Warm skillet fried apples are perfect on a hot buttermilk biscuit for breakfast. Also an excellent side dish for many of your favorite meals. Quick and easy to prepare.

4-5 Apples, firm, medium size, sliced
1/2 cup Butter (1-stick)
1/2 cup Granulated Sugar
1/4 cup Brown Sugar
1 Tablespoon Ground Cinnamon
Dash of Nutmeg, if desired.

Steps:

  • Wash the apples. Remove the cores. Slice, and set aside.
  • Place a cast iron skillet over just below Medium heat on your stove top.
  • When pan is hot, add the stick of butter.
  • Add the granulated sugar.
  • Add the brown sugar.
  • Add the cinnamon.
  • Add the nutmeg, if desired.
  • Stir well until butter melts and sugars dissolve.
  • If mixture is thick, thin it down with a small amount of water or apple juice.
  • Add the sliced apples. Stir well to coat.
  • Stir often and cook apples until tender.
  • Serve warm.
  • Enjoy!

1 1/2 cups packed brown sugar
1 stick (8 tablespoons) salted butter
5 Granny Smith apples, peeled and diced
1/2 teaspoon vanilla
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
Juice of 1/2 lemon
1 tablespoon cornstarch
Two 16-ounce cans refrigerated flaky jumbo biscuits (8 biscuits per can)
4 cups vegetable oil, for frying
1/2 cup confectioners' sugar, for sprinkling onto finished pies
1 cup Cinnamon-Caramel Sauce, recipe follows, or store-bought caramel sauce
1 cup packed light brown sugar
3/4 cup half-and-half
4 tablespoons (1/2 stick) salted butter
2 pinches kosher salt
1 tablespoon vanilla
1 teaspoon ground cinnamon

Steps:

  • Heat a large cast-iron skillet over medium heat. Add the brown sugar, butter and 1 tablespoon water. Cook, stirring, until the sugar is dissolved and the mixture is bubbling. Add the apples, vanilla, salt, cinnamon and lemon juice. Mix together the cornstarch and 1 tablespoon water in a small bowl to create a slurry. Add the cornstarch mixture to the skillet and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes. Pour into a heatproof bowl and let cool completely. You can make this ahead of time and chill in the fridge a day or so in advance if needed.
  • To make the pies, roll each biscuit into about a 5-inch circle that is about 1/8 inch thick. Spoon 2 generous tablespoons of the apple filling on each round of dough, just off center. Use your finger and run a little water around the edges to help them seal completely. Fold one half of each circle over onto the other half and seal in the apple filling, forcing out any air that you can. Press the edges together and crimp with a fork. Continue until they're all assembled.
  • Heat the oil in a high-sided skillet over medium heat until it reaches 350 degrees F. Fry the pies 2 or 3 at a time for about 5 minutes, carefully turning them halfway through. Remove them to a paper towel-lined baking sheet to drain.
  • When all the pies are fried, sift the confectioners' sugar over top. Serve with Cinnamon-Caramel Sauce or store-bought caramel sauce.
  • Mix the brown sugar, half-and-half, butter and a pinch of salt in a saucepan over medium-low heat. Cook, whisking gently, until it thickens, 2 to 3 minutes. Whisk in the vanilla, cinnamon and a second pinch of salt and cook another minute to thicken further. Turn off the heat and allow to cool to room temperature before serving. Chill if not using immediately.

2 cans large buttermilk biscuits
1 (21 oz) can apple pie filling
1/4 cup plus more for dusting sugar
2 tablespoons plus more for dusting ground cinnamon
for rolling flour
for garnish (optional) whipped cream
for garnish (optional) confectioner's sugar

Steps:

  • Pour the oil into a large cast iron skillet about 1/2-inch up the sides and heat to about 350º.
  • Remove biscuits from cans, flour them and roll each 1 out to a 5-inch round. Place 1 heaping tablespoon of fruit filling on a round leaving a 1/2-inch edge all around. Place another rolled out round on top of the filling, pressing around the edges to seal. You should dip your fingers in water and wipe around the edge of the bottom biscuit to enable it to stick to the top biscuit. Dip end of dinner fork in flour and press continuously around edge to insure a proper seal. Repeat with remaining biscuits. Makes 8 or 10 pies depending on the amount in your biscuit can. Place 3 or 4 of the pies in the preheated cast iron skillet. Fry for about 2 minutes per side or until golden brown. Transfer to paper towels to drain and sprinkle with cinnamon and sugar while still hot. Serve with whipped cream and confectioner's sugar, if desired.

