SESAME GINGER CHICKEN
This is a sweet and spicy chicken that you cant afford not to have. You can toss it with a bowl of noodles and stir-fried veggies, or serve it, chic style, on a bed of summer greens with a soy/sesame vinaigrette. The little black dress of the chicken breast set. (from The Girl Can't Cook by Cinda Chavich) Its summer and I'm finally out of school!!!! Hurray for me!! And with summer comes long days of doing nothing, but knowing me, the first day of vacations, I got myself into the kitchen since early in the morning and checked all the ingredients I had. And with the knowledge of which ingredients were available, the search for the perfect recipe began. I looked through various cookbooks and marked several recipes. The moment of decision came and I began to eliminate recipes. In the end this recipe was competing with a Tomato Lentil Soup. But fortunately, this recipe won. It was delicious!!!! When my mom came back from her class she found a clean house and a whole meal including dessert. I made some brown rice to go with the chicken, some garlic baby bok choi, and corn on the cob by my mom's request. The dessert was Strawberries with balsamic. I WOWed my mom. This chicken tastes like the chicken at my favourite restaurant: PF Chang's China Bistro. Please Try it, and I hope you like it.

Steps:
- For the chicken marinade:.
- In a mixing bowl, combine the chicken with the sesame oil, sugar, soy sauce and pepper. Toss to coat, cover, place in the refrigerator and let sit 1 hour.
- For the stir-fry:.
- Remove the chicken from the fridge. Add 1 cup cornstarch to a shallow baking dish and dredge each piece of chicken, shaking off any excess.
- Fill a Dutch oven or high-sided saute pan with enough oil to completely submerge the chicken pieces. Heat over high heat until glossy and the temperature reaches 375 degrees F. Deep fry the chicken until golden brown, about 3 minutes, adding your chicken in batches to avoid overcrowding and to keep your oil from dropping in temp too much. Remove to a paper towel-lined plate.
- In a large saute pan, heat 1 tablespoon oil over medium heat. Add the garlic and ginger and cook until golden brown and fragrant, about 30 seconds. Next, add the rice wine, hoisin, oyster sauce, soy sauce, honey and the chili sauces; bring to a simmer.
- In a glass measuring cup, mix the remaining 2 tablespoons cornstarch with 1/4 cup very cold water (make sure you water is cold to avoid lumps!), whisking until combined. Add the mixture to the sauce and simmer for an additional minute, until the sauce thickens. Adjust seasoning to taste.
- Add in the fried chicken and toss to coat with the sauce. Add the lemon zest and juice. Garnish with toasted sesame seeds and scallions.
- Serve warm over rice.

Steps:
- Combine flour, salt, and pepper; toss chicken with flour mixture to coat evenly.
- Heat a non-stick skillet then coat it with sesame oil; add garlic and chicken; fry until browned, stirring only infrequently; to keep chicken from sticking to skillet add a little broth as needed; place mushrooms on top of chicken and add 1/4 cup chicken broth; reduce heat to low, cover and simmer 10-12 minutes, adding chicken broth and stirring every few minutes as needed to keep chicken from drying and sticking to pan.
- At end of the 10-12 minutes braising time, stir in 1-3 tablespoons additional broth until sauce is preferred consistency; stir in Sesame Ginger dressing; serve over cooked rice; sprinkle each serving with toasted sesame seeds.
- NOTE: Sesame Ginger dressing may be found in the refrigerated salad dressing section of your grocery store ~ I found Litehouse brand Sesame Ginger Dressing & Sauce next to my store's fresh produce.

- Pat 6 chicken thighs dry with paper towels and season all over with salt. Rub only skin side of thighs with 1 Tbsp. oil.
- Transfer thighs skin side down to skillet and cook until enough fat is rendered to cover bottom of skillet, about 5 minutes. Once skin starts to brown, increase heat to medium. Rotate skillet to encourage even browning. Carefully lift up thighs to allow hot fat to run underneath. If thighs are stubborn and don’t want to release, let them go a bit longer.
