The trick is to coat the dough in lots of cinnamon sugar, and then bake them so they are still soft on the inside and have a wonderful sugar crust on the outside. Enjoy with coffee and a crossword!

3 cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground nutmeg

½ cup vegetable shortening
2 cups diced apples
1 cup milk
2 large eggs, beaten
½ cup butter
1 cup sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 12-cavity mini doughnut pans.
  • Combine flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large bowl; mix together with a fork until combined. Add shortening and mix with the fork until broken up into small clumps.
  • Mix together apples, milk, and eggs in a separate bowl. Add to flour mixture and stir just until blended. Spoon batter into the prepared doughnut pans.
  • Bake doughnuts in the preheated oven until slightly browned on the bottoms, about 10 minutes. Remove from pan and transfer to a wire rack to cool completely.
  • While doughnuts are cooling, place melted butter for topping in a shallow bowl. Mix together 1 cup sugar and 2 teaspoons cinnamon in another shallow bowl. Dip cooled doughnuts in butter and then in sugar mixture to coat.

These are best on the day they are made, but they freeze beautifully if you can't eat them all up right away. A deep fryer is recommended or alternately, at least, a thermometer so you can monitor oil temperature to ensure good results.

1 1/2 Tbsp active dry or instant yeast
1/2 cup warm water
2 tsp white sugar
2 cups bread flour (plus more, as needed (can use all purpose flour. See Note 1))
1/4 cup white sugar
1/4 tsp baking powder
1/4 tsp mace ((can substitute nutmeg))
1 tsp salt
2 Tbsp shortening or lard ((can use vegetable oil. See Note 2))
1 large egg
1/4 tsp vanilla
2 medium tart apples (peeled, cored and chopped into 1/2-inch pieces *see Note 3)
1/4 cup white sugar
2 tsp freshly squeezed lemon juice
4 tsp cinnamon
1 Tbsp bread flour
2 cups confectioners/icing sugar
1 1/2 tsp light corn (or golden syrup)
1/4 tsp salt
1/4 tsp vanilla
1 Tbsp white sugar
1/3 cup water
vegetable oil (for frying (or similar, neutral-tasting oil))

Steps:

  • For the dough: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, add the yeast to the warm water. Add the sugar, stir and let stand 5 minutes.
  • Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, mace and salt. Set aside.
  • When yeast is ready, add the shortening, egg and vanilla and mix with the PADDLE attachment on low speed for 1 minute (to break up the shortening). Add about 1/3 of the flour mixture and mix until combined. Add a second third of the flour mixture and again, mix until combined. Switch to the dough hook and add the remaining flour mixture. Knead with the hook until all that flour is incorporated. If dough is sticky, start adding flour in 1 Tbsp. increments, until the dough comes together, clears the bottom of the bowl and is becoming smooth. Knead on medium for about 2 minutes more. The dough should be smooth and but still a bit moist (but not sticky).
  • Place the dough in an oiled bowl, cover with plastic wrap and set-aside to rise until doubled in size (about 1 hour).
  • Meanwhile, make the apple filling. Place the diced apples, sugar and lemon juice into a skillet over medium heat. Cook, stirring often, until all the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before using.

  • When bread has finished it's first rise, remove to a lightly floured surface and roll into a 10-inch x 10-inch square. Sprinkle the apples over one half of the dough. Sprinkle all the cinnamon evenly over the apples and then sprinkle with the 1 Tbsp. flour. Fold the empty side of the dough over the side with the apples. Using a sharp knife or a bench scraper, cut the dough into 1/2-inch wide strips from top to bottom. Repeat cutting 1/2-inch strips from side to side, so you end up with small chunks of dough. Gather up the dough bits and cut some more, from different directions, until it is in small chunks and evenly mixed with cinnamon/apples/dough etc.
  • Using floured hands, roughly shape into a 12-inch long x 3-inch wide log. Cut the log into 1 inch slices. With each slice, roughly pat into a disc, about the size of your palm (use some additional flour, as needed, if your dough is sticky). Place the dough discs onto a parchment lined or floured baking sheet, leaving a couple of inches of room around each. Repeat with all 12 dough pieces. Cover with plastic wrap or a clean tea towel and set-aside to rise until doubled again, about 30-45 minutes (approximately. Will vary depending on room temperature. The fritters should double in size and look puffy).
  • When the fritters are almost risen, prepare the glaze. Add the icing sugar, corn syrup, salt and vanilla in a large bowl. Set aside.
  • In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. (You don't want any lumps :) Cover with plastic wrap and set aside until needed.
  • When dough is about ready to cook, heat oil in a deep fryer to 370° (alternately, use a heavy deep pot and a thermometer to monitor temperature). Fry each donut until deep golden on the underside (1 1/2 - 2 minutes), flip over and fry the other side. (*time and temperature may need to vary. Watch closely the first few to determine timing. If they seem to be browning too quickly, lower temperature slightly or likewise, if they seem to be taking too long to brown, raise the temperature slightly). Remove to a cooling rack placed over a baking sheet. If there are any loose apples in the frying oil, scoop out between batches so you don't have any apple pieces burning in the oil and causing bitter flavours.
  • While the fritters are still quite warm (as soon as they are cool enough to handle), dip into prepared glaze and return to cooling rack to cool completely. *Stir the glaze mixture regularly during the process, to keep it nice and smooth.

