LEMON, GARLIC AND BASIL SHRIMP SKEWERS
Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil. These need to marinate for 45 minutes before cooking. Recipe developed for Food and Drink by Heather Trim.

Steps:
- In a medium bowl, whisk lemon juice with oil, mustard, garlic and lemon peel.
- Add shrimp and stir to coat.
- Marinate, covered and refrigerated, for about 45 minutes.
- Grease grill and preheat barbecue to high.
- Thread shrimp onto skewers and sprinkle both sides lightly with salt.
- Place on grill and barbecue until shrimp are pink, about 1½ to 2 minutes a side.
- Remove, place on a platter and sprinkle with basil.
LEMON GRASS SKEWERED SHRIMP
Steps:
- Skewer shrimp and lemongrass. Mix garlic, Thai basil leaves, salt, pepper and cilantro together in a large bowl. Brush skewered shrimp with marinade. Marinate covered for 4 hours in the refrigerator. Grill skewers for about 2 minutes on each side.

- Cook couscous according to package directions; remove from heat. Meanwhile, in a large bowl, whisk lemon juice, oil, mustard, garlic, salt and pepper until blended; stir in 1/4 cup basil. Stir 1/4 cup dressing into cooked couscous; reserve remaining dressing., Thread shrimp onto metal or soaked wooden skewers. Grill shrimp, covered, on an oiled rack over medium-high heat until pink, 2-3 minutes on each side., Remove shrimp from skewers; toss with reserved dressing. Serve with couscous. Sprinkle with lemon zest and remaining basil.

LEMON BASIL SHRIMP
This is good done on the barbeque and can also be cooked using the grill. If you like basil you will like these prawns Serve with some nice crusty bread. Makes enough marinade for more then 12 prawns. Marinating time not included.

Steps:
- Place all the ingredients, except the prawns, in a shallow dish and mix well, taste or you want to add more mustard.
- Add the prawns and toss to coat, cover, refrigerate for 1 hour.
- Remove the prawns from the marinade and thread on skewers.
- Cook over medium coals for 2-3 minutes on each side, basting with any remaining marinade from time to time.
- Serve immediately.

BASIL SHRIMP
This was given to me by my friend, Elaine. It is one of the most delicious shrimp recipes for the BBQ I have ever had, and it is so easy. My son would eat the whole recipe if I didn't watch him.

Steps:
- In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
- Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
- Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.

SKEWERED SHRIMP WITH BASIL AND LEMON
Steps:
- 1. In a small bowl, mix oil, butter, lemon juice, mustard, basil, garlic, salt and pepper.
- 2. Place shrimp in a large, resealable plastic bag. Add oil-basil mixture and toss to coat. Allow to marinate for 20 minutes before threading onto skewers.
- 3. Preheat grill for high heat and lightly oil grate
- 4. Place shrimp on hot grill. Cover and cook until grill marks form on one side, about 3 minutes. Turn skewers over and cook until shrimp are fully cooked, about 2-3 minutes longer.

- In a large bowl, combine the first eight ingredients. Pour 2/3 cup into a large resealable plastic bag; add shrimp. Seal the bag and turn to coat; refrigerate for 30 minutes. LEMON GARLIC SHRIMP SKEWERS
This is a great recipe from the July 2005 issue of Sunset Magazine. Can substitute 1 tbs of minced garlic for 2 cloves fresh garlic. Soak wooden skewers 2-3 hours prior to grilling (soaking time not included in preparation time listed in recipe).

Steps:
- In a bowl, mix salt and sugar; add shrimp and stir to coat.
- Cover and chill 45 mins to 1 hour.
- Rinse shrimp well and drain; also rinse and dry bowl.
- Return shrimp to bowl; add olive oil, parsley, lemon peel, garlic and pepper. Mix to coat.
- Thread shrimp on soaked wooden skewers.
- Grill over hot coals or high heat (you should be able to hold you hand over the heat for only 2 to 3 secs) turning once, until shrimp are bright pink and opagque but still moist-looking, 5 to 6 minutes.

- Preheat the broiler or grill to high. If you do not have either, preheat the oven to 500 degrees F. Bring a large pot of salted water to a boil. Soak the skewers in a shallow dish of water. Core, seed and dice the tomato. Mince of grate the garlic. Zest, then halve the lemon. Finely chop the basil leaves. Add the orzo to the boiling water and cook for 6-8 minutes, until al dente. Drain.
- Place the tomatoes and white wine vinegar in a small bowl with a pinch of salt and pepper. Toss, then set aside to marinate.
- Make the lemon-basil butter: Heat 1 tablespoon butter in a small pot over medium heat. Once melted, remove from the heat and stir in half the basil and a squeeze of lemon juice. Season with salt and pepper.
- Drain the tomatoes. Halve, pit and cube the avocado. Once the orzo is ready, toss it into a large bowl with the tomatoes, half of the avocado, the remaining basil, a large drizzle of olive oil, and a squeeze of lemon juice (to taste). Season with salt and butter.
