BOURBON-MARINATED STEAKS



Bourbon-Marinated Steaks image

Delicious marinated steaks you can use either flank steaks or top round steaks. Enjoy. Prep time does not include marinating time.

1/2 cup packed brown sugar
1/2 cup Bourbon
1/3 cup soy sauce
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon fresh coarse ground black pepper
1/4 teaspoon hot pepper sauce
1 cup water
2 flank steaks, well trimmed (about 1 1/2 pounds each) or 2 beef top round steak, about 1 1/2 inches thick (about 1 1/2 pounds each)

Steps:

  • Prepare marinade; In large plastic bag, Mix 1 cup water with all the ingredients except steaks.
  • Add steaks, turning to coat, seal bag, pressing out excess air.
  • Place bag in shallow glass baking dish and refrigerate at least 4 hours or over night, turning bag occasionally.
  • Remove steaks from marinade.
  • Discard marinade.
  • Put steaks on grill over medium heat and cook 15 to 20 minutes for medium-rare or until desired doneness, turning once.
  • (Or preheat broiler and place steaks on rack in broiling pan. Broil steaks at closet position to source of heat for 15 to 20 minutes for medium-rare) If using top round grill or broil for 25 to 30 minutes.

1/4 cup cider vinegar
2 tablespoons brown sugar
2 tablespoons finely chopped onion

1/8 teaspoon pepper

Steps:

  • In a small bowl, mix all ingredients. Use to marinate beef.

Bourbon is an excellent match for beef. Marinate your favorite roast with this bourbon marinade to make a delightful meal for your guests.

Yield Yield: 1 1/2 cups, ideal for 3 pounds Certified Angus Beef® brand product

Number Of Ingredients 10

1/4 cup Bourbon whiskey
1/4 cup brown sugar
1/3 cup soy sauce
1 tablespoon minced fresh ginger (optional)
1 tablespoon Lea & Perrins® Worcestershire Sauce
2 tablespoons Dijon mustard
2 tablespoons minced garlic
3 tablespoons olive oil
2 tablespoons red wine vinegar
2 teaspoons freshly ground black pepper

Steps:

  • Combine all ingredients and place in a zipper-locking plastic bag with selected Certified Angus Beef® brand cut. Close bag, removing air. Marinate in refrigerator 6 to 8 hours or overnight. Remove selected cut from bourbon marinade and discard marinade.

BOURBON BEEF GRILL OR BROIL

I love grilled and broiled beef, but sometimes I have to buy a really tough piece of meat because of the expense. This marinade will make a tough piece of meat enjoyable, as long as you let it soak for at least 8 hours. Great taste, and uses things you normally have in your pantry. Prep time does not include marinating time!!

1/2 cup plus 2 tbsp soy sauce
1/2 cup water
1/2 cup Bourbon
3 tablespoons brown sugar
2 tablespoons fresh lemon juice
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
2 lbs flank steaks
pepper

Steps:

  • Combine the first 7 ingredients in a small bowl; stir well. Place steak in a large shallow dish or in a zip lock bag. Pour marinade mixture over the steak; cover and marinate in the refrigerator for 8 hours. If you put it into a bag, squeeze the excess air out so the marinade is touching the steak all over.
  • Take the steak out of the refrigerator an hour before preparing so the meat can relax and absorb the flavors.
  • Remove the steak from the marinade, reserving marinade. Sprinkle with black pepper if desired. If broiling, place on a rack in a broiler pan. Broil 5 1/2 inches from the heat for 5 minutes (if electric, leave the door open). Turn; brush with marinade. Broil an additional 4 to 6 minutes or to desired doneness. Sprinkle with pepper to taste. Slice steak diagonally across grain into slices to serve. If grilling, prepare charcoal and once your coals are medium high, place the steak on the grill. Grill for 4 minutes with the cover on the grill. Remove the cover and flip the steak. Grill for another 4 minutes, or until the meat reaches desired doneness. Slice and serve. Enjoy!

This came from "The Lady and Sons" cookbook by Paula Deen. This is a grill recipe but it can be also used in a 350°F oven, cooked for about an hour.

1 cup Bourbon
1 cup brown sugar
2/3 cup soy sauce
1/2 cup lemon juice
1 tablespoon Worcestershire sauce
2 cups water
3 -4 sprigs chopped fresh thyme
1 beef tenderloin, connective tissue removed

Steps:

  • Prepare a marinade by combining bourbon, brown sugar, soy sauce, lemon juice, worcestershire sauce, water and thyme.
  • Secure beef with butcher's string.
  • Pour marinade over beef and refrigerate for 8-12 hours
  • Turn meat several times during that time.
  • Prepare grill.
  • Place meat on oiled grill, reserving marinade.
  • Cook on high heat with lid closed, turning often and basting occasionally.
  • Cook until desired doneness.
  • Using a meat thermometer: rare-115 to 120°F, medium rare-130-135F, medium-140-145°F.

Mustard Bourbon Marinated Beef Tenderloin With Garlic image

I was having a party of 22 and I served this tenderloin. I come back to this recipe over and over again because it is so easy to make up and I can marinate the beef up to 3 days in advance. This is one of my favorites recipes to do on the grill for a large group....I hope it will become one of yours!!!!

2 lbs beef tenderloin, all visible fat removed
garlic, slivered
1/3 cup Dijon mustard (see note below)
3 tablespoons Bourbon (or Scotch in a pinch)
2 tablespoons dark brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
2 garlic, minced

Steps:

  • Note: The recipe calls for Grey Poupon peppercorn mustard. As this mustard is not available where I live -- I give the marinade a few good grinds of my peppercorn mill. (anywhere from 1 tsp to 1T).
  • Wipe the tenderloin clean with a paper towel. Cut slits into the beef and add the garlic slivers. The amount of garlic used is up to personal preference.
  • Combine mustard, bourbon, brown sugar, worcestershire sauce, olive oil and garlic in a zip lock bag. Add beef and turn to coat both sides. Chill for several hours or overnight. Note: I have marinated the beef up to 3 days.
  • Preheat grill.
  • Remove marinade from zip log bag. Reserve marinade. Coat grill with vegetable oil or Pam. Sear beef for 2 minutes on each side. Cover grill and cook 45 - 60 minutes or until meat thermometer registers 150, brushing with reserved marinade occasionally.
  • Alow beef to sit for 5 - 10 minutes before carving.
  • The reserved marinate can be made into a sauce by combining it with 1 cup sliced mushrooms in a small heavy saucepan over moderate heat and cook until heated through.
