2 tablespoons butter
Extra-virgin olive oil
1 onion, diced
2 garlic cloves, minced
6 sprigs fresh thyme, leaves only
1/4 cup all-purpose flour
6 cups canned vegetable stock
2 cups heavy cream
2 Idaho potatoes, peeled and diced
6 ears corn
Salt and freshly ground black pepper
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Dust the vegetables with flour and stir to coat everything well. Pour in the vegetable stock and bring to a boil. Add the cream and the potatoes, bring to a boil and boil hard for about 7 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).
  • Cut the corn kernels off the cob and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes. Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

2 teaspoons unsalted butter
3 stalks celery, thinly sliced
2 bunches scallions, chopped
3 cups frozen diced potatoes
3 cups frozen corn
3 sprigs thyme
2 bay leaves
Kosher salt and freshly ground pepper
2 tablespoons all-purpose flour
1 quart low-fat milk
1 pound medium shrimp, peeled and deveined
Paprika, for sprinkling

Steps:

  • Melt the butter in a Dutch oven or large pot over medium-high heat. Stir in the celery, scallions, potatoes and corn. Add the thyme, bay leaves, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, 3 minutes. Stir in the flour until incorporated, about 2 minutes. Stir in the milk, then cover and bring to a boil. Uncover, reduce the heat to medium low and gently simmer until the vegetables are tender, about 6 minutes. Remove from the heat. Discard the thyme sprigs and bay leaves.
  • Transfer one-third of the mixture to a blender and puree until smooth, then return to the pot. Return to a simmer over medium-high heat. Stir in the shrimp and cook until opaque, about 4 minutes. Season with salt. If the soup is too thick, stir in up to 1 cup water. Divide among bowls and sprinkle with paprika.

1 pound fresh peeled and deveined shrimp

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels. Drain excess grease from the skillet.
  • Crumble 4 slices bacon into the skillet. Add onion, celery, garlic, and thyme; cook and stir over medium heat until soft, about 5 minutes.
  • Transfer bacon mixture to a large pot. Add corn and chicken broth. Bring soup to a boil; cook until flavors combine, about 5 minutes.
  • Pour 2 cups of soup into a blender. Cover and hold lid down; puree until smooth.
  • Return pureed soup to the pot. Stir in half-and-half, pepper, and salt. Bring to a boil. Stir in shrimp; cook until shrimp are opaque, 3 to 4 minutes.
  • Ladle soup into bowls. Crumble remaining 2 slices bacon on top.

¼ pound unsalted butter
1 medium onion, diced

1 cup chopped fresh cilantro

Steps:

  • Remove corn kernels from cobs and place in a bowl. Scrape 'milk' from cobs into bowl with the kernels. Reserve 1 cob.
  • Melt butter in a large saucepan over medium-low heat. Add onion, scallions, and garlic; cook until soft but not brown, about 3 minutes. Add corn kernels, corn milk, potatoes, and jalapeno. Cook, stirring frequently, for 10 minutes. Add milk, broth, and reserved cob. Simmer until potatoes are completely soft and soup is slightly thick, 15 to 20 minutes. Remove and discard cob.

4 slices turkey bacon, chopped
1 medium onion, chopped
1 medium green bell pepper, chopped

8 cups vegetable stock (or 8 cups water and 4 Tbsp stock powder) or 8 cups chicken stock (or 8 cups water and 4 Tbsp stock powder)
2 1/2 cups frozen corn kernels
1 (10 ounce) package frozen chopped spinach (thaw under cold water, no need to dry)
1/2 cup butter, 1 stick
6 cups whole milk
2 cups heavy cream
salt, to taste

2 tablespoons cornstarch
3 tablespoons cold water (optional)

Steps:

  • Over medium high heat, cook chopped bacon in olive oil until crisp, remove and set aside.
  • Saute onion, green pepper, garlic and dried peppers (if using) in left over oil until soft but not brown (3-5 minutes).
  • Reduce heat to medium, add flour and whisk to form roux; cook roux until slightly toasty - do not let brown (3 minutes).

3/4 cup quinoa, rinsed thoroughly under running water
7 cups water
2 ears corn, shucked
2 tablespoons olive oil
1 garlic clove, finely chopped
1 jalapeno chile, seeded and finely diced
1/2 teaspoon ground cumin
sea salt, to taste
2 potatoes, peeled and diced into 1/4-inch pieces (about 6oz)
fresh ground pepper, to taste
1/4 lb feta cheese, cut into small cubes
1 bunch spinach, stems removed and leaves washed
3 green onions, including greens thinly sliced
1/3 cup cilantro leaf, chopped
1 hard-boiled egg, peeled and diced (optional)

Steps:

  • Simmer the quinoa in 7 cups boiling water for 10 minutes.
  • While the quinoa is cooking, slice off the top half of the corn kernels, then reverse your knife and press out the milk with the dull edge running down the length of the cobs. Set aside.
  • Drain quinoa, but reserve liquid.
  • Heat the oil in a 3-quart saucepan with garlic and chile, cook for about 30 seconds over medium heat, then add the cumin, 1/2 tsp salt, and the potatoes.
  • Measure 6 cups of the quinoa-cooking water and add it to the pot. Bring to a boil, then add the quinoa and simmer, partially covered, until the potatoes are tender, about 15 minutes. Add the corn and its scrapings.

