From the TV series "Chuck's Day Off", this bread is easy to prepare and the end product is delicious. I made both loaves sprinkled with Montreal steak spice before baking but you can make a sweet version by sprinkling with raw sugar or do one of each.

Number Of Ingredients 10

3 cups warm water (body temperature)
1 tablespoon dry active yeast
1 tablespoon granulated sugar
1 tablespoon vegetable oil
1 tablespoon white vinegar
3 cups bread flour
2 1/2-3 cups whole wheat flour
1 tablespoon kosher salt
1 tablespoon steak spice (for savoury version)
1 tablespoon raw sugar (for sweet version)

Steps:

  • Mix together in a large bread-making bowl the water, yeast and sugar.
  • Allow this mixture to bubble and foam, then add the oil and vinegar.
  • Add the bread flour cup by cup, stirring well after each addition.
  • Then add the salt and the whole wheat flour, cup by cup, stirring well after each addition. The dough will be a bit wet and spongy.
  • Cover with a damp tea towel and let rise in a warm place for 30 to 40 minutes or until the dough has doubled in size.
  • Using a big spoon, spoon the dough into 2 well-greased loaf pans. If necessary, press the sides down, helping to create the perfect loaf shape.
  • With a knife, make 2 or 3 diagonal shallow incisions in the loaves.
  • Sprinkle with either the steak spice or raw sugar, depending upon whether you want sweet or savoury.
  • Bake the loaves about 50 minutes at 375 degrees F or until they are golden brown and crusty on top and sound hollow when tapped on the underside.
  • Let cool at least 5 to 10 minutes before slicing.

Cornbread
1 1/2 cups warm water, about 110 to 115 degrees F
1 tablespoon sugar
2 teaspoons kosher salt, plus more for dusting
2 teaspoons active dry yeast
2 cups flour
1 cup corn flour
Vegetable oil, for coating the bowl
Egg Wash
Stuffing
2 tablespoons vegetable oil
1 pound/450 g Morteau sausage, chopped
2 onions, finely chopped
2 celery stalks, finely chopped
1 red bell pepper, finely chopped
4 cloves garlic, minced
1 cup veal stuck
1 loaf cornbread, cut in chunks
12 oysters, shucked and liquid reserved
1/4 cup flat leaf parsley, chopped
2 tablespoons smoked paprika
1/4 cup melted butter
Salt and pepper
Turducken
1 (20 to 25-pound) turkey, deboned
1(4 to 5-pound) duck, deboned
1(3 to 3-1/2 pound) chicken, deboned
1 truffle, optional
1/2 cup smoked paprika
1/2 cup melted butter
Salt and freshly ground black pepper
Gravy
1/2 cup reserved turducken drippings
4 cups stock
3 sprigs fresh thyme
2 tablespoons each flour and butter, blended (beurre manie)

Steps:

