs, chia seeds, almond extract, vanilla extract, baking powder, and salt together in a large bowl. Scoop batter into the prepared muffin tins.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean and tops are light golden in color, about 40 minutes.

1-1/2 cups cooked quinoa (about 1/2 cup dry quinoa and cooked according to package directions)
1 cup whole wheat flour
1 cup all-purpose flour
3/4 cup brown sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
2 Tablespoon chia seeds
1 Ener-G egg (1-1/2 teaspoons Ener-G powder + 2 Tablespoons water)
1 cup non-diary milk (like almond or rice, use rice milk for nut-safe muffins)
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries

Steps:

  • Preheat oven to 350 degrees.
  • Prepare muffin tin (I used parchment paper liners, no need to oil the tin if using liners).
  • In a large bowl combine cooked quinoa with dry ingredients (flour through chia seeds)
  • In a small bowl, prepare Ener-G egg by mixing the dry Ener-G powder with 2 tablespoons water under very smooth. To this, add non-diary milk and vanilla. Mix to combine.
  • Add wet ingredients to dry ingredients and stir until just combined. Add blueberries and carefully fold these in.
  • Evenly divide batter into 12 muffin cups. Bake 22-25 minutes or until tester comes out clean.
