1 lb ground mild sausage (can use and ground meat)
1 (10 1/2 ounce) can cream of chicken and mushroom soup (comes mixed)
16 ounces size bag tater tots
1 (8 ounce) can whole kernel corn
1 teaspoon garlic salt
2 teaspoons paprika
1 cup shredded cheese (any kind will do)

Steps:

  • Preheat oven to 400 degrees, or whatever temp it says on the directions for the tater tots.
  • Line a 13x9 casserole dish with aluminum foil and coat with non-stick spray. This makes for super easy clean up.
  • Brown sausage untill cooked through and strain out the grease.
  • Then mix the can of cream soup with the sauage, be sure that you mix it well so you don't have dry spots.
  • Line the bottom of your dish with a single layer of tater tots. Not all of them will fit and thats okay, you will put the rest on top.
  • Cover the tots with can of corn, covering evenly.
  • Now add the sausage/soup mix in an even layer of the corn.
  • Top with leftover taters, and spinkle on the cheese, garlic salt, and paprika.
  • Bake this for 30 minutes and it will be hot and bubbly. The taters should be golden brown and crisp.

1 stalk celery, chopped
1 teaspoon salt

1 (10 3/4 ounce) can tomato soup
1/4 cup ketchup
2 teaspoons Worcestershire sauce
1 (10 3/4 ounce) can potatoes, sliced and drained
1 (10 ounce) package frozen peas
1 (16 ounce) package baby carrots

Steps:

  • In a large skillet, combine ground beef, onion and celery.
  • Brown over medium-high heat; drain. Season with salt and pepper.
  • In a 3 quart casserole, combine tomato soup, ketchup and Worcestershire sauce.
  • Add ground beef mixture, potatoes, peas and carrots; mix well.
  • Cover and bake at 350°F oven for 1 hour and 15 minutes.

Camping For Foodies Dinner Camping Recipes: This is good old American comfort food! Hobo Casserole is made with one giant ground beef patty and baked in a cast iron camp Dutch oven.

1 pound ground beef (80/20 or leaner so you don't have to drain the fat)
Salt (to taste)
Black pepper (to taste)
1 small onion (thinly sliced)
2 medium potatoes (unpeeled and thinly sliced (about 1/4 inch thick))
1 (14 oz) can cream of mushroom soup
1 cup shredded cheddar cheese
1 1/2 cups French-fried onions
Non-stick cooking spray

Steps:

  • Prepare ingredients, as directed.
  • Preheat 12-inch cast iron Dutch oven to 350 degrees F (25 total coals = 17 top/8 bottom). NOTE: If you're using charcoal briquettes, you'll probably need a second set of coals to finish the baking process.
  • Place meat on a cutting mat, then, pat ground beef into a big hamburger patty to an approximate size that will fit in the bottom of a 12-inch oven. Season with salt and pepper.
  • Spray inside of Dutch oven with cooking spray.
  • Use a spatula to gently slide the patty into the bottom of the pre-heated Dutch oven, being careful not to burn yourself on the hot oven.
  • Use a spoon to press the patty into the bottom of the oven, making sure the entire patty is an even thickness.
  • Place the onion slices in an even layer on top of beef.
  • Place the potato slices in an even layer over the onion layer. Season with more salt and pepper.
  • Spread soup evenly over the top.
  • Sprinkle cheese evenly over the soup.
  • Cover with lid and arrange coals for baking at a temperature of 350 degrees F (25 total coals = 17 on top of the lid / 8 below the bottom of the oven).
  • Bake until the hamburger is cooked through and the potatoes are tender, about 1-1.5 hours. Turn the oven and the lid in opposite directions every 15 minutes to ensure even baking.
  • Remove lid. Top with French fried onions and return lid to the pot. Move bottom coals to the lid so all of the coals are on the top of the oven. You are essentially broiling the French fried onions and cheese for about 5 minutes.
  • Remove all coals and let stand a few minutes. Slice and serve hot.

1 small onion
2 medium potatoes, sliced
4 slices American cheese
1 (10 3/4 ounce) can cream of mushroom soup
1/8 cup milk
1 1/2 cups French-fried onions

Steps:

  • Preheat oven to 350°F.
  • Pat ground beef into 8x8 pan and sprinkle with salt and pepper.
  • If using, slice onion on top of beef.