½ cup granulated sugar
¼ cup firmly packed light brown sugar
1 large egg
2 tablespoons canola or vegetable oil
½ cup buttermilk
1 cup puréed Caramelized Apple Compote
1 teaspoon vanilla extract
4 tablespoons unsalted butter (melted + more butter for the pans)
1 cup granulated sugar
2 teaspoons ground cinnamon
½ teaspoon ground cardamom
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
Nonstick donut pans for 1 dozen donuts

Steps:

  • Preheat the oven to 350 degrees. Grease pans with butter or spray with nonstick spray. Whisk flour, baking powder, baking soda, cinnamon, cardamom, nutmeg, cloves and salt in a medium bowl. Set aside.
  • Whisk sugar, brown sugar, egg, oil, buttermilk, apple compote and vanilla extract in a large bowl until completely smooth. Add dry ingredients and combine with a rubber spatula until the batter just comes together.
  • Transfer batter to a large Ziploc bag. Cut a small hole in the corner of the bag and pipe the batter into a nonstick donut pan, filling each donut space about three-quarters of the way up with batter.
  • Transfer to the oven and bake until donuts spring back when touched, about 15 minutes. Set aside to cool slightly.
  • Meanwhile, make the topping. Combine the sugar, cinnamon, cardamom, nutmeg and cloves in a shallow bowl. When donuts are cool enough to handle, brush each donut with melted butter and toss in sugar and spice mixture until donuts are fully coated. Serve warm.

1/3 cup peanut butter
1/3 cup strawberry Greek yogurt

Steps:

  • Slice the top and bottom from each apple and discard. Slice the apples into 1/2-inch circles. Use a biscuit cutter or small melon baller to cut a hole in the center of each to make a "donut."
  • Put the chocolate-hazelnut spread and peanut butter in separate pastry bags (or put in separate ziptop bags and snip off a corner).

While they rest, whisk together the glaze and either drizzle over the donuts or dunk them in it. Add sprinkles if you want and enjoy your warm, fresh-baked treats - this recipe makes a lot of them!

1 ½ cups milk, warm to the touch
1 cup sugar
½ oz yeast
1 stick unsalted butter, soft
3 eggs
1 tablespoon vanilla extract
5 cups flour, sifted
1 tablespoon vegetable oil
shortening, for frying
3 cups powdered sugar
1 cup dry milk powder
1 tablespoon vanilla extract
½ cup water, hot

Steps:

  • In a medium bowl, add the milk, sugar, and yeast, stirring to combine.
  • In a separate medium bowl, add the butter, eggs, and vanilla extract, stirring to combine.
  • Add the milk mixture to the egg mixture and whisk to combine. Transfer to a large bowl and add the flour in thirds, stirring between each addition.
  • Dump the dough onto a lightly floured surface and knead for 5 minutes, until smooth. Gently poke the dough with a finger--the dough should bounce back up from the indentation.
  • Place the dough in a large bowl, and lightly coat the dough with oil. Cover the bowl with plastic wrap.
  • Let the dough rise in a warm place for an hour, or until doubled in size.
  • Take the dough out and knead on a floured surface for 5 minutes until smooth. Place the dough in an oiled bowl and repeat with rise overnight in refrigerator.
  • Roll out the dough on a floured surface until ¼ inch (6 mm) thick.
  • Cut out the doughnuts and donut holes with a cookie cutter and piping tip.
  • Melt enough shortening over medium heat to come up just 2 inches (5 cm) up on the side of a heavy frying pan. Heat the shortening to 375°F (190°C)
  • Fry the donuts and donut holes for 45 seconds on each side, or until golden brown.
  • In a bowl, combine the powdered sugar, dry milk powder, vanilla extract and hot water until smooth.
  • Strain the glaze through a fine-mesh sieve to remove any lumps.
  • Dunk the donuts in the glaze or drizzle the glaze on top.

  • Pour into a large glass measuring cup.

150g soft cheese
2 tsp honey
3 apples (use a crunchy eating variety)
3-4 tbsp almond or peanut butter (optional)
coloured sprinkles , to decorate

Steps:

  • Mix the soft cheese with the honey and set aside. Peel the apples, then slice each through the core into five or six rings, about 1cm thick. Use an apple corer or small round biscuit cutter to stamp out a circle from the middle of each slice, removing the core and creating 'doughnut' shapes. Pat the slices dry using kitchen paper - they should be as dry as possible to help the toppings stick.
  • Spread some nut butter over the slices, if using, then top with the sweetened soft cheese. Decorate with the sprinkles and serve.
