FRIED EGG SANDWICH

1 tablespoon ketchup
1/2 teaspoon chipotle in adobo sauce
2 slices sourdough bread
2 slices Cheddar
1 tablespoon unsalted butter
1 slice bacon, halved
1 egg

Steps:

  • Combine the ketchup and chipotle and spread on the inside of each piece of bread. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold.
  • Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. Close up, slice and enjoy.

1 (12 ounce) package diced ham or 1 (12 ounce) package cooked & crumbled bacon
3 cups shredded cheddar cheese
9 eggs
1 1/2 cups sour cream

Steps:

  • Preheat the oven to 375 degrees. Grease a 9 x 13 casserole.
  • Pour in the Simply Potatoes for the 1st layer, then top with bacon or ham, then sprinkle on all the cheese.
  • Whisk 9 eggs together in a large bowl, then whisk in the sour cream.
  • Pour the egg mixture over the cheese.
  • Bake for about 35 minutes. or until light brown on top.
  • Let rest 5 minute before cutting into squares.
  • My favorite condiment is salsa to serve with it!

1 teaspoon Dijon mustard (such as Grey Poupon®)
1 teaspoon paprika
½ teaspoon salt

Steps:

  • Cut hard-boiled eggs in half, removing egg yolks from egg whites.
  • Combine egg yolks, mayonnaise, cream cheese, parsley, chives, dill, mustard, paprika, and salt in a food processor. Blend until creamy and mixed well together, adding more mayonnaise if consistency is too thick.
  • Coarsely chop egg whites and place in a medium bowl, add egg-herb mixture, and mix with a spoon.

2 cups Simply Potatoes Diced Potatoes with Onion
4 eggs
1/2 cup fine shredded Mexican blend cheese
1/2 cup raspberry chipotle jam
2 johnsonville new orleans brand smoked andouille sausages, cut on the bias

Steps:

  • 1. Cut sausages on the bias & cook in skillet, sprayed, until each side is browned. Lay on paper towels, to drain & set aside.
  • 2. Spray the inside of a stainless 3 1/2" x 1 1/2'' high cutter or mold (usually come in graduated size sets in cake supplies stores).
  • 3. Chop potatoes about to half the size they are.
  • 4. In a med size bowl, mix the potatoes, cheese & eggs well.
  • 5. Put very little cooking oil on a griddle & heat on medium heat.
  • 6. Place the round mold(s) on griddle.
  • 7. Pour 1/4 mixture into each mold & cook on medium-low heat, with a lid covering them for about 5 minutes or until golden brown.
  • 8. Flip the whole thing over while still in the mold & continue cooking on second side for another 3-4 minutes, or until golden brown.
  • 9. While still on griddle, run a small sharp knife around the edges of each mold. Should loosen easily.
  • 10. Remove from griddle with spatula & plate it.
  • 11. Spread 1/8 cup Raspberry Chipolte jam on each round, then top each with 1/4 of the sausages.

4 boneless skinless chicken breast halves (4 ounces each)
6 tablespoons butter, divided
1 garlic clove, minced
3/4 teaspoon dill weed, divided
8 slices French bread (1/2 inch thick)
1/4 cup cream cheese, softened
2 teaspoons lemon juice
4 lettuce leaves
8 slices tomato

Steps:

  • Flatten chicken to 1/4-in. thickness; set aside. In a large skillet, saute garlic and 1/4 teaspoon dill in 3 tablespoons butter for 1 minute. Add chicken; cook over medium heat until juices run clear, 3-4 minutes on each side. Remove and keep warm. , Spread both sides of bread with remaining butter. In a large skillet or griddle, grill bread on both sides until golden brown. , Meanwhile in a small bowl, combine the cream cheese, lemon juice and remaining 1/2 teaspoon dill; spread on one side of grilled bread. Place lettuce, chicken and tomato on 4 slices of bread; top with remaining bread.

  • Preheat oven to 450. Thaw potatoes and mix with beaten egg and italian seasoning. Spread out on large lined pizza pan. Place in oven and bake to 15 minutes. Then broil for 5 minutes. Take out of oven and let cool for 5-10 minutes.
  • Reduce oven temp to 400. Top potatoes with pizza sauce and cheese. Put pan in oven and bake until cheese is melted and bubbly. Let cool a little and cut into slices while still in the pan.

4 ounces smoked salmon
1/4 cup fresh dill, divided
6 ounces creme fraiche or 6 ounces sour cream
1/4 cup olive oil

Steps:

  • Pat dry potatoes. In a large skillet heat 1/4 cup olive oil over medium heat. Add hash browns in an even layer and push down with spatula. Cook 8-10 minutes on first side. Flip hash browns and push down again to form even layer. Cook an additional 7-8 minutes on the second side till golden brown. Set aside.
  • Finely mince most of the dill. Leave a couple sprigs out for garnish. Add minced dill to creme fraiche or sour cream until combined.
  • To assemble: Divide hashbrowns into 16 even piles and top with thin piece of smoked salmon, 1 tablespoon dill creme fraiche and garnish with dill sprig.
  • Makes 16 appetizer portions.

1 ounce prosciutto

Steps:

  • Crisp the prosciutto in a 350° oven for 10 minutes. Let cool then crumble into small pieces.
  • Set oven to 375°.
  • Separate the egg whites and yolks. Whip the 3 egg whites until stiff.
  • Mix together the Simply Potatoes, 1 egg yolk, prosciutto, and white cheddar cheese. Fold in the egg whites.