  • For the cornbread:
  • Combine the water, sugar, and kosher salt in the bowl of a stand mixer fitted with the dough hook attachment, and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour and mix on low speed until well combined. Increase the speed to medium and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Cook's Note: Kneading the dough can also be done by hand.
  • Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 1 hour or until the dough has doubled in size. Knock the air out for 30 seconds by punching it down. You can now shape the dough into a ball, then place it onto a flour-dusted baking tray lined with parchment paper. Brush the top of the cornbread with egg wash, sprinkle the top with flour and coarse salt. Let it sit in a warm spot for 1 hour.
  • Preheat the oven at 400 degrees F.
  • Bake the cornbread for approximately 30 minutes or until the crust is golden brown.
  • Cook's Note: You can tell if it's cooked by tapping its bottom. If it sounds hollow it's done, if it doesn't then pop it back in for a little longer. Once cooked, place the bread on a rack and allow it to cool for about 1 1/2 hours.
  • For the stuffing:
  • Cube up the cooled cornbread and set aside.
  • In a large skillet, heat the oil over medium-high heat. Add the Morteau sausage and cook for about 5 minutes, until golden brown. Add the onions, celery, pepper, and garlic and continue cooking until translucent, about 5 minutes. Deglaze with the veal stock. Add in the cornbread. Transfer to a large bowl. Add the oysters and their liquid, parsley, paprika, and melted butter. Season the stuffing with salt, and pepper, to taste. Reserve the stuffing in the refrigerator until ready to use.
  • To assemble the turducken:
  • Spread the deboned turkey, skin-side down on a flat surface, exposing as much meat as possible. Sprinkle the meat generously and evenly with a total of about 3 tablespoons of the smoked paprika, patting the seasoning in with your hands. Cook's Note: Be sure to turn the leg, thigh and wing meat to the outside so you can season it too. Season the turkey with salt and pepper.
  • Then stuff some of the stuffing in the leg, thigh and wing cavities until full but not tightly packed. Cook's Note: If too tightly packed, it may cause the leg and wing to burst open during cooking). Spread an even layer of the stuffing over the remaining exposed meat, about 1/2 to 3/4-inches thick. You should use a total of about 4 cups of stuffing.
  • For the duck: Remove some of the fat and keep aside. Place the duck, skin-side down, on top of the stuffing, arranging the duck evenly over the stuffing. Season the exposed duck meat generously and evenly with smoked paprika, using about 1 tablespoon, and pressing it in with your hands. Season the duck with salt and pepper. Then spread about 1 cup of the stuffing evenly over the exposed duck meat, making the layer slightly less thick, about 1/2-inch thick. Repeat with the chicken and the remaining stuffing. Place an Italian truffle in the center, optional.
  • Enlist someone's help to close turducken. Fold the sides of the turkey together to close the bird. Have your helper hold the turkey closed while you sew up all the openings, making the stitches about 1-inch apart. When you finish sewing up the turducken on the first side, turn it over in the pan to sew closed any openings on the other side. Then tie the legs together, just above the tip bones. Leave the turducken to cook, breast-side up, in the pan, tucking in the turkey wings.
  • Serving suggestion: Serve with Root Vegetable Mash.
  • With the assistance of your helper, carefully lift the turducken into an ungreased 15 by 11-inch baking pan that is at least 2 1/2-inches deep. Cook's Note: This pan size is ideal because the turducken fits snugly in the pan and stays in the proper shape while cooking).
  • Place the turducken pan in a slightly larger pan with sides at least 2 1/2-inches deep, so that the larger pan will catch the overflow of drippings during cooking. Season the exposed side of the turducken with the remaining smoked paprika, patting it in with your hands. Brush with melted butter.
  • Bake the turducken at 325 degrees F, about 4 hours, until done, or until a meat thermometer inserted through to the center reads 165 degrees F. When done, remove the turducken from the oven and let rest for about 15 minutes
  • For the gravy:
  • Place the turducken drippings in a pot over medium-high heat. Add the stock, fresh thyme, and beurre manie. Season the gravy with salt, and pepper, to taste. Let the gravy come to a boil. Turn down heat to medium-low and let the gravy simmer for 10 minutes.
  • Cook's Note: Remember there are no bones to support the birds' structure.
  • With strong spatulas inserted underneath the bird, carefully transfer the turducken to a serving platter and present it to your guests before carving. Be sure to make your slices crosswise so that each slice contains the stuffing and all 3 meats. Serve additional bowls of the dressings on the side and serve with the gravy and the Root Vegetable Mash, if desired.
  • Cook's Notes: Stuffing and assembling the turducken can be done 1 day ahead and kept in the refrigerator.
  • Beurre manie is 2 tablespoons butter and 2 tablespoons flour. This is used to help thicken sauces.

A friend gave me this recipe and when I didn't find it here I decided I HAD to post it. I believe it was featured in the NY Times at one point. This bread is so easy to bake and tastes great! This was the first loaf of bread I've ever made and it was perfect!

3 cups flour
1/4 teaspoon instant yeast
1 teaspoon table salt
1 1/2 cups warm water

Steps:

  • Mix dough: The night before, combine all ingredients in a big bowl with a wooden spoon until the dough just comes together. It will be a shaggy, doughy mess. Cover with plastic wrap and let sit 12-20 hours on counter top.
  • Shape & preheat: The dough will now be wet, sticky and bubbly. With a wet spatula, dump the dough on a floured surface. Fold ends of dough over a few times with the spatula and nudge it into a ball shape. You can use your hands if you like, just keep your hands wet so that the dough does not stick. Generously dust a cotton towel (not terrycloth) with flour. Set dough seam side down on top of towel. Fold towel over the dough. Let it nap for 2 hours. When you've got about a half hour left, slip your covered pot into the oven and preheat to 450°F.
  • Bake: Your dough should have doubled in size. Remove pot from oven. Holding towel, dump wobbly dough into pot. Doesn't matter which way it lands. Shake to even dough out. Cover. Bake 30 minutes. Uncover, bake another 15-20 minutes or until the crust is beautifully golden and middle of loaf is 210°F Remove and let cool on wired rack. If not eating right away, you can re-crisp crust in 350°F oven for 10 minutes.

