The base of this chicken stew gets its flavor from ingredients familiar in Creole country: bell peppers, onions, tomatoes, and bay leaf. Classic French fricassee is made with cream.

1 cut-up chicken (about 3 pounds)
Salt and pepper
1 tablespoon olive oil
3 onions, chopped
2 green bell peppers, cut into 1-inch pieces
3 tablespoons chopped fresh parsley
2 dried bay leaves
1 teaspoon dried thyme
1 teaspoon dried oregano
1/4 cup white wine, or water
1 (15-ounce) can tomato sauce
2 parsnips, cut into 1/2-inch slices (about 2 cups)
3 carrots, cut into 2-inch chunks

Steps:

  • Sprinkle chicken pieces with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a Dutch oven, heat oil over medium heat. When it's hot, add chicken pieces, and brown well, turning them occasionally, about 15 minutes (if necessary, cook chicken in two batches to avoid crowding the pan). Transfer to a plate.
  • Drain most of the fat from the pan. Add onions, half the bell peppers, 1 tablespoon parsley, bay leaves, thyme, and oregano. Cook until onions are translucent, about 5 minutes. Add wine, and scrape up browned bits from the bottom of the pan with a wooden spoon.
  • Stir in tomato sauce. Return chicken to the pan, along with any accumulated juices, and add parsnips, carrots, and remaining bell peppers. Add enough water to barely cover; bring to a boil. Reduce heat, partially cover the pan, and simmer until chicken is almost cooked through, about 15 minutes. Uncover pan, and continue simmering until chicken is done and the liquid thickens slightly, 10 to 15 minutes. Stir in remaining 2 tablespoons parsley, and serve.

12 chicken thighs
2 (12 ounce) packages andouille sausage, sliced
5 green onions, chopped
1 onion, chopped
1 cup vegetable oil
1 cup all-purpose flour
8 cups water
5 stalks celery, chopped
2 tablespoons Cajun seasoning
2 teaspoons cayenne pepper
2 teaspoons salt
2 teaspoons ground black pepper
1 teaspoon minced garlic

Steps:

  • Saute chicken and sausage in a large skillet for 4 to 5 minutes. Remove meat from skillet, add green onions and onion and saute until soft. Set aside.
  • To Make Roux: In a small saucepan stir together oil and flour over low heat; cook until color is caramel and mixture is reduced to 1 cup of roux. Set aside.
  • Put water in a large pot. Add the chicken, sausage, onion mixture, celery, seasoning, cayenne pepper, salt, ground black pepper and garlic. Bring all to a boil and cook for 20 minutes. Add 1/2 cup roux and stir together; the mixture should have the consistency of chowder. If necessary, add the remaining 1/2 cup roux.
  • Reduce heat to medium low and simmer uncovered for 2 hours, stirring occasionally. Serve hot over rice, if desired.

This was my Grandma's secret family recipe from her French ancestors. I have never seen a recipe like this on any site. It's a rich creamy sauce over chicken...great with mashed potatoes. A great dish for Easter or Christmas.

¼ cup all-purpose flour
¼ cup margarine
2 cups heavy whipping cream
2 cups chicken broth
1 tablespoon dried parsley
4 egg yolks
¼ cup lemon juice
1 teaspoon cornstarch, or as needed
4 cooked chicken breasts, broken into chunks

Steps:

  • Mix flour and margarine together in a saucepan over medium heat, stirring until the flour and margarine form a paste.
  • Whisk cream into flour mixture about 1/2 cup at a time until smoothly combined; whisk in chicken broth and parsley. Bring sauce to a simmer, whisking constantly until thickened.
  • Whisk egg yolks and lemon juice together in a bowl.
  • Whisk egg yolk mixture slowly into cream mixture, about 1 tablespoon at a time, until the sauce barely comes to a simmer and coats the back of a spoon. Do not boil.
  • If thicker sauce is desired, whisk cornstarch and 1/4 cup of sauce in a small bowl; stir cornstarch mixture back into sauce until thickened, about 2 minutes.
  • Stir chicken breast pieces into sauce until chicken is heated through.

