HOME-STYLE CHICKEN & CHEESY GARLIC SAUCE WITH CREAMY MASH & VEGGIES

- Bring a medium saucepan of lightly salted water to the boil. Peel the potato and cut into 2cm chunks. Add the potato to the boiling water and cook until easily pierced with a knife, 10-15 minutes. Drain and return to the saucepan. Add the butter (for the mash), milk and the salt, then mash with a potato masher or fork until smooth. Cover to keep warm.
- While the potato is cooking, cut the broccoli into small florets and roughly chop the stalk. Thinly slice the carrot (unpeeled) into half-moons. Finely chop the garlic (or use a garlic press). Finely chop the parsley leaves. In a medium bowl, combine the Aussie spice blend, a drizzle of olive oil and season with pepper. Add the chicken breast strips and toss to coat.
- Heat a large frying pan over a high heat. Add the broccoli, carrot and a generous splash of water and cover with a lid or foil. Cook until softened, 5-6 minutes. Remove the lid, then add 1/2 the garlic and cook, stirring, until fragrant, 1 minute. Season with salt and pepper. Transfer to a bowl and cover to keep warm.
- Return the frying pan to a medium-high heat with a drizzle of olive oil. When the oil is hot, add 1/2 the chicken and cook, turning, until browned and cooked through, 3-4 minutes. Transfer to a plate and repeat with the remaining chicken. TIP: Chicken is cooked through when it's no longer pink inside.
- Wipe out the frying pan and return to a medium heat. Add the butter (for the sauce) and the remaining garlic and cook until fragrant, 30 seconds. Add the longlife cream (see ingredients list), grated Parmesan cheese, parsley and any chicken resting juices. Season with pepper and stir to combine. Reduce the heat to low and simmer until thickened slightly, 2-3 minutes.
- Divide the mashed potato, veggies and homestyle chicken strips between plates. Pour the cheesy garlic sauce over the chicken.

CREAMY GARLIC CHICKEN

- Cook the potatoes in boiling salted water for 20-25 mins until tender when pierced with a knife. Meanwhile, heat the 2 tbsp Flora Buttery in a frying pan over a medium heat until melted, then fry the onion for 10 mins until softened. Stir in the garlic, fry for a minute more, then add the chicken and fry for 5 mins until lightly golden.
- Pour in the wine, bring to a simmer and reduce until halved. Stir in 250ml of the crème fraîche. Cook for 5 mins until the chicken is cooked through, and the sauce has thickened slightly.
- Drain the potatoes, leave to steam dry for 1 min, then mash with the 50g Flora Buttery, remaining crème fraîche and some seasoning, until smooth. Stir the herbs and spinach through the chicken and cook for a minute or so until the spinach wilts. Add the lemon juice and some seasoning. Serve spooned over the creamy mash.

CHEESY GARLIC SAUCE FOR VEGETABLES
After looking for a cheese sauce and coming up short, I created this fantastic recipe that the whole family LOVED! You can use any kind of cheese you like, but I prefer an old/sharp cheddar. The cayenne pepper only adds flavour, not heat, so if you want it hot you'll have to increase it.

- Combine milk, flour and dried cayenne pepper in a medium saucepan.
- Add butter and cream cheese and melt over medium-high heat.
- Add lemon juice and cheddar cheese.
- Melt cheese and stir constantly over medium heat until mixture thickens slightly.
- Reduce heat to minimum or remove from burner and continue to stir until slightly cooled.

- Spread chicken thighs on a clean work surface. Pat dry with paper towels and season both sides with salt and pepper. Sprinkle 1/2 of the Italian seasoning all over them.
- Heat oil in a 12-inch nonstick skillet over medium-high heat. Add chicken thighs and brown for 3 minutes per side. Remove chicken to a plate and keep warm.
- Add onions to the same skillet and stir up any browned bits from the bottom of the pan. Cook, stirring occasionally, until onions just start to become tender, 3 to 5 minutes. Add mushrooms and cook until they begin to soften, about 4 minutes. Stir in garlic and remaining Italian seasoning. Taste and adjust salt and pepper. Cook and stir for 1 minute.
- Add chicken broth and return chicken thighs to the skillet. Reduce heat to low, cover, and cook until chicken juices run clear, about 15 minutes. An instant-read thermometer should read 165 degrees F (74 degrees C). Remove chicken to a cutting board and cut into bite-sized pieces.
- Return chicken to the skillet and increase heat to medium. Add tomatoes and spinach. Cook and stir until tomatoes are heated through and spinach is tender, but still bright green, about 3 minutes.
- Stir in 1/2 cup heavy cream and balsamic vinegar; bring to a gentle boil. Cook and stir for 3 minutes. If you prefer a creamier sauce, add more cream. Serve with shaved Parmesan cheese.

- Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper or a silicone baking mat. Spread vegetables on top and lightly drizzle with 1 Tablespoon of olive oil. Sprinkle with a little salt and pepper. Bake for 15 minutes. Remove from the oven and set aside. Keep oven on. (Time saving tip: Get started on steps 2 and 3 as the vegetables bake.)
- If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Evenly sprinkle the chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- In a large ovenproof skillet, heat 1 Tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.
- Remove skillet from heat and add the broth, butter, onion, garlic, and parsley. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 5 minutes. Whisk together the milk and cornstarch, then slowly whisk into the sauce.