SUPER-QUICK NO-KNEAD BREAD

This is the latest version of bread coming out of my kitchen. Husband and Son eat it almost as soon as it is out of the oven which makes me grouse at them about sore stomachs. Blahblahblah is probably all they hear because they carry on eating it! Sometimes I make plain crust bread and other times I roll the dough in cracked wheat before placing it in the pans. Either way the bread has a wonderfully crisp crust and a really tender inside.

6 cups flour
1 teaspoon salt
1 teaspoon dry yeast
1 teaspoon white sugar
2 1/2 cups warm water

Steps:

  • Mix all dry ingredients together.
  • Add water and stir in until a really sticky dough has formed.
  • Cover with a cloth and leave in a warm place to rise.
  • Punch down and divide dough into two balls.
  • If you are using the cracked wheat, roll the dough balls in the cracked wheat now.
  • Place into well greased pans and bake at 400F for 1 hour.
  • Cook's note: No need for a second rising as the bread rises perfectly in the oven on baking.

1 tablespoon sugar
1 tablespoon vinegar
1 tablespoon vegetable oil
3 cups all-purpose flour
2 1/2-3 cups whole wheat flour
1 tablespoon coarse or kosher salt
steak spice, blend for sprinkling
demerara or raw sugar, for sprinkling

Steps:

  • Mix together the yeast, sugar and water in a large bread making bowl and allow to bubble up and foam. Wait a few minutes until the yeast starts to work, and then add the vinegar and oil. Add the all-purpose flour cup by cup, stirring well after each addition. Then add the whole wheat flour, mixing in the salt at one point, cup by cup, and stirring well after each addition. The dough will still be a little bit wet and spongy.
  • Cover with a damp tea or kitchen towel, and let rise in a warm place for 30 to 40 minutes, or until it has doubled in size.
  • Preheat an oven to 375 degrees F.
  • Using a big spatula, spoon the dough out into 2 well-greased loaf pans. Using your fingers if needed, press the sides down, helping to create the perfect loaf shape. (Do not knead). With a knife, make 2 or 3 diagonal shallow incisions across the top of the loaves. Top with your favorite herbs or spices. For the savory loaf, sprinkle with steak spice. For the other, sprinkle with demerara or raw sugar.
  • Bake the loaves for about 50 minutes, or until they are golden brown and crusty on top, and sound hollow when tapped on the underside. Let sit, if you can wait, for at least 5 to 10 minutes before slicing and serving with butter.
  • This moist bread keeps well for a few days if placed in a resealable plastic bag. The bread can also be frozen for many weeks.

1 1/2 cups flour
1 cup water
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons olive oil
2 tablespoons water

Steps:

  • Dump everything (except the 2 tablespoons water) into a bowl and "stir it into a gooey stuff" as Jacques says. The dough will indeed be very wet, gooey, sticky. Stir in any optional ingredients.
  • Heat a non-stick 10" skillet over medium to medium-high heat. Pour about a tablespoon of olive oil into the pan and then pour in the dough.
  • Spread into one flat layer with a spoon or spatula. (A little oil on the spoon or spatula helps keep the dough from sticking to it.)
  • Add a tablespoon or two of water around the outside of the dough where it meets the pan; the object is to create steam to help cook the bread. Cover the pan with a lid and cook 8-10 minutes. Peek at the bottom of the bread about half way through the first 8-10 minutes just to make sure the bottom isn't burning. You want good color, but not charcoal! Adjust the temperature accordingly.
  • After 8-10 minute flip the bread and re-cover the pan so that it cooks on the other side, 5 minutes.
  • It tastes best if eaten while warm.

2009-08-11 Chuck however adds another 2 1/2 to 3 cups of whole wheat flour once the AP flour has been absorbed. Phew..not so crazy after all.