3 tsp Creole seasoning
8 ounces chicken andouille sausage, cut into 1/2-inch rounds
3 tablespoons vegetable oil
1 onion, chopped
3 celery ribs, sliced thin
1 red bell pepper, seeded and chopped
4 garlic cloves, minced
1/4 cup all-purpose flour
2 cups low-sodium chicken broth

Steps:

  • 1. Pat chicken dry with paper towels and sprinkle with 2 teaspoons Creole seasoning. Cook sausage in large nonstick skillet over medium-high heat until browned, about 5 minutes. Transfer sausage to paper towel-lined plate, leaving fat in skillet. Cook chicken in sausage fat until browned, about 2 minutes per side. Transfer to plate with sausage. 2. Add oil, onion, celery, and pepper to now-empty skillet and cook until lightly browned, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

3 tablespoons unsalted butter, softened, divided
1 tablespoon extra-virgin olive oil
1 small yellow onion, cut into 1/4-inch dice (1 cup)
1 carrot, cut into 1/4-inch dice (1/2 cup)
1 celery stalk, cut into 1/4-inch dice (1/3 cup)
8 ounces cremini mushrooms, trimmed and quartered
2 tablespoons all-purpose flour
2/3 cup dry white wine
4 cups chicken broth
2 sprigs fresh flat-leaf parsley
2 sprigs fresh thyme
1 bay leaf
2 large egg yolks, room temperature
1/4 cup heavy cream
2 to 3 tablespoons roughly chopped fresh tarragon leaves
2 tablespoons fresh lemon juice

Steps:

  • Brown ChickenSeason chicken on both sides with 1 tablespoon salt and 1/2 teaspoon pepper. Preheat a Dutch oven or other large heavy pot over medium-high heat. Add 2 tablespoons butter and the oil to pot. When butter melts and foam subsides, add half the chicken, skin side down, in a single layer; do not crowd pot. (If butter begins to blacken, lower heat.)   • Cook Mushrooms and FlourAdd mushrooms, and cook, stirring occasionally, until mushrooms darken, become glossy, and begin to release liquid, 4 to 5 minutes. Stir in flour, and cook until flour is absorbed by vegetables and is no longer visible, about 1 minute.
  • Pour in Wine and BrothAdd wine to pot, and bring to a boil, stirring until liquid just thickens, about 45 seconds. Add broth, and stir.
  • Simmer ChickenPlace chicken, skin side up, in a single layer on vegetables; pour juices that have accumulated on plate into pot. Tie parsley sprigs, thyme sprigs, and bay leaf together with kitchen twine; add to pot. Bring to a boil, then reduce to a simmer. Cover partially. Cook until internal temperature of thickest part of chicken registers 165 degrees, 25 to 30 minutes. Transfer chicken to a clean plate. Simmer liquid, uncovered, until reduced slightly, about 5 minutes. Discard herbs.
  • Make and Add LiaisonTo make the liaison (sauce thickener), whisk together egg yolks and cream in a medium bowl. Whisking constantly, pour 1/2 cup cooking liquid, 1 tablespoon at a time, into liaison to temper it. Stir tempered liaison into pot.
  • Finish with Tarragon, Lemon, and ButterReturn chicken to pot. Add tarragon, lemon juice, and the remaining butter. Bring to a simmer, stir gently to combine, and serve.

  • Combine flour, salt, pepper, sage, marjoram, and paprika in a bowl; mix well.
  • Set aside the back, neck, and giblets of the chicken to be used for soup or frozen for later use.
  • Dredge remaining chicken pieces in flour.
  • Shake off excess flour and place on a rack. Reserve any remaining flour.
  • Heat oil to 325ºF in a large skillet with a tightly-fitting lid.
  • Add dredged chicken and fry 10 to 15 minutes until golden brown, turning occasionally.

1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon poultry seasoning
1/4 cup canola oil
4 chicken breasts, boneless and skinless, each cut into 6 pieces
1 medium onion, sliced
2 (14 ounce) cans chicken broth
1 cup water
3 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Mix flour, salt, pepper and poultry seasoning in a shallow dish.

1 lb mushroom, sliced
1 medium onion, sliced
1 tablespoon garlic, minced
1/2 cup white wine (optional)
4 cups chicken broth
4 tablespoons cornstarch
1/2 teaspoon celery salt
1/4 teaspoon white pepper
1/2 teaspoon marjoram
1/2 teaspoon thyme
1 1/4 cups nonfat sour cream
3 tablespoons chopped fresh parsley (optional)

Steps:

  • Brown chicken over high heat in a deep saute pan or dutch oven coated with nonstick spray.
  • Remove chicken to a platter.
  • Add onion, mushrooms, and garlic to same pan and cook for at least 3 minutes, or until vegis are soft.
  • If you are using wine, add it now and cook over high heat 1 minute.
  • Add 3 cups of broth, and bring to a boil.
  • Reduce the heat to a simmer.

