This roast chicken is surrounded by softened -- and mellowed -- garlic cloves.

Number Of Ingredients 6

1 large whole chicken (about 7 1/2 pounds)
1/4 cup (1/2 stick) unsalted butter, softened
2 tablespoons coarse salt
1/2 teaspoon freshly ground pepper
1 garlic bulb, halved horizontally
60 garlic cloves (do not peel)

Steps:

  • Preheat oven to 425 degrees. Let chicken stand at room temperature 30 minutes. Remove giblets and excess fat from cavity. Rinse chicken; pat dry. Brush outside with butter, and season with salt and pepper. Place garlic bulb in cavity. Transfer chicken to a roasting pan. Tuck wing tips under; tie legs with kitchen twine.
  • Roast chicken, basting occasionally with pan juices, 20 minutes. Remove from oven, and arrange garlic cloves around chicken. Continue roasting until skin is deep golden brown and an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees, about 1 hour.
  • Transfer chicken and garlic cloves to a platter. Let tand 15 minutes, then remove garlic bulb from cavity, and discard. Carve chicken, and serve.

3 whole heads garlic, about 40 cloves
2 (3 1/2-pound) chickens, cut into eighths
Kosher salt
Freshly ground black pepper
1 tablespoon unsalted butter
2 tablespoons good olive oil
3 tablespoons Cognac, divided
1 1/2 cups dry white wine
1 tablespoon fresh thyme leaves
2 tablespoons all-purpose flour
2 tablespoons heavy cream

Steps:

  • Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain the garlic and peel. Set aside.
  • Dry the chicken with paper towels. Season liberally with salt and pepper on both sides. Heat the butter and oil in a large pot or Dutch oven over medium-high heat. In batches, saute the chicken in the fat, skin side down first, until nicely browned, about 3 to 5 minutes on each side. Turn with tongs or a spatula; you don't want to pierce the skin with a fork. If the fat is burning, turn the heat down to medium. When a batch is done, transfer it to a plate and continue to saute all the chicken in batches. Remove the last chicken to the plate and add all of the garlic to the pot. Lower the heat and saute for 5 to 10 minutes, turning often, until evenly browned. Add 2 tablespoons of the Cognac and the wine, return to a boil, and scrape the brown bits from the bottom of the pan. Return the chicken to the pot with the juices and sprinkle with the thyme leaves. Cover and simmer over the lowest heat for about 30 minutes, until all the chicken is done.
  • Remove the chicken to a platter and cover with aluminum foil to keep warm. In a small bowl, whisk together 1/2 cup of the sauce and the flour and then whisk it back into the sauce in the pot. Raise the heat, add the remaining tablespoon of Cognac and the cream, and boil for 3 minutes. Add salt and pepper, to taste; it should be very flavorful because chicken tends to be bland. Pour the sauce and the garlic over the chicken and serve hot.

½ cup dry vermouth, or white wine
3 sprigs fresh parsley
1 teaspoon dried tarragon
¾ cup chicken stock

Steps:

  • Pre-heat the oven to 180°C (350°F)
  • Season the chicken with the salt, pepper and mixed herbs. Set aside.
  • Heat some oil in a large pan and sear the chicken for about 10-15 minutes evenly on each side, until golden brown.
  • Take the chicken out and set aside.
  • Add the shallots and cook down in the remaining juices for about 5 minutes over a low-medium heat.
  • Add the garlic cloves and gently cook them for about 2 minutes.
  • Pour in the vermouth or white wine and gently cook so that it reduces slightly.
  • Add the chicken, parsley sprigs and tarragon, followed by the chicken stock.
  • Bake in the oven for 20-25 minutes or until the chicken is cooked through.
  • Serve with crusty bread and vegetables of your choice.

1 roasting chicken (5 to 6 pounds)
1 small onion, quartered
40 garlic cloves, peeled
1/4 cup canola oil
1-1/2 teaspoons salt
1 teaspoon dried parsley flakes
1/2 teaspoon dried celery flakes
1/2 teaspoon each dried tarragon, thyme and rosemary, crushed
1/4 teaspoon pepper

Steps:

  • Place chicken breast side up on a rack in a shallow roasting pan. Stuff onion in chicken; tie drumsticks together. Arrange garlic cloves around chicken. In a small bowl, combine the remaining ingredients. Drizzle over chicken and garlic. , Cover and bake at 350° for 1-3/4 hours. 40 unpeeled cloves of garlic ( 3 heads)
3 1/2 pound chicken
Salt and pepper
Softened butter
1/2 cup white wine
1 cup chicken stock
3 tablespoons unsalted butter
Lemon juice, to taste
Chopped parsley, for garnish

