1 head of Romaine lettuce - chopped
4 cloves of garlic - chopped
19 oz. can of beans - drained
1/2 tsp. salt
1/2 tsp. black pepper
1/4 wedge of lemon - squeezed
2 -3 tablespoons - olive oil
1 1/2 cups of uncooked rice

Steps:

  • Prepare rice as directed Place 2 tablespoons of olive oil in a large frying pan. Add the garlic and the chopped Romaine. Cover and gently heat the pan for a few minutes until the Romaine is gently wilted. Add the beans and seasonings and toss. Plate the rice; add the Romaine, squeeze of lemon and toss.

Number Of Ingredients 14

1 large head romaine lettuce, cored and trimmed
8 cups cold water
1 1/4 teaspoons kosher salt
1/4 teaspoon baking soda
2 1/2 tablespoons peanut oil
3 cloves garlic, peeled and lightly smashed
1 tablespoon fermented black beans, washed twice and drained
2 teaspoons Shao-Hsing wine or dry sherry
2 teaspoons cornstarch
1 1/2 tablespoons oyster sauce
2 teaspoons soy sauce
1 teaspoon sugar
Pinch of white pepper
2 tablespoons vegetable broth (chicken broth may be substituted)

Steps:

  • To make the lettuce, separate the leaves from the stalks and cut each across into 2-inch pieces. Place the water, 1 teaspoon of salt and the baking soda in a large pot. Cover and bring to a boil over high heat. Add the lettuce stalks and stir for 5 seconds. Add the leaves and stir for 5 seconds more. Remove from heat, run cold water into the pot, drain well and pat dry. Set aside.
  • To make the sauce, stir together the wine and cornstarch in a small bowl. Stir in the oyster sauce, soy sauce, sugar, pepper and broth. Set aside.
  • Heat a wok or large heavy skillet over high heat for 30 seconds. Add the peanut oil and 1/4 teaspoon of salt and use a spatula to coat the pan with the oil. When a wisp of white smoke appears, add the garlic and the black beans. Stir until the garlic turns light brown, about 20 seconds. Add the lettuce and mix well, making sure the leaves are well coated and hot, about 1 1/2 minutes.
  • Make a well in the center of the pan, pushing the lettuce around the edge. Stir the sauce, pour it in the center of the pan and stir the sauce until it thickens and bubbles. Remove from heat and toss the lettuce with the sauce. Place in a heated dish and serve immediately, over cooked rice if desired.

I CAME UP with this recipe one day when I had nothing but burgers to cook on the grill and not enough of any one vegetable. It was so tasty we ate almost all of it and the little bit that was leftover I heated in the microwave the following day. It was still delicious!

3 tablespoons vegetable oil, divided
1 egg, lightly beaten
3/4 cup cut fresh green beans (1/2-inch pieces)
1/4 cup chopped onion
3/4 cup thinly sliced quartered zucchini
3/4 cup thinly sliced fresh mushrooms
1 garlic clove, minced
1-1/2 cups cooked long grain rice
2 tablespoons soy sauce

Steps:

  • In a small skillet, heat 1 tablespoon oil over medium-high heat. Add egg. As egg sets, lift edges, letting uncooked portion flow underneath. Remove egg and chop into small pieces; set aside., In the same skillet, saute beans and onion in remaining oil for 1-2 minutes. Add the zucchini, mushrooms and garlic; saute 1 minute longer. Add rice; cook and stir for 2-3 minutes or until beans are tender and rice is lightly browned. Stir in soy sauce. Return egg to the pan; heat through. Serve immediately.

Pinch of red-pepper flakes
2 heads romaine lettuce, trimmed and cut into 1-inch-wide strips (about 10 cups)

Steps:

  • Heat oil in a nonstick skillet over medium heat. Add garlic, celery, and red-pepper flakes; saute until celery is softened and golden, about 5 minutes.
  • Add lettuce, pressing it down to fit. Season with salt and pepper. Cover; cook, tossing occasionally, until lettuce is completely wilted and liquid has evaporated, 10 to 12 minutes.

1 head romaine lettuce, chopped
1 large carrot, grated
1 (7 ounce) can albacore tuna in water, drained and flaked
3 tablespoons olive oil
4 tablespoons balsamic vinegar
¼ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Combine the rice and water in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and the water has been absorbed.
  • In a medium bowl, toss together the romainee lettuce, carrot, and tuna. Pour the olive oil and vinegar over this mixture, and season with salt and pepper. Toss to coat. When the rice is done, cool for about 5 minutes, then toss with the salad. The warm rice will wilt the romaine lettuce slightly. Taste and adjust the amounts of vinegar and oil or salt and pepper if desired. Serve immediately. This does not keep well.

1/4 cup extra-virgin olive oil
About 1 1/4 teaspoons fine sea salt

Steps:

  • Rinse romaine halves, then shake off water and pat dry.
  • Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then add 3 romaine halves, cut sides down, and sprinkle with a rounded 1/4 teaspoon sea salt.
  • Cook, turning over once with tongs, until browned, about 2 minutes total, then cover and cook until just crisp-tender, 2 to 3 minutes more. Transfer to a platter.