  • Removed from heat and add the spices and sour cream.

According to the recipe at the turn of the century Creole cooks prepared chicken this way. Once you have tasted it I think you will agree they knew what they were doing. The seasonings are not run of the mill, but please do not be detered. The flavor is wonderful.

What follows is what I remember eating at the Eden Roc in Miami Beach 40 years ago and what I served when was a busboy in the Catskills 35 years ago. keep in mind that hotels make and serve Chicken Fricassee to use their leftovers. The recipe is meant to be made with cheap chicken parts. It's cheaper and better that way. It's best served over rice or egg noodles, but is fine to eat on its own. Chicken backs are bone and fat -- and little meat -- that's between a chicken thigh and the chicken leg. There's a lot of flavor there. When made with boneless chicken thighs in a slow cooker without the gizzards and hearts, its more conventional and makes a great sandwich.

5 lbs cheap chicken pieces (Backs and Wing Tips are best)
2 lbs chopped onions
2 (28 ounce) cans crushed tomatoes
4 chopped garlic cloves
3 tablespoons paprika
1 tablespoon pepper
1 -2 lb chicken gizzard
1 -2 lb chicken, hearts

Steps:

  • Make Chicken Stock from the chicken backs and wings. Firm up the gizzards and chicken hearts in the hot stock.
  • Save the stock in your fridge.
  • Remove the skin and meat from the chicken backs and wings. Discard the bones. Save the bigger pieces of chicken meat in your fridge for chicken salad.
  • Place the chicken fat and gristle and odd chicken meat pieces in a teflon pan on medium. Add in the chopped onions. When the onions get translucent, add in the crushed tomatoes, garlic, paprika, and pepper. Then add in the chicken gizzards and/or hearts and reduce the heat to low. Stir it all up every 10 to 15 minutes or so. It'll be done in less than an hour. The flavor improves when stored overnight.
  • Chicken necks are also often added in, but are not sold separately that often any more and are hard to find. Cooking up chicken necks in the stock, and then taking the meat off the necks for the fricassee is nice to do.
  • This recipe has no added salt because canned tomatoes are usually salted. Caterers often add pimento stuffed olives to this just before serving.

Even my FFF cousin makes this lol. Good for during the year too and low fat. I know some people have the minhag not to use garlic during Passover - you can omit but it won't be as good. Adapted from Steven Raichlen's Healthy Jewish Cooking.

1 1/2 lbs boneless skinless chicken breasts, cut into 2 inch pieces
1 -2 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon vegetable oil
1 medium onion, finely chopped
1 green pepper, seeded and cut into thin strips
1 -2 clove garlic, finely chopped
1 teaspoon paprika, sweet if available
1/2 teaspoon hot pepper flakes, omit for passover or use some fresh chili
2 tablespoons tomato paste
1 (28 ounce) can chopped peeled tomatoes with juice (or fresh if you don't have Passover ones)
1/4 cup canned tomato sauce (can also use tomato and mushroom sauce)
3 tablespoons chopped fresh parsley
1/2 teaspoon brown sugar, if available,can be omitted

Steps:

  • Place the chicken in a bowl and toss with the garlic, salt and pepper.
  • Let marinate for 15 minutes while you make the sauce.
  • Heat the oil in a large, heavy saucepan.
  • Add the onion and pepper and cook until soft but not brown- about 3 minutes.
  • Add the garlic, paprika and hot pepper flakes and cook for 1 minute.
  • Add the tomato paste and fry for 30 seconds.
  • Add the chopped peeled tomatoes with their juice to the pan with the tomato sauce and 2 tablespoons parsley.
  • Simmer the sauce until thick and richly flavoured- 10 to 15 minutes- stirring often.
  • Add sugar if too acidic.
  • Blend or process the sauce if you don't like chunky sauce.
  • Stir the chicken into the sauce and simmer until cooked, about 15 minutes.
  • Add salt and pepper to taste.
  • Serve garnished with remaining parsley.