Steps:

  • In a saucepan blanch garlic cloves in boiling water to cover for 3 to 4 minutes. Drain and peel. Sprinkle chicken inside and out with salt and pepper. Rub outside of chicken with butter and truss. Spread a flameproof baking dish with softened butter and arrange the chicken on 1 side. Roast in lower third of a preheated 425 degree for 10 minutes. Turn and roast, on the other side, basting, for 10 minutes. Reduce heat to 375, turn breast side up and add garlic. Roast for 20 minutes more, or until juices run clear. Transfer chicken to platter stand for 5 minutes, remove truss strings. Transfer garlic to platter. Keep warm covered. Add 1/2 cup wine to pan and deglaze. Pour into saucepan and reduce to 2 tablespoons. Add 1 cup chicken stock and reduce to 1/2 cup. Remove pan from heat and swirl in tablespoons softened unsalted butter and add lemon juice to taste. Garnish with parsley.

8 chicken thighs, about 3 pounds, skin removed
Fine sea salt, to taste Freshly ground pepper to taste
1/4 to 1/2 pound garlic (4 small or 2 large heads), cloves separated and peeled
1/4 cup extra-virgin olive oil
3/4 cup minced parsley

Steps:

  • Preheat the oven to 375 degrees. Place the rack in the lowest slots.
  • Rinse the chicken thighs, shake dry and lightly salt and pepper them.
  • Put half the thighs in one layer in a heavy casserole with a lid. Sprinkle with half the garlic cloves, half the olive oil and half the parsley. Repeat, making another layer with the remaining ingredients.
  • Cover the chicken with a piece of waxed paper, and put on the lid.
  • Cook for 40 minutes, or until the chicken is cooked through and the garlic cloves are very soft. Serve the chicken with all its juices, along with crusty bread for sopping them up and for spreading with garlic.

I got this recipe from the local newspaper and the chicken is so moist and full of sweet garlic flavor. I always serve with a loaf of french bread and spread the garlic on the bread like butter. It is to die for!

1 whole roasting chicken, cut into pieces
3 whole heads of garlic
1 tablespoon butter
2 tablespoons olive oil
1 1/2 cups dry white wine
3 tablespoons cognac
2 tablespoons heavy cream
2 tablespoons flour
1 tablespoon fresh thyme leave
1 tablespoon salt
1 tablespoon pepper

Steps:

  • Boil garlic cloves for 60 seconds. Drain & peel.
  • Season chicken liberally with salt and pepper.
  • Heat butter and olive oil in large pan over med-high heat.
  • Saute chicken skin side down first until brown, about 4 minute Turn over with tongs (do not pierce skin) and brown on other side, another 4-5 minute.
  • When chicken is brown, transfer to plate.
  • Add garlic cloves to pan and saute 5-10 minute until evenly browned.
  • Add wine and 2 tbs. cognac, bring to a simmer and scrape bottom of pan.
  • Return chicken to pan and spirinkle with thyme.
  • Cover and simmer about 30 minute or until chicken is cooked through.
  • Remove chicken to platter and keep warm.
  • In a small bowl, whisk together flour and 1/2 cup sauce from pan then whisk it back into pan.
  • Add cream and last tbs. of cognac. Cook 3 minute and add Salt and pepper to taste.
  • Pour sauce and garlic over chicken and serve hot.

2 1/4 kg whole chickens
1 lemon
2 sprigs fresh tarragon
2 tablespoons butter
1/4 cup brandy
1 cup dry white wine
salt & fresh ground pepper

Steps:

  • Preheat the oven to 160 degrees celcius.
  • Separate the garlic into cloves, but do not peel them.
  • Remove excess fat from chicken cavity and neck and discard.
  • Cut the lemon in half and squeeze the juice from one half. Rub the chicken all over with the lemon juice and place 1/2 the lemon into the cavity of the chicken.
  • Season the chicken inside and out and put a sprig of tarragon in the cavity.
  • Heat the butter and oil in a large flameproof casserole dish and brown the chicken on all sides over a moderate heat.
  • Pour the brandy and ignite. When the flames die down, tuck the garlic cloves around and under the chicken and pour over the wine.
  • Cover the casserole and cook in the oven for about 80-90 minutes.
  • You can serve the chicken as is with the clear juices and garlic cloves, or make a wonderful creamy garlic sauce.
  • This is made by pushing the cooked garlic through a sieve over a bowl, get all the pulp from the garlic and mix in with the juice from the chicken -- discarding the garlic skins and lemon pieces.
  • This chicken is best served with potato and root vegetables with the creamy garlic sauce poured over the top.