Steps:

  • Cut the kernels off the corn and scrape the cobs with the back of a knife to remove the liquid. Melt 1 tablespoon butter in a dutch oven or other large pot over medium-high heat. Add the bacon and cook, stirring, until crisp, 3 to 4 minutes. Remove to a paper towel-lined plate with a slotted spoon; remove 2 tablespoons of the drippings and set aside.
  • Reduce the heat under the pot to medium and add the remaining 1 tablespoon butter, the chopped onion, corn and liquid, and a pinch each of salt and pepper. Cook, stirring, until the onion is tender, 5 to 7 minutes.
  • Add the potatoes and chopped garlic to the pot and season with the smoked paprika and thyme; cook, stirring, 1 minute. Add the chicken broth and 1 teaspoon salt; cover and bring to a boil. Uncover and simmer until the potatoes are tender, 6 to 8 minutes.

2 cups milk

Steps:

  • Fry bacon in pan until almost done. Add onions and celery, and saute until lightly browned.
  • Transfer to a cooking pot. Add cream-style corn, kernel corn, butter, and broth. Add carrots and potatoes. Cook for about 15 minutes.
  • Mix together flour and a little water to form a paste.
  • Add milk and flour paste. You might want to add more flour paste, depending on how thick you like your chowder. Simmer for 30 minutes or until you are ready to eat. Add salt and pepper to taste.

4 ounces diced cured pork (bacon may be substituted, but not salt pork)
1/2 cup water, more if needed
1 large Spanish onion, diced
3 cloves garlic, minced
1/4 cup dry white wine
8 large chowder clams, in shell, washed (see note)
10 ounces fresh spinach, washed and chopped
1/2 cup fresh basil leaves, chopped
2 to 6 small fresh hot peppers, chopped
3 ears fresh corn, shucked
1 cup milk
2 cups heavy cream
Salt and pepper as desired

Steps:

  • In a large, deep pot, fry the pork in the water over medium heat until the water is gone and the pork is lightly browned and well rendered.
  • Add onions and garlic and cook until the onion is translucent. Add wine and clams, then cover and steam until the clams open. Remove clam shells from clams. Chop the clams fine and return to the pot.
  • Add spinach, basil and peppers and simmer four minutes. Run a sharp knife down all the rows of corn kernels and, using the back of a stiff knife, scrape the kernels off the cob onto a plate. Add kernels to the pot and boil one minute. Add milk and cream and return to the boil. Season to taste with salt and pepper.

Ham, Potato, Corn and Spinach Chowder image

So, I am home by myself and starving. I got to thinking about soup I had as a child with farmer's sausage and potato. While I am living in Canada again for the first time in years and actually have farmer's sausage in my freezer, I also had left over ham. So, here is my take on a hearty, yummy soup that most people can probably make with leftovers from a big ham dinner. Give it a whirl, I think you will be pleased. Note that I added a kind of weird ingredient of greek sour cream because I thought it would add a nice sourness to the soup (kind of like buttermilk) and I happened to have some in the house. I think regular sour cream (but probably not lowfat) would work too.

2 cups left-over ham
1 left-over baked potato (although if you don't have this you could certainly peel and boil some first)
1 tablespoon butter
onion flakes (weird right? but I didn't have any fresh onions....)
garlic powder
flour
milk
chicken broth
salt
pepper
frozen spinach, nuggets (2)
dill (to taste)
2 cups corn (I used the gold or white corn from Kroger or Fred Meyer)

Steps:

  • melt about 1 tablespoon of butter in a pan (real butter is sooo much better than margarine, trust me on this).
  • add in about a teaspoon of onion flakes to rehydrate and soften.
  • when the butter gets a bit brown add 2 tablespoons of flour.
  • whisk together until you have "cooked" the flour (about 30 seconds).
  • add 2 cups of milk and whisk until smooth.
  • add a cup of chicken broth. I actually used chicken bouillon because that is what I had.
  • add one heaping tablespoon of greek sour cream (see notes about using regular sour cream instead).
  • Add 2 nuggets of chopped frozen spinach.
  • let simmer on low while you prepare the rest of the ingredients.
  • add a couple shakes of garlic powder.
  • I put in A LOT of black pepper but do it to your taste.
  • Add dill to taste as well, I used dry because that is what I had, but fresh would be super good.
  • Chop up about 2 cups of ham into bite sized pieces.
  • open the corn and drain.
  • peel one big left over baked potato and chop into bite sized pieces.
  • Add all the ham, potato and corn.
  • Taste and add extra dill, pepper if desired. I added another tablespoon of sour cream because I thought it would taste good.
  • Let simmer until all the ingredients are hot and the spinach is dispersed throughout.
  • and eat!

1 lb bulk pork sausage
1 cup chopped onion
1 garlic clove, minced
4 cups potatoes, cut in 1/2 inch dice
1 teaspoon salt, to taste (original recipe had 2 tsp)
1/2 teaspoon dried marjoram
1/2 teaspoon fresh ground black pepper
2 cups water
2 cups corn kernels (3 ears of fresh corn)
1 (16 ounce) can cream-style corn
12 ounces evaporated milk
chopped fresh parsley, for garnish

Steps:

  • If using fresh corn on the cob, cook the corn in boiling water and sit aside to cool before cutting. If using canned or frozen corn, add to the soup pot with the creamed corn.
  • Brown the sausage in a soup pot over medium heat for about 8 minutes. After 5 minutes of cooking, add the onion and garlic to the pot, stir well. Add the potatoes, salt, marjoram, pepper, and water. Bring to a boil and cook until the potatoes test done, about 20 to 25 minutes.
  • Add both corns and the evaporated milk and bring to a steaming heat. Don't boil.
  • Note: You can substitute the fresh corn with a canned peg corn or frozen corn.
  • Garnish with parsley and serve.