1 tablespoon sugar
1/2 teaspoon table salt
2 tablespoons vegetable shortening, chilled
6 tablespoons cold unsalted butter, cut into 1/4-inch pieces
3 -4 tablespoons ice water
1/2 cup apple cider
1/3 cup maple syrup
2 tablespoons fresh lemon juice
2 teaspoons cornstarch
1/8 teaspoon ground cinnamon (optional)
2 tablespoons unsalted butter
2 1/2 lbs apples, peeled, cored, halved, and cut into 1/2-inch-thick wedges (about 6 medium - 3 sweet, 3 tart)
1 egg white, lightly beaten
2 teaspoons sugar

Steps:

  • 1. FOR THE CRUST: Pulse flour, sugar, and salt in food processor until combined. Add shortening and process until mixture has texture of coarse sand, about ten 1-second pulses. Scatter butter pieces over flour mixture and process until mixture is pale yellow and resembles coarse crumbs, with butter bits no larger than small peas, about ten 1-second pulses. Transfer mixture to medium bowl.
  • 2. Sprinkle 3 tablespoons ice water over mixture. With blade of rubber spatula, use folding motion to mix. Press down on dough with broad side of spatula until dough sticks together, adding up to 1 tablespoon more ice water if dough does not come together. Turn dough out onto sheet of plastic wrap and flatten into 4-inch disk. Wrap dough and refrigerate 30 minutes, or up to 2 days, before rolling out. (If dough is refrigerated longer than 1 hour, let stand at room temperature until malleable.).
  • 3. FOR THE FILLING: Adjust oven rack to upper-middle position (between 7 and 9 inches from heating element) and heat oven to 500 degrees. Whisk cider, syrup, lemon juice, cornstarch, and cinnamon (if using) together in medium bowl until smooth. Heat butter in 12-inch heatproof skillet over medium-high heat. When foaming subsides, add apples and cook, stirring 2 or 3 times until apples begin to caramelize, about 5 minutes. (Do not fully cook apples.) Remove pan from heat, add cider mixture, and gently stir until apples are well coated. Set aside to cool slightly.
  • 4. TO ASSEMBLE AND BAKE: Roll out dough on lightly floured work surface, or between 2 large sheets of plastic wrap, to 11-inch circle. Roll dough loosely around rolling pin and unroll over apple filling. Brush dough with egg white and sprinkle with sugar. With sharp knife, gently cut dough into 6 pieces by making 1 vertical cut followed by 2 evenly spaced horizontal cuts (perpendicular to first cut). Bake until apples are tender and crust is a deep golden brown, about 20 minutes. Let cool 15 minutes; serve.

2 tablespoons unsalted butter
8 Granny Smith apples, peeled, cored and thinly sliced
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup packed light brown sugar
1/2 cup shredded white Cheddar
2 tablespoons cornstarch
1/2 teaspoon kosher salt
One 9-inch prepared pie dough
3 1/2 cups cheese crackers
1/2 cup packed light brown sugar
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, melted
1 lemon
6 large fresh sage leaves
1 cup heavy whipping cream
2 tablespoons maple syrup
1 teaspoon kosher salt

Steps:

  • For the pie: Place a baking sheet in the oven and preheat the oven to 350 degrees F.
  • Warm a medium saute pan over medium heat and melt the butter. Add the apple slices, cinnamon and nutmeg and cook until slightly softened, about 4 minutes. Pour apples into a large bowl and cool in the fridge, about 5 minutes.
  • For the streusel topping: Meanwhile, fill a gallon resealable plastic bag with the cheese crackers and use a rolling pin to crush into small crumbs, but not a fine powder. Add to a medium bowl with the light brown sugar and salt and stir to combined. Stir melted butter into the mixture, tossing to bind your streusel, and set aside for pie assembly.
  • Back to the pie: Remove the apples from the fridge and stir in the light brown sugar, Cheddar, cornstarch and salt.
  • Fit the pie dough into a 10-inch cast-iron skillet. Gently press the dough against the sides of the skillet to form the bottom crust of the pie. (The crust will not reach the top edge of skillet and this is just fine.) Pour the apples into the skillet. Generously sprinkle the streusel on top of the apples and spread in an even layer.
  • Bake the pie on the preheated baking sheet until golden brown and bubbly, 45 to 50 minutes. Allow the pie to cool about 45 minutes before serving.
  • For the lemon maple sage whipped cream: Meanwhile, zest the entire lemon into a medium bowl. Gather sage leaves together in a tight bundle and grate the bundle into the bowl with the zest (it's okay if a few larger pieces fall in). Add the heavy cream, maple syrup and salt and stir together until combined. Strain mixture through a fine-mesh sieve into the bowl of a stand mixer fitted with the whisk attachment. Use a rubber spatula to press on the lemon and sage mixture in the sieve, to get out all the possible flavor. Beat the cream until it holds medium peaks and serve a dollop on each pie slice.

