This is a recipe from my mother. I never thought corn could taste so different. The sour cream makes it luscious!

Number Of Ingredients 8

2 teaspoons chopped onions
2 teaspoons butter
2 teaspoons flour
1 teaspoon salt
1 (1/2 pint) cup sour cream
2 (12 ounce) cans corn, drained
1/2 lb bacon, cooked,drained,and crumbled (or package of pre-cooked, crumbled bacon)
1 teaspoon chopped parsley

Steps:

  • Cook onion in butter until soft; blend in flour and salt.
  • Add sour cream gradually, stirring to keep smooth.
  • Heat to boiling; add corn; cook until heated through.
  • Fold in 1/2 crumbled bacon.
  • Turn into serving dish, garnish with remaining bacon and parsley.

Corn is my three boy's favorite vegetables, so we eat a lot of it. This recipe has been a favorite for years. My husband, Bob, and the boys really enjoy it.

6 bacon strips
1/2 cup chopped onion
2 tablespoons all-purpose flour
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sour cream
3-1/2 cups fresh or frozen whole kernel corn
1 tablespoon chopped fresh parsley
1 tablespoon minced chives

Steps:

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoon of drippings. Crumble bacon; set aside. , Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. , Pour into a 1-qt. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with chives.

6 ears fresh corn, shucked, kernels removed and reserved, cobs reserved
2 cloves garlic
1 bay leaf
1 onion, quartered
1 tablespoon whole coriander seed
1 teaspoon kosher salt
Olive oil, for drizzling
1/4 pound thick-cut bacon, cut into lardons
1 cup minced yellow onion
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
Zest of 1 lime
2 tablespoons unsalted butter
1/2 cup sour cream or Greek yogurt
1/2 cup finely chopped fresh cilantro

Steps:

  • For the corn stock: Put the corn cobs, garlic, bay leaf, onion, coriander, salt and 2 quarts water in a large pot and bring to a boil. Reduce the heat to a simmer and cook to reduce the liquid to 2 cups, about 45 minutes. Strain and reserve, keeping the stock warm.
  • For the creamed corn with lime: Heat a large saucepan over medium heat and drizzle with olive oil. Add the bacon and cook, stirring as needed, until crisp and the fat is rendered, about 10 minutes. Add the onions, garlic and a pinch of salt and cook until the onions have softened, another few minutes. Add the reserved corn kernels, lime zest and corn stock, bring to a simmer and cook until the mixture thickens and reduces, 12 to 15 minutes. Remove the pan from the heat and stir in the butter, sour cream and cilantro. Taste and season with salt and pepper.

2 tablespoons butter

2 (16-ounce) cans whole kernel corn (drained)
1 tablespoon parsley (fresh, minced)

Steps:

  • Gather the ingredients.
  • In a large skillet, fry bacon; drain, crumble, and set aside.
  • Pour off bacon grease; melt butter over medium-low heat. Add onion and green bell pepper and then sauté for 2 minutes; stir in flour and salt. Gradually add the sour cream. Heat until it just begins to bubble, stirring constantly. Then add corn and heat through; stir in half of the crumbled bacon.
  • Transfer corn and sour cream mixture to a 2-quart casserole or serving dish; top corn casserole with remaining crumbled bacon and chopped parsley.

6 bacon slices, cut crosswise into 1-inch pieces
1 large onion, chopped
4 garlic cloves, finely chopped
1 cup water
3/4 cup finely chopped scallion

Steps:

  • Stand 1 ear of corn upright, pointed end down, in a large bowl and cut kernels from cob using a sharp paring knife. Scrape any remaining corn with its milk from cob into bowl using back edge of knife and discard cob. Remove kernels from remaining ears in same manner.
  • Cook bacon in a 12-inch heavy skillet (2 inches deep) over moderate heat, stirring occasionally, until crisp, about 8 minutes, then transfer with a slotted spoon to paper towels to drain. Cook onion in fat remaining in skillet over moderately low heat, stirring occasionally, until softened, 2 to 3 minutes. 1 cup whipping cream, unwhipped
1 teaspoon salt (or to taste, I use seasoned salt)
2 tablespoons sugar
1 pinch garlic powder (optional I like to add it in)
2 tablespoons butter
1 cup full-fat milk
2 tablespoons flour
1/4-1/3 cup grated parmesan cheese
ground black pepper (to taste)

Steps:

  • In a large skillet over medium heat combine corn, whipping cream, salt, pepper, sugar garlic powder (if using) and butter.
  • In a small bowl whisk together the full-fat milk with flour, then stir/add to the corn mixture; cook stirring over medium heat until the mixture has thickened and the corn is cooked through.
  • Remove from heat then add in the grated Parmesan cheese; stir until thoroughly combined and melted.
  • Season with more salt and black pepper if desired.
  • Serve hot.
