SANTA FE RICE SALAD
This Easy Rice Salad Recipe delivers a punch of Santa Fe flavor and vibrant color to your plate!

Steps:
- In a large salad bowl, gently toss together the cooked rice, beans, corn, bell pepper, tomato, and green onions. Save the avocado to add after chilling.
- Juice and zest the lime. Add the juice to a small bowl along with the olive oil, honey, Dijon mustard, and garlic, whisking until well combined. Taste and season with salt to your preference.
- Add the lime zest to the bowl with the salad ingredients and pour the vinaigrette all over, tossing gently.
- Cover and chill for at least 30 minutes, or up to 24 hours. Just before serving, gently stir in diced avocado and chopped cilantro, if desired.

- Brown the rice: Heat the olive oil in a medium saucepan on medium high heat. Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally, until the rice has started to brown. Add the garlic and cook a minute more.
- Add water, salt, zest, then simmer: Add water, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low to maintain a very low simmer. Cook undisturbed for 15 minutes (check your rice package instructions), then remove from heat and let sit for 10 minutes. Fluff the rice with a fork.
- Stir in lime juice and cilantro: Transfer the rice to a serving bowl. Pour lime juice over the rice and toss with chopped cilantro. Serve with chicken, steak, shrimp, Mexican or Asian food.

- In a large skillet, saute onion in butter until tender. Add broth and salsa; bring to a boil. Stir in rice and garlic powder. Place chicken over rice; cover and simmer for 10 minutes. , Turn chicken; cook 10-15 minutes longer or until a thermometer reads 165°. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes. Garnish with cilantro if desired.

GARLIC CILANTRO LIME RICE

- Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Reduce the heat to low and add the rice and salt. Cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn't burn. Add 2 cups of the broth and the juice and zest of 2 limes and bring it to a boil. Reduce the heat to low, cover and simmer for 10 to 15 minutes or until the rice is done. Add more liquid as needed. The rice shouldn't be sticky.
- Just before serving, stir through the juice of 1 lime and lots of chopped cilantro.

- Prepare the rice. If you use boil in a bag rice it is easier.
- In skillet, cook chicken tenders in small amount, of butter on medium heat until done.
- Stir in the salsa and the drained can of Mexican corn.
- Rinse the black beans and stir in to the mixture, add the cooked rice.
- Heat for 5 to 7 minutes.
- Sprinkle with shredded Monterey jack cheese and heat just until the cheese is melted.
SANTA FE CHILI
Steps:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5- or 6-qt. slow cooker. Stir in the beans, corn, tomatoes, juice, salad dressing mix and taco seasoning. , Cover and cook on high for 4-6 hours or until heated through. Serve with sour cream, cheese and corn chips if desired., Freeze Option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

- In a large pot, heat 1 Tablespoon oil over a medium heat. Add onions, 1 Tablespoon (or more), minced serrano chile, and sauté about 8 minutes. Add 4 cloves minced garlic and sauté another minute or two.
