Steps:
- In a large cast iron skillet, add butter and bacon grease and begin to melt over medium heat.
- Add chopped onions and stir to coat onions with the butter and bacon grease well.
- Allow onions to cook for about 5-6 minutes, or until they begin to turn translucent.
- Add squash and remaining seasonings. Reduce heat to medium-low heat.
- Cover and cook for about 15 minutes, stirring frequently.
- You'll want to make sure your squash is cooked evenly throughout, so sample a piece to make sure it's cooked to the consistency that you like.
- Serve immediately and enjoy!

Steps:
- Slice the onions.
- Place a skillet over Medium heat on your stove top.
- Add the butter.
- Add the bacon grease.
- Add the onions. Stir and cook until slightly translucent, about 5 minutes.
- Wash and slice the yellow squash about ¼ inch thick.
- Add the squash to the skillet.
- Add the black pepper.
- Add the salt.
- Add the sugar.
- Stir gently to combine the ingredients.
- Cover the skillet. Reduce heat to Medium Low.
- Cook until squash are tender. About 10-15 minutes.
- Remove from heat. Serve warm.
- Enjoy!

SKILLET CROOKNECK SQUASH AND ONIONS
We. Love. Squash. Simple, with only 3 other ingredients, besides salt and pepper, this recipe sets off the delicious, slightly sweet flavor of crookneck or summer squash. Mom used to stew squash, but this vegetable releases a lot of water when it cooks, so I don't add any water. The long, slow cooking helps to release the natural sugars in the onion and the squash. You can add additional herbs or seasonings, if you like, or cook it for less time to make it firmer, but this is how we do it. Just squash.

- Heat a large skillet over medium heat. Once the skillet is heated, drizzle in a little olive oil, about 2 teaspoons.
- Add the sliced yellow squash and sliced onions to the skillet. Season with a couple of pinches of salt and a pinch of black pepper.

SAUTéED YELLOW SQUASH AND ZUCCHINI

- Heat the oil and butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until just softened, about 5 minutes. Add the garlic and cook, stirring occasionally, for 1 minute. Add the zucchini, squash, Italian seasoning and a generous pinch of salt. Cook, stirring occasionally, until the zucchini and squash are tender and beginning to brown in some spots, about 10 minutes. Season with salt and pepper. Serve warm.
STEWED SUMMER SQUASH AND ONIONS
This isn't a recipe as much as a method of cooking summer squash. I gave amounts but treat it more as a ratio than a rule- allow at least one squash per serving because it cooks down to a very small amount even though it looks like you are cooking a lot.

- Slice squash as thinly as possible- I use a mandoline to do this quickly.
- Melt butter in large skillet over medium heat.
- Add squash and onions and season then cover with water.
- Cook, stirring occasionally until water evaporates.
- Can be eaten at this point, but I like to cook it until it is almost brown, you just have to stir very frequently because it will stick pretty bad. Cooking it a long time will caramelize the vegetables and it becomes a sweet side dish. Warning- it isn't pretty, but it is tasty!
- Make this into a main dish by adding chunks of ham during cooking. Also delicious!
SQUASH SAUTEED WITH ONIONS
A QUICK and EASY vegetable to prepare! The onions give added flavor along with the garlic powder and this dish can be served with any meat.

- Prepare squash and place slices on a paper towel. Sprinkle with salt and allow to stand 10 minutes.
- Heat olive oil in a medium size skillet and saute chopped onions. Dip out and set aside.
- Pat squash slices with a paper towel to soak up beaded water drops.
- Add vegetable oil to skillet and heat to medium temperature. Add squash slices and saute. Sprinkle with garlic powder.
- Lift squash to serving dish and top with onion pieces.

- Heat vegetable oil in a large skillet over high heat until oil is hot; decrease heat to medium. Cook and stir onion and potatoes in the hot oil until potatoes are lightly browned and partially cooked, 15 to 20 minutes. Add squash, butter, paprika, black pepper, garlic powder, salt, and red pepper flakes; cook until potatoes are golden brown, 15 to 20 more minutes, turning occasionally.