This easy dinner recipe is easily thrown together on a whim without breaking the bank. This dinner casserole recipe takes only 25 minutes to bake and is sure to have you family running to the table. Egg noodles, tomato sauce, ground turkey, basil and onion combine with cream cheese, sour cream and shredded Cheddar cheese for a dish similar to lasagna with all that Italian flavor you love. This easy dish is so scrumptious, it may find its way into your weekly meal plan faster than you think!

12 ounce medium egg noodles
1 pound ground turkey
1 cup chopped onion
1 tablespoon finely minced garlic
1/4 teaspoon salt and fresh ground pepper
16 ounce tomato sauce
3 tablespoon fresh chopped basil
1 cup fat-free sour cream, divided
3/4 cup low fat cream cheese at room temperature
1 cup shredded 2% fat cheddar cheese

Steps:

  • Preheat oven to 350 degrees F and spray a 9 x 13-inch bake dish.
  • Cook noodles in a large pot of salted water until just tender, about 7 minutes or as package directs. Drain and set aside.
  • Meanwhile, in a large skillet over medium high heat, brown turkey for 5 minutes. Drain off any juices, add the onion and garlic to the turkey in the pan and continue to cook over medium high heat for 2 more minutes until lightly browned. Add tomato sauce and basil to the pan, and stir over heat for another 2 minutes.
  • In a small bowl, stir cup of sour cream with the cream cheese until very smooth and well mixed.
  • Make layers in the baking dish: half the noodles, half the cream mixture and half the meat mixture. Repeat. Top with the cheddar cheese and bake for about 25 minutes. Serve garnished with the remaining sour cream and fresh basil leaves.
  • Using low fat ingredients allows this casserole to be delicious, yet more healthful than a standard lasagna.
  • This casserole is made with Italian flavors. To give it a Tex-Mex spin instead, add ½ teaspoon ground cumin when browning the turkey, use 3 tablespoons chopped cilantro instead of basil and add 2 tablespoons salsa when adding the tomato sauce.

6 russet potatoes (scrubbed and thinly sliced)
1 yellow onion (thinly sliced)
1 pound carrots (sliced)
½ pound fresh green beans (ends trimmed)
1 ½ pounds lean ground beef (uncooked)
10 ¾ ounces condensed cream of mushroom soup
½ cup bbq sauce
½ cup shredded sharp cheddar cheese

Steps:

  • Spray slow cooker with non-stick cooking spray.
  • In a small bowl, mix together the salt, ground pepper, onion powder, garlic powder, paprika, and parsley. Set aside.
  • In another medium-sized bowl, mix together cream of mushroom soup and BBQ sauce.
  • Layer half of the potatoes, half of the onions, half of the carrots, and half of the green beans in the bottom of the slow cooker. Sprinkle half of the seasonings over the vegetables.
  • Break the ground beef in small bite-sized pieces (uncooked) and place half over the vegetables.
  • Spoon half of the sauce mixture over the meat.
  • Repeat the entire process all over again, layering it on top of each other.
  • Place the lid on top of the slow cooker and cook on low for 7-8 hours or on high for 3.5-4 hours.
  • Scoop servings into bowls and top with shredded cheddar cheese (and more BBQ sauce or even ketchup, it desired).

Steps:

  • Use a large square piece of aluminum foil for each tin foil dinner. Spray foil with nonstick cooking spray.
  • Separate ground beef into 4 equal patties, or steak into 4 servings, and place in the center of each piece of foil.
  • Divide potatoes, carrots, and onion evenly between all 4 dinners and place on top of meat. Sprinkle with salt and pepper, to taste. Pour a few dashes of Worcestershire sauce on top of each dinner and fold foil up tightly around the entire meal.

  • cut into serving size squares and flip, place lid back on & cook until egg is cooked all the way through.
  • Top with cheese until melted. We enjoy this served up with peppered cream gravy.
  • variation= with vegetables add green chili's & when done serve it with your favorite salsa.