3 tablespoons cold unsalted butter, cut into 1/2-inch cubes
3 tablespoons cold vegetable shortening (preferably trans-fat-free), cut into 1/2-inch pieces
1 teaspoon baking powder
3/4 teaspoon salt
1 large egg, lightly beaten
4 to 5 tablespoons ice water
For filling
4 1/2 ounces unsulfured dried apples (2 cups)
2 cups unfiltered apple cider
1 1/2 cups water
2 1/2 tablespoons packed light brown sugar
1 teaspoon grated lemon zest
1/4 teaspoon cinnamon
For frying and serving
About 2 quarts vegetable oil
Confectioners sugar for dusting
Equipment: a deep-fat thermometer

Steps:

  • Make pastry:
  • Blend together flour, butter, shortening, baking powder, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) until mixture just resembles coarse meal. Whisk egg with 1/4 cup ice water, then drizzle evenly over flour mixture and gently stir with a fork until incorporated.
  • Squeeze a small handful: If it doesn't hold together, add more ice water, 1/2 tablespoon at a time, stirring (or pulsing) until incorporated.
  • Gather dough and knead just until smooth, 3 or 4 times, on a lightly floured surface (do not overwork, or pastry will be tough). Form dough into 2 (5-inch) disks and chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Make filling:
  • Briskly simmer all filling ingredients and a pinch of salt in a heavy medium saucepan, uncovered, stirring occasionally and mashing apples with a potato masher as they soften, until a thick purée forms, about 20 minutes. Cool completely.
  • Make pies:
  • Divide 1 disk of dough into 6 equal pieces. Roll out 1 piece on a lightly floured surface with a lightly floured rolling pin into a 6-inch round, then put 2 heaping tablespoons of filling in center. Lightly moisten edge with water and fold dough over to form a half-circle, pressing out air around filling, then pressing edge to seal. Transfer to a large sheet of parchment paper and press floured tines of a fork around edge. Make more pies with remaining dough and filling (you may have some filling left over).
  • Fry pies:
  • Set a cooling rack on a large baking sheet or tray. Heat 2 inches of oil in a 4- to 5-quart heavy pot (preferably cast-iron) over medium heat until it registers 360 to 370°F on thermometer. Fry pies, 3 or 4 at a time, turning occasionally, until deep golden-brown, 7 to 8 minutes per batch. Transfer to rack to drain. Return oil to 360 to 370°F between batches.
  • Dust warm pies with confectioners sugar before serving.

5 Granny Smith apples -- peeled, cored, quartered, and thinly sliced
3 (9 inch) refrigerated prerolled pie crusts
1 cup white sugar, divided
2 teaspoons ground cinnamon, divided
¼ cup white sugar
1 tablespoon butter, cut into small chunks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place 1/2 cup butter into a heavy cast iron skillet, and melt butter in the oven. Remove skillet and sprinkle with brown sugar; return to oven to heat while you prepare the apples.
  • Remove skillet, and place 1 refrigerated pie crust on top of the brown sugar. Top the pie crust with half the sliced apples. Sprinkle apples with 1/2 cup of sugar and 1 teaspoon of cinnamon; place a second pie crust over the apples; top the second crust with the remaining apples, and sprinkle with 1/2 cup sugar and 1 teaspoon cinnamon. Top with the third crust; sprinkle the top crust with 1/4 cup sugar, and dot with 1 tablespoon of butter. Cut 4 slits into the top crust for steam.
  • Bake in the preheated oven until the apples are tender and the crust is golden brown, about 45 minutes. Serve warm.

2 cups all-purpose flour
1 teaspoon salt
½ cup shortening, chilled
½ cup cold water
2 apples - peeled, cored and diced
¼ cup white sugar, or to taste
⅛ teaspoon ground cinnamon, or to taste
oil for frying

Steps:

  • Make pastry: Sift flour and salt together in a large bowl. Cut in shortening with 2 knives or a pastry blender until mixture resembles coarse crumbs. Add cold water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened. Do not add more water than you need: when you squeeze a handful of moistened pastry mixture, it should form a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  • Make filling: Place apples in a saucepan. Combine sugar and cinnamon; pour over apples and toss to coat. Cook, covered, in a saucepan on low heat until soft; mash with a fork to make thick applesauce. Set aside to cool.
  • Roll dough on a lightly floured surface to 1/8-inch thick; cut out eight 4-inch rounds with a large cookie cutter.
  • Place 1 heaping tablespoon of applesauce in the center of each pastry round. Moisten edges with cold water, fold in half, and press the edge with a fork to seal. Repeat with remaining pastry and filling.
  • Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
  • Lower pies carefully into the hot oil in batches. Fry until golden brown, about 2 to 3 minutes on each side. Transfer to a paper towel-lined plate to drain. Repeat with remaining pies.
