Herb & Balsamic Grilled Pork with Spinach and Grape Salad image

Simple boneless pork chops get an upgrade with a quick marinade in a sweet and tangy herb and balsamic cooking sauce. A spinach and grape salad sprinkled with blue cheese makes it special.

1 medium shallot, thinly sliced
Four 4-ounce boneless pork chops
Kosher salt and freshly ground black pepper
1/3 cup Food Network Kitchen™ Inspirations Tuscan Style Herb & Balsamic Cooking Sauce
1 tablespoon olive oil, plus more for oiling the grill grates
3 cups tightly packed baby spinach (about 3 ounces)
1 cup red seedless grapes, halved
1 tablespoon lemon juice
1/2 teaspoon honey
1/4 cup crumbled blue cheese

Steps:

  • Preheat an outdoor grill over medium-high heat. Soak the shallots in cold water for 10 minutes (this helps remove some of the pungent bite). Drain.
  • Pierce the pork chops all over with a fork. Put in a shallow dish and sprinkle all over with salt and pepper. Coat the pork in all but 2 tablespoons of the Tuscan Style Herb & Balsamic Cooking Sauce and set aside to marinate at room temperature for 10 minutes.
  • Oil the grill grates and grill the pork until cooked through but still moist, basting occasionally with the reserved cooking sauce, about 4 minutes per side. Let the pork rest.
  • Meanwhile, add the spinach, grapes and shallots to a large bowl. Drizzle in the oil, lemon juice and honey and toss. Season with salt and pepper.
  • Arrange the pork chops on a serving platter. Top with the spinach and grape salad and sprinkle with the blue cheese.

4 boneless pork loin chops (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1 tablespoon canola oil
1 small onion, finely chopped
1 garlic clove, minced
3 medium nectarines or peeled peaches, cut into 1/2-inch slices
1/2 cup reduced-sodium chicken broth
1 tablespoon honey, optional

Steps:

  • Sprinkle pork chops with seasonings. Dredge lightly with flour. In a large skillet, heat oil over medium heat; cook chops until a thermometer reads 145°, 4-5 minutes per side. Remove from pan; keep warm., Add onion to same pan; cook and stir over medium heat 2 minutes. Add garlic; cook and stir 1 minute. Add nectarines; cook until lightly browned on both sides. Stir in broth and, if desired, honey; bring to a boil. Reduce heat. Simmer, uncovered, until nectarines are softened and sauce is slightly thickened, about 5 minutes. Serve with chops.

Pork tenderloin is marinated in steak sauce, red wine vinegar, Dijon mustard and honey before being grilled to perfection and served over a spinach salad.

1/2 cup A.1. Roasted Garlic Steak Sauce
2 Tbsp. honey
2 Tbsp. HEINZ Red Wine Vinegar
1 Tbsp. GREY POUPON Dijon Mustard
1/3 cup olive oil
1 pork tenderloin (1 lb.)
1 large red onion, cut into wedges
6 large fresh mushrooms
8 cups tightly packed torn fresh spinach
3 hard-cooked eggs, cut into wedges

Steps:

  • Whisk first 5 ingredients until blended. Reserve 1/3 cup steak sauce mixture; refrigerate for later use. Pour remaining steak sauce mixture over combined meat, onions and mushrooms in shallow dish; turn to evenly coat all ingredients. Refrigerate 2 hours to marinate.
  • Heat grill to medium heat. Drain meat and vegetables; discard marinade. Grill meat 20 to 22 min. or until done (145ºF), turning after 10 min. Meanwhile, grill onions and mushrooms 4 to 5 min. on each side or until tender.
  • Remove meat from grill. Let stand 3 min. Meanwhile, cook reserved steak sauce mixture in saucepan on medium heat until heated through, stirring occasionally.
  • Slice meat. Cover platter with spinach; top with meat, grilled vegetables and eggs. Drizzle with steak sauce mixture just before serving.

3 nectarines, halved
cooking spray
8 ounces Baby Spinach, fresh
1/4 cup balsamic vinaigrette (light)
1/4 cup cheese, crumbled (feta or gorganzola)
black pepper, freshly ground

Steps:

  • Prepare grill.
  • Cut the pork lengthwise through center of tenderloin, cutting to, but not through, other side (butterfly). Open halves, laying tenderloin flat. Place pork and nectarine halves, cut sides down on grill rack coated with cooking spray. Grill pork 5 minutes on each side or until a thermometer registers 160 degrees. Grill nectarine halves 4 minutes on each side or until thoroughly heated. Remove pork and nectarine halves from grill. Let pork rest 10 minutes.
  • Cut nectariines halves into slices. Thinly slice pork. Combine spinach and vinaigrette in a large bowl; toss to gently coat.
  • Arrange spinach salad on plates. Top each serving with pork, nectarines slices and cheese. Sprinkle with black perrer, if desired.

15g unsalted butter
2 tbsp caster sugar
50g whole pecans
3 ripe nectarines, stoned and cut into eighths lengthways
4 tbsp extra virgin olive oil, plus extra for brushing
2 tbsp balsamic vinegar
1 tsp honey
2 x 100g balls of burrata or vegetarian alternative
70g rocket
bunch of basil leaves, roughly torn
pinch of chilli flakes

Steps:

  • Heat the butter and sugar in a small frying pan over a medium heat until the butter has melted. Add the pecans and stir to coat in the buttery sugar. Continue to cook for about 5 mins, stirring until the pecans are crisp and caramelised. Tip out onto a sheet of baking parchment and leave to cool. Once cooled, roughly chop and set aside.
  • Heat a griddle pan over a high heat and generously brush the nectarine slices with some olive oil. Griddle for 1-2 mins on each side until charred and caramelised. Remove to a serving platter and set aside.
  • Whisk the 4 tbsp olive oil, vinegar and honey together with some seasoning to make a dressing.
  • Nestle the balls of burrata in amongst the nectarines and slice open, then arrange the rocket and basil around them. Drizzle over the dressing, scatter with the pecans and sprinkle with a pinch of chilli flakes to serve.

2 nectarines, halved and pitted
Olive oil, for drizzling
2 teaspoons honey
2 teaspoons Dijon mustard
2 teaspoons white wine vinegar
1/2 cup olive oil
Salt and freshly ground black pepper
1/2 cup slivered almonds
6 ounces spring mix salad greens
2 ounces Stilton, Gorgonzola or other blue cheese

Steps:

  • Heat a grill pan over medium-high heat.
  • Drizzle the nectarine halves with a little olive oil. Grill cut-side down for 2 to 3 minutes, turning midway to achieve lovely grill marks. Set aside.
  • In a bowl, whisk together the honey, Dijon and vinegar. Whisk in the olive oil to emulsify. Add some salt and pepper and mix.
  • Toast the slivered almonds in a small skillet over medium-low heat until just turning golden brown.
  • In a large bowl, toss the salad greens with enough of the dressing to lightly coat. (You won't use all of the dressing; save to have on another salad tomorrow!) Toss in the warm toasted almonds.
  • Divide the salad among 4 plates. Place a nectarine half on each serving. Drizzle the nectarines with a little more dressing. With a fork, cut the blue cheese into chunks and distribute among the plates.

Cover pork; let stand 5 minutes.
  • Cut nectarine halves into slices. Thinly slice pork. In large bowl, gently toss spinach and dressing.
  • On each of 6 plates, evenly divide spinach, nectarine slices, pork slices and cheese. Sprinkle with pepper, if desired.
